UPSIDE-DOWN CARAMEL APPLE CAKE
An Autumnal twist on an upside-down cake classic!

Steps:
- Preheat oven to 350°F
- Line the bottom of a springform pan with a round piece of parchment paper that covers the bottom
- Spray the sides of the pan with cooking spray and set aside
- In a medium mixing bowl, whisk together flour, sugar, baking powder, salt and apple pie spice
- Set aside
- In a small bowl, whisk together the buttermilk, oil and egg
- Using the largest holes of a box grater, grate the Pink Lady apple then pat the grated apple dry with a little paper towel
- Measure out 1/2 cup of the apple and add it to the wet ingredients
- Pour the wet ingredients into the dry and mix with a rubber spatula until well incorporated
- Set aside
- Using a mandoline, slice the Granny Smith apples into rings about 1/4-inch thick (no need to peel them
- ) Pick out any seeds that haven't fallen out of the apple and place the slices into a bowl and toss them with the brown sugar, cornstarch and salt
- Shingle the apple slices into the bottom of the pan to make one layer of apple at the bottom
- Pour any any sugar or cornstarch from the bottom of the bowl onto the top of the apples then pour the apple cake batter over top of the apples
- Smooth the batter with the back of a spatula
- Bake in the oven for 40 minutes or until the cake begins to pull away from the edges of the pan and a toothpick comes out clean when inserted into the middle of the cake
- Let cool for at least 20 minutes on a cooling rack
- Once cool, remove the cake from the springform pan and place the cake upside down on a plate
- Peel away the parchment
- For the Spiced Whipped Cream, whisk the heavy whipping cream with a stand mixer, hand mixer or a hand whisk, until it forms stiff peaks
- Mix in the powdered sugar, sour cream, cinnamon and salt
- Serve cake with a dollop or two of the cream

- Preheat oven to 350 degrees. Butter three 8-inch-round cake pans; line bottoms with parchment paper. Butter, then flour paper and sides (tapping out excess); set aside.
- In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, and salt; set aside. In a large bowl, whisk together butter, sugar, and eggs until well combined; fold in grated and diced apples. Add flour mixture; mix just until combined. Divide batter among prepared pans; smooth tops.
- Bake until a toothpick inserted in center of cake comes out clean, 35 to 40 minutes. Cool cakes in pans 20 minutes, then invert onto wire racks; peel off parchment. Invert cakes again, and let cool completely on racks.
- Make buttercream: In a heatproof bowl set over (not in) a pan of simmering water, whisk together egg whites, sugar, and salt until sugar has dissolved; remove from heat. Using an electric mixer on medium, beat mixture until fluffy and cooled, about 15 minutes. Increase to high; beat until stiff peaks form. Reduce to medium-low; gradually add butter, beating until fully incorporated, about 3 to 5 minutes.
- Assemble cake: Place one layer on a serving plate; spread top with buttercream. Top with another layer; spread top with buttercream. Top with third layer; spread remaining buttercream over top and sides of cake. Refrigerate at least 1 hour (or up to 4 days). To serve, bring cake to room temperature; slice with a serrated knife.

CARAMEL APPLE BUNDT® CAKE
To make this cake, first make a homemade caramel sauce which you then incorporate into the batter and use as a topping! You'll probably have extra sauce; but no worries-it's great on ice cream. too!

- Combine heavy cream, butter, vanilla, and salt for caramel sauce in a small saucepan. Cook over medium-low heat until butter is melted and mixture begins to bubble, about 5 minutes. Remove from heat and keep warm.
- Combine sugar, corn syrup, and water in a large, light-colored saucepan with high sides. Cook over medium heat, swirling occasionally, until mixture is amber in color, 15 to 20 minutes. Reduce heat to low, and very carefully whisk in reserved cream-butter mixture; stir constantly as caramel mixture will bubble up and steam. Continue cooking over low heat, stirring occasionally, for 5 more minutes. Remove from heat. Set out 1/2 cup of caramel sauce for the cake, and reserve the remainder for the topping. Allow to cool to room temperature.
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-cup Bundt® pan.
- Prepare cake: Whisk together flour, baking powder, baking soda, cinnamon, salt, and nutmeg in a bowl until combined.
- Beat together brown sugar, butter, and white sugar in a large bowl until light and fluffy. Beat in eggs, 1 at time, mixing well after each addition. Mix in applesauce, sour cream, reserved 1/2 cup caramel sauce, and vanilla until thoroughly combined. Add in 1/2 of the flour mixture, and mix until just combined. Mix in remaining flour mixture until just combined. Fold in diced apples. Pour batter into the prepared Bundt® pan and smooth into an even layer.
- Bake in the preheated oven until a bamboo skewer inserted into the cake comes out with a just few moist crumbs, 55 to 60 minutes. Allow cake to cool in the pan for 30 minutes. Gently run a knife around the edge to loosen and remove cake to a wire rack and cool completely, 15 to 30 more minutes.
- Just before serving, pour remaining caramel sauce over the top of the cake. If needed, reheat the caramel slightly to make it a pourable consistency.

- Meanwhile, using an electric mixer, beat the remaining 2 sticks butter and the confectioners' sugar until light and creamy. With the mixer on low, slowly mix in the caramel sauce.
- Place 1 cake layer on a cake plate; spread the apple filling evenly on top, then cover with the remaining cake layer. Using an offset spatula or butter knife, cover the top and sides of the cake with the caramel frosting, swirling the top to make a decorative pattern.
