Steps:

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, about 12 to 15 minutes.
  • Spread quinoa onto a baking sheet and cool to room temperature, at least 30 minutes.
  • Transfer quinoa to a large bowl and gently fold in avocado and pomegranate seeds. Drizzle olive oil over quinoa mixture and toss to coat; mix in cilantro and lemon juice.

2 cups fresh spinach, roughly chopped
1 large cucumber, diced

2 ripe avocados, pits removed and diced
1 lemon, juiced
4 tablespoons extra virgin olive oil
pepper, to taste

Steps:

  • In a small saucepan, bring the water and a pinch of salt to a boil. Add the quinoa, cover, and simmer for 15 minutes, or until the water is absorbed. Transfer to a medium bowl to cool to room temperature, then fluff the quinoa.
  • Refrigerate the quinoa for 20 minutes.
  • Add the spinach, cucumber, tomatoes, and avocado to the bowl of quinoa and mix to combine.

70g quinoa
75g avocado , halved and stoned
1 small garlic clove , finely grated
½ tsp mustard powder
1 lemon , juiced and half zested
198g can sweetcorn , drained
160g cherry tomatoes , halved
2 x 5cm chunks cucumber , diced
2 spring onions , finely sliced
2 tbsp chopped mint
2 tbsp pumpkin seeds
100g cooked chicken (optional)

Steps:

  • Put the quinoa in a pan of boiling water and simmer for about 18 mins until the grains burst. Tip into a sieve and rinse under cold water.
  • Meanwhile, scoop the avocado into a bowl and add the garlic, mustard and 2 tbsp lemon juice, then blitz with a hand blender or in a food processor until smooth. Add 1-2 tbsp cold water if it's too thick.

2 tablespoons lime juice (~1 lime)
1/4 cup cilantro, chopped
