QUINOA WITH BUTTERNUT SQUASH, CHICKEN, AND GOAT CHEESE

Quinoa with Butternut Squash, Chicken, and Goat Cheese image

This recipe is a recreation of a fabulous lunch I had at a favorite restaurant in the Milwaukee, WI area. My teenagers and husband loved it too! Serve warm or cold with balsamic vinaigrette.

Provided by Karen Shay-Kubiak

Categories     Side Dish     Grain Side Dish Recipes

Time 45m

Yield 6

Number Of Ingredients 11

2 large boneless, skinless chicken breasts
water to cover
1 ½ cups quinoa
1 tablespoon chicken bouillon granules
2 tablespoons butter
1 cup chopped pecans
1 small butternut squash, peeled and cut into 1/2-inch dice
1 cup sweetened dried cranberries (such as Craisins®)
1 (5.5 ounce) package crumbled goat cheese
2 tablespoons fresh parsley, or more to taste
salt and ground black pepper to taste

Steps:

  • Place chicken breasts in a saucepan; add water and bring to a boil. Lower heat to medium and simmer just until chicken breasts are no longer pink in the middle, 5 to 8 minutes. Remove chicken breasts and set aside to cool, reserving water.
  • Measure 3 cups from reserved water and discard any remaining. Pour the 3 cups water back into saucepan. Add quinoa and bouillon; return to a boil. Reduce heat to medium-low, cover, and simmer until water is absorbed and quinoa is tender, 15 to 20 minutes.
  • Melt butter in a large skillet over medium-high heat. Add pecans and toss until fragrant and one shade darker, about 5 minutes. Remove pecans and set aside. Add butternut squash and 2 tablespoons water to the same skillet; cook and stir until just tender, adding more water if needed, 4 to 5 minutes.
  • Chop chicken breasts into 1/2-inch pieces.
  • Combine cooked quinoa, chicken, squash, and pecans in a bowl. Stir in cranberries, goat cheese, and parsley; season with salt and pepper.

SWEET POTATO QUINOA SALAD WITH CHERRIES, GOAT CHEESE + CANDIED WALNUTS

Sweet Potato Quinoa Salad with Cherries, Goat Cheese + Candied Walnuts image

A nutritious quinoa salad loaded with anti-inflammatory cherries and vitamin-A packed sweet potatoes. Garnished with creamy goat cheese crumbles and lightly candied walnuts. Incredible!

Provided by @MakeItYours

Number Of Ingredients 22

FOR THE DRESSING:
1 1/2 teaspoons olive oil
1 small lemon, juiced
1/8 teaspoon cumin
1 garlic clove, minced
1 teaspoon honey
2 tablespoons finely diced fresh basil leaves
FOR THE SALAD:
1/2 cup uncooked quinoa
2 medium sweet potatoes, cut into 1 inch cubes
1/2 tablespoon olive oil
1/4 teaspoon garlic powder
1/2 teaspoon oregano
1/8 teaspoon cumin
1/8 teaspoon cayenne pepper
1/8 teaspoon salt
1 cup pitted and diced sweet dark red cherries
1/4 cup goat cheese crumbles
FOR THE CANDIED WALNUTS:
1/4 cup walnut halves & pieces
1 tablespoon coconut sugar (brown sugar also works)
1 1/2 teaspoons coconut oil

Steps:

  • Preheat oven to 400 degrees F. Line a baking sheet with foil and set aside.
  • While oven is preheating you can start cooking the quinoa. Add 1 cup of water and 1/2 cup quinoa to a medium saucepan; place over high heat and bring to a boil. Once water and quinoa are boiling, reduce heat to low, cover and cook for 15 minutes. After 15 minutes, remove from heat and fluff quinoa with a fork. Pour into a large bowl.
  • While quinoa is cooking you can roast the sweet potatoes: In a medium bowl, toss sweet potatoes, olive oil, garlic, oregano, cumin, cayenne pepper and salt together. Pour onto prepared foil-lined sheet and place in preheated oven for 15 minutes or until sweet potatoes are roasted and almost fork tender. You don't want them to get mushy, so I find that 15 minutes is perfect. Once done, you can allow them to cool on the baking sheet for 5 minutes before transferring them to the bowl with the quinoa.
  • While sweet potatoes and quinoa are cooking, you can start preparing the candied nuts: Heat a small saucepan over medium-high heat and add walnuts, coconut sugar and coconut oil to a small saucepan; stir constantly until the sugar begins to melt, caramelize and turn golden. This should take 3-5 minutes. Transfer nuts to a piece of parchment paper and allow to cool completely.
  • Prepare dressing by whisking olive oil, lemon juice, cumin, garlic, honey and basil together in a small bowl. Add dressing to the quinoa and sweet potato mixture; stir well to combine. Fold in cherries, goat cheese and walnuts. Garnish with extra goat cheese and basil, if desired. Serves 4. Enjoy!

  • Add the cubed butter and, using your fingers, lightly rub in the butter to the flour/ cornmeal/ salt until is resembles breadcrumbs with some pieces the size of small peas (you can do this in a food processor as well).
  • Make a well in the middle of the flour mix and add the egg. Mix the flour into the egg until it just starts to come together.
  • Add the water and incorporate until the dough just comes together. The dough should be firm enough to form a ball – it might be a little crumbly but press the dough into a disk and wrap it tightly in plastic wrap and refrigerate for 30 minutes minimum.

  • Cook the quinoa (I like to make extra for more salads and for breakfast, 1 cup of dry quinoa yields over 3 cups cooked quinoa). Combine rinsed quinoa with twice as much water in a saucepan. Bring to a boil, cover and reduce heat to a simmer. Cook for 15 minutes or until water is absorbed, remove from heat and fluff with a fork.
  • Shave the asparagus with a vegetable peeler. To do so, hold the touch end of the asparagus against a cutting board, and peel from the tough end toward the tip. (See tips above)
  • Toast the pine nuts. I prefer to do this in a skillet over medium heat, stirring often, but you may get more even results by baking at 350 degrees for 5 to 10 minutes (stirring often). I use the skillet method because I tend to get distracted and forget about them in the oven! You want the pine nuts well toasted, meaning golden but not burnt.
