APPLE RAISIN FRENCH TOAST STRATA
A simple but elegant way to make breakfast fast. Put together the night before, and bake while you're in the shower. Serve with lots of extra maple syrup! You may also add extra raisins if you wish.

Steps:
- Coat a 9x13 inch baking dish with cooking spray. Arrange 1/2 of the cubed raisin bread in the bottom of the dish. Sprinkle the cream cheese evenly over the bread, and top with the apples. If you like extra raisins, add them now. Top with remaining bread.
- In a large bowl, beat the eggs with the cream, butter, and maple syrup. Pour over the bread mixture. Cover with plastic wrap, and press down so that all bread pieces are soaked. Refrigerate at least 2 hours.
- Preheat oven to 325 degrees F (165 degrees C).
- Bake 45 minutes in the preheated oven. Let stand for 10 minutes before serving.

CINNAMON (RAISIN) CREAM CHEESE STRATA
I like to make this when we have overnight guests. They can enjoy their morning coffee and maybe some fruit while it bakes.

Steps:
- 1. Preheat oven to 350 degrees. Butter a 2 1/2 quart casserole or 9x13 Pyrex pan.
- 2. In a large bowl, combine lightly beaten eggs, milk cinnamon and 1/4 cup maple syrup.
- 3. Place a layer of buttered bread in the bottom of prepared baking dish. Sprinkle with 1/2 cream cheese. Repeat with another layer of bread. The shape of your pan decides how many layers you will make.
- 4. Slowly pour egg mixture over top and sprinkle with remaining cream cheese cubes. Let stand one hour or cover and refrigerate up to 24 hours.
- 5. Set baking sheet on lowest rack of over to catch any drippings. Bake strata, uncovered, on middle shelf until top is nicely browned and bubbly. About 1 hour.
- 6. Serve with warm maple syrup.

Steps:
- 1. Butter a casserole dish. In a bowl whisk the milk, vanilla, sugar, eggs, maple Syrup, and 1/2 tsp cinnamon together. Set aside.
- 2. Rip bread in to pieces like you would for stuffing. Toss in egg mixture with the apples and raisins. Coat evenly.
- 3. Pour in to a casserole dish. Drizzle melted butter over it. Mix 2 TB sugar with a 1/2 tsp cinnamon. Sprinkle over casserole. Dot with pieces of cream cheese. Cover with saran and put in fridge at least 3 hours or over night .
- 4. Bake at 350 for 35-45 minutes, or until lightly browned. I drizzle a little more butter over it before serving. Serve right away after removing from oven. Dust with powdered sugar, or serve with syrup.
CINNAMON RAISIN STRATA
Steps:
- In a small bowl, combine butter and cinnamon; spread over one side of each slice of bread. Place four slices, buttered side up, in a greased 8-in. square baking dish (trim to fit if necessary). Sprinkle with 2 tablespoons brown sugar. Repeat with remaining bread and brown sugar., In a large bowl, whisk eggs, milk, syrup and vanilla; pour over bread. Cover and refrigerate overnight. , Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake, uncovered, 40-50 minutes or until a knife inserted in the center comes out clean. Serve with additional syrup.

- Mix remaining and pour over bread& cheese.

- Butter a 13x9x2 glass baking dish
- In a medium mixing bowl, whisk together eggs, milk, salt, vanilla extract, cinnamon and nutmeg
- Arrange the bread cubes in the bottom of the prepared baking dish then scatter the raisins and apples over top
- Pour the milk and egg mixture on top of the breads and fruit, pressing down to submerge the breads completely
- Cover the dish with plastic wrap and place it in the refrigerator for at least a few hours -- preferably overnight -- to allow the breads to soak up all the milk
- To bake, position a rack in the center of the oven and preheat to 350F
- Bake the strata uncovered until puffed and golden, and a knife inserted into its center comes out clean, about 1 hour
- Let stand for 10 minutes
- Cut the strata into squares and serve with maple syrup
