Number Of Ingredients 16

3 cups fresh basil
¾ cup pine nuts
¾ cup vegetarian parmesan cheese
3 cloves garlic
¾ cup olive oil, divided
½ cup ricotta cheese
salt, to taste
pepper, to taste
2 medium zucchinis
2 medium yellow squashes
4 large carrots
1 large eggplant
1 tablespoon butter
1 sheet puff pastry, thawed
2 cups rice, uncooked
½ teaspoon dried oregano

Steps:

  • Combine the basil, pine nuts, Parmesan, garlic, ½ cup (120 ml) of olive oil, ricotta, salt, and pepper in a food processor and puree until blended and smooth. Set aside.
  • Using a vegetable peeler, peel the zucchini, yellow squash and carrots into ribbons.
  • Cut the eggplant lengthwise into thin slices, then slice in half lengthwise.
  • Preheat the oven to 350°F (180°C).
  • Grease a 9-inch (23 cm) tart dish with butter using a piece of parchment paper.
  • Lay the puff pastry in the tart dish and delicately press it flat against the bottom and up the sides. Crimp any dough hanging over the edges and prick the bottom all over with a fork.
  • Lay a piece of parchment paper over the pastry and pour the rice evenly on top. The rice helps keep the bottom of the crust from rising while baking.
  • Parbake the crust for about 15 minutes, until the puff pastry starts to cook.
  • Carefully lift the parchment paper to remove the rice (save for using in other recipes or discard). Increase the oven temperature to 400°F (200°C).
  • Spread the ricotta pesto mixture evenly on the bottom of the tart.
  • Starting from the outside, line the walls of the tart with the veggie ribbons, alternating veggies, until the entire shell is filled.
  • Sprinkle the oregano on top and brush with olive oil. Season with salt and pepper to taste.
  • Bake for 35-40 minutes, until the veggies are tender.
  • Let cool for a few minutes.
  • Slice and serve.
  • Enjoy!

2 cups mixed lettuce (green and purple)
1 cup arugula leaves
1 cup purple cabbage (shredded)
6 cherry tomatoes (halved)
½ cup cucumbers (sliced)
½ cup carrots (sliced)
2 tbsp almonds (sliced)
1 tbsp chia seeds
2 tbsp pomegranate seeds
2 tbsp olive oil
1 tbsp maple syrup
Salt and black pepper to taste
Juice of 1 lemon

Steps:

  • In a big bowl, mix together lettuce and arugula leaves
  • loosely spread around the purple cabbage, cucumber and the cherry tomatoes (with their seed side facing up for a beautiful look!).
  • Sprinkle the almond slices, pomegranate seeds and chia seeds
  • To make the salad dressing, add all the ingredients in a jar and shake-shake-shake. Just like that!
  • Drizzle over the salad.
  • Take a step back and admire the beautiful colours! (and those lovely vitamins and minerals)
  • Serve in bowls.

2 carrots
¼ head red cabbage
6 tomatoes (deseeded)
2 cups (40g) arugula (or other salad greens)
1 tablespoon olive oil
1 tablespoon sesame oil
1 tablespoon rice wine vinegar
1 tablespoon soy sauce
maple syrup ((optional) to taste)

Steps:

  • Wash and prep veggies.
  • Chop veggies into bite-size pieces and mix together in a large bowl.
  • In a separate bowl, use a fork to combine olive oil, soy sauce, sesame oil, maple syrup, and rice vinegar. Pour over the salad and toss well.
  • Let the salad chill for an hour before serving.

3 tablespoons dijon mustard
1 tablespoon dried oregano
1 garlic clove, minced
3 tablespoons olive oil
salt, to taste
pepper, to taste

Steps:

  • On a cutting board, chop head of lettuce.
  • In a large bowl, combine the romaine lettuce, cherry tomatoes, shredded carrots, yellow bell pepper, cucumber, and diced red onion.
  • To make the dressing, combine the red wine vinegar, honey, dijon mustard, dried oregano, garlic, salt, and pepper in a medium bowl, and whisk together until the dressing is thick.

½ cup peeled and diced carrot
½ cup diced cucumber
½ cup shredded red cabbage
½ cup diced beetroot
½ cup diced sweet pepper
½ cup cooked chickpeas
8-10 baby tomatoes, cut into halves
1 cup chopped or torn greens salad leaves
¼ cup sliced onion
1 cup diced avocado
8-10 fresh mint leaves
1 cup plain thick yogurt
1 tbsp lemon juice
¼ tsp salt
½ tsp black pepper powder
1 tbsp za'atar spice blend

Steps:

  • If you're serving as a bowl meal then get two bowls ready.
  • Layer the bottom with the chopped or torn salad leaves.
  • Arrange the chopped ingredients and chicckpeas in both the bowls.
  • If serving as a party salad it is best to mix all the salad ingredients in a big serving bowl.
  • Gently whisk all the ingredients for the dressing.
  • Serve the dressing on the side or drizzle it on top of the salad.
  • I've used roasted beetroot. You can use it cooked or raw.
  • I used lettuce leaves as I didn't have mixed salad greens. Can also use baby spinach.
  • Can replace the chickpeas with other legumes like beans,sweet corn, or grains like quinoa, couscous, rice, etc
  • I've used English Cucumber that doesn't need to be peeled.
  • Use normal chopped tomatoes if you don't get baby tomatoes.
  • Don't have za'atar spice mixture, then replace with a herb of your choice.

1 big handful of de-stemmed and finely chopped kale
raw grated beet (about 1 small beet)
1/2 cup finely chopped red cabbage
1/2 cup raw grated carrot (about 1 small carrot)
1/2 cup peeled, chopped and roasted acorn squash
1/2 cup finely chopped, steamed broccoli
1 tbsp raw sunflower seeds
1 tbsp pepitas
1/4 of an avocado, diced
dried kelp flakes
5 tbsp (75 g) tahini
1 tbsp (16 g) white miso paste
1 tbsp soy sauce, coconut aminos or gluten-free tamari
1 tbsp apple cider vinegar
2 tsp maple syrup
3 cloves garlic
pinch of salt
4-6 tbsp water

Steps:

  • To make the salad dressing, blend all ingredients until smooth. If desired, add more water to adjust consistency. Season with salt and pepper, if desired.
  • To assemble the salad, add everything to a bowl and top with the dressing.

  • In a small saucepan of salted boiling water, blanch the pearl onions for 3 minutes. Drain the onions and cool them under running water. Slip off the skins and pack the onions into a small heatproof jar. Pack each type of radish into separate small heatproof jars. In the same saucepan, combine 3/4 cup of the rice vinegar with the sugar, 2 tablespoons of salt and 1 cup of water and bring to a boil. Pour the hot brine over the jarred onions and radishes and let stand at room temperature for 3 hours.
  • Preheat the oven to 400 degrees. Place the beets and carrots on 2 separate sheets of foil and drizzle them with 2 tablespoons of the olive oil. Fold up the edges of the foil sheets to make two sealed packets. Rub the sweet potato with vegetable oil, prick it all over with a fork and set it on a sheet of foil. In a medium baking dish, toss the cauliflower and broccoli florets with the remaining 1 tablespoon of olive oil. Roast the cauliflower and broccoli for about 12 minutes, the sweet potato for about 30 minutes and the carrots and beets for about 35 minutes, until they are all tender. Let the roasted vegetables cool slightly.
  • Using paper towels, rub off the beet and carrot skins; quarter the beets and halve the carrots. Peel the sweet potato and cut it into 1/2-inch-thick rounds.
  • In a mini food processor or blender, puree the chipotle chile with the yellow miso paste, honey and the remaining 1/4 cup of rice vinegar. With the machine on, add the 1/2 cup of vegetable oil in a thin stream and process until emulsified. Season the dressing with salt.
