226 g crabmeat, drained (or imitation crab meat)
1 cup dried cranberries
1 mango, diced
2 cups chopped fresh parsley
1 orange bell pepper, chopped
1 yellow pepper, chopped
1 red pepper, chopped
2 tablespoons lime juice

Steps:

  • Cook quinoa according to package directions.
  • Let cool.
  • Combine all ingredients, and toss.

1 ⅓ cups water
⅔ cup quinoa
1 pound finely chopped cooked crabmeat
1 cup diced cucumber
1 cup sliced grape tomatoes
1 cup fat-free feta cheese, crumbled
½ cup Greek salad dressing
2 tablespoons lemon juice
2 tablespoons balsamic vinegar, or more to taste

Steps:

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes. Cool quinoa completely.
  • Mix crabmeat, cucumber, tomatoes, and feta cheese together in a large bowl; add quinoa and stir. Whisk Greek salad dressing, lemon juice, and balsamic vinegar together in a separate bowl; drizzle over the quinoa mixture and stir to coat.

Place a lid on top then turn heat down to medium-low and simmer until tender, about 15 minutes. Fluff with a fork then transfer to a large bowl and allow to cool to room temperature, or chill (can be done ahead of time.)
  • In a large bowl combine cooked quinoa, crab, mango, avocado, and green onion then season with salt. Add ingredients for Lemon-Agave Vinaigrette into a jar with a tight-fitting lid then shake to combine or whisk together in a small bowl. Pour over quinoa mixture (may not need all of it) then toss to coat.
