SOUR CREAM RAISIN BARS

This dessert bar is a long time favorite recipe that comes from a dairy farm where three generations still enjoy it.

2 cups raisins
1 1/2 cups water
1 1/2 cups all-purpose flour
1 1/2 cups old-fashioned rolled oats
1 cup firmly packed brown sugar
3/4 cup Land O Lakes® Butter softened
1 teaspoon baking soda
Filling
1 1/2 cups sour cream
1 cup sugar
3 large Land O Lakes® Eggs (yolks only)
3 tablespoons cornstarch

Steps:

  • Heat oven to 350°F.
  • Place raisins and water into 2-quart saucepan. Cook over medium heat 10-12 minutes or until raisins are soft and plump. Drain; cool 30 minutes. Set aside.
  • Combine flour, oats, brown sugar, butter and baking soda in bowl. Beat at medium speed, scraping bowl often, until mixture resembles coarse crumbs. Press 3 cupscrumb mixture onto bottom of ungreased 13x9-inch baking pan.
  • Combine sugar, sour cream, egg yolks and cornstarch in 2-quart saucepan. Cook over low heat, stirring occasionally, 15-20 minutes or until mixture comes to a boil. Boil 1 minute. Remove from heat; stir in raisins.
  • Spread filling over crumb crust; sprinkle with remaining crumb mixture. Bake 25-35 minutes or until lightly browned. Cool completely; cut into bars.

I got this when I attended a bible school in Rocky Mount, VA. One of my fellow students passed it on to me, after I begged her for it. I have made these numerous times, and they are always great. Beware, if you don't like raisins, you won't like this. It has TONS of raisins in it. Also, I had to guess at how many servings this made, I can't remember.

2 cups raisins
1 cup brown sugar
1 cup margarine
1 3/4 cups oatmeal
1 3/4 cups flour
1 teaspoon baking soda
2 small eggs
1 1/2 cups sour cream
2 1/2 teaspoons cornstarch
1/4 teaspoon salt
1 cup sugar

Steps:

  • Raisins – Cover raisins with water.
  • Boil, drain& set aside.
  • Cream brown sugar,& margarine.
  • Add oatmeal, flour,& baking soda.
  • Do not add raisins.
  • Place half of mixture in a 9 x 13 inch pan, sprayed with cooking spray.
  • Bake at 350 for 7 minutes.
  • In a heavy saucepan, combine eggs, sour cream, cornstarch, salt,& sugar.
  • Cook, stirring constantly, till thick.
  • Add drained raisins.
  • Pour this whole mixture over the crust previously baked.
  • Sprinkle remaining half of crust mixture over the top, for a crumb topping.
  • Bake at 375 for 30 minutes.

2 cups raisins
1 cup white sugar
3 eggs
2 ½ tablespoons cornstarch
1 ½ cups sour cream
1 teaspoon ground cinnamon
1 cup packed brown sugar
1 ¾ cups rolled oats
1 teaspoon baking soda
½ teaspoon salt
1 ¾ cups all-purpose flour
1 cup butter, softened

Steps:

  • Preheat oven to 350 degrees F. Grease and flour 9 x 13 inch pan.
  • Cook first six ingredients over low heat until well blended. Set aside to cool.
  • In a separate bowl, mix together brown sugar, oatmeal, baking soda, butter, flour and salt until crumbly. Press half of mixture into pan.
  • Pour cooked mixture over crust and crumble the other half of crust over the top.
  • Bake for 20 minutes.

1 cup sugar
2 tablespoons plus 1-1/2 teaspoons cornstarch
1 teaspoon ground cinnamon
1-1/2 cups sour cream
3 large eggs, lightly beaten
2 cups raisins
CRUMB MIXTURE:
1-3/4 cups all-purpose flour
1-3/4 cups quick-cooking oats
1 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup cold butter, cubed

Steps:

  • In a large saucepan, combine the sugar, cornstarch and cinnamon. Stir in sour cream until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into eggs; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in raisins. Cool to room temperature without stirring., Meanwhile, in a large bowl, combine the flour, oats, brown sugar, baking soda and salt. Cut in butter until crumbly. , Firmly press 3-1/2 cups of crumb mixture into a greased 13-in. x 9-in. baking pan. Spread with raisin filling. Sprinkle with remaining crumb mixture. , Bake at 350° for 25-30 minutes or until golden brown. Cool on a wire rack. Cut into bars. Refrigerate leftovers.

2 cups all-purpose flour
2 cups quick-cooking oats
1 teaspoon baking powder

FILLING:
4 egg yolks
2 cups (16 ounces) sour cream
1-1/2 cups raisins
1 cup sugar
1 tablespoon cornstarch

Steps:

  • In a large bowl, cream the butter and brown sugar until light and fluffy. Combine the flour, oats, baking powder, baking soda and salt; gradually add to creamed mixture (mixture will be crumbly). , Set aside 2 cups; pat remaining crumbs into a greased 13-in. x 9-in. baking pan. Bake at 350° for 15 minutes. Cool., Meanwhile, in a small saucepan, combine filling ingredients. Bring to a boil; cook and stir for 5-8 minutes. Pour over crust; sprinkle with reserved crumbs. 2 1/2 cups dark raisins
1 3/4 cups water
1 cup dark brown sugar, packed
1 cup unsalted butter, room temperature
1 1/4 cups old fashioned oats
1 1/4 cups all-purpose flour
1 teaspoon baking soda
3 egg yolks
1 cup granulated sugar
1 1/2 cups sour cream
2 1/2 tablespoons cornstarch
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F & grease a 13"x9" glass baking dish.
  • In a medium saucepan, combine raisins & water, then cook over medium heat for 10 minutes before draining well. Set raisins aside to cool.
  • In a medium bowl, combine brown sugar, butter, oats, flour & baking soda, mixing well.
  • Evenly press 2 cups of the mixture into the bottom of the prepared baking dish, & bake for 7 minutes, until partially cooked & slightly set.
  • In a medium saucepan, combine egg yolks, granulated sugar, sour cream, cornstarch & cinnamon, & stir until cornstarch is dissolved.
  • Cook over medium heat until mixture thickens & resembles pudding, about 8 minutes, then remove from heat & stir in raisins & vanilla.
  • Pour onto the crust , then crumble remaining oat mixture evenly over the top.
  • Bake 25 minutes, or until set, then remove from oven & cool completely on a wire rack.
  • Refrigerate 1 hour before cutting & serving.
