Italian Sausage & Quinoa Stew image

I like how the sweetness of the orange and yellow peppers blends with the spiciness of the Italian sausage. If you have trouble finding quinoa, substitute rice or tiny pasta in this recipe. -Marietta Slater, Justin, Texas

5 Italian sausage links (4 ounces each), casings removed
1/2 cup chopped onion
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/4 ounces) whole kernel corn, drained
1 each medium green, sweet orange and sweet yellow peppers, cut into 3/4-inch pieces
1 cup quinoa, rinsed
1 medium zucchini, cut in half lengthwise and sliced into 1/4-inch slices
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
3/4 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
1 (14-1/2 ounces) can beef broth
Minced fresh cilantro

Steps:

  • In a large skillet, cook sausage and onion over medium heat 5-7 minutes or until sausage is no longer pink, breaking sausage into large crumbles; drain. , Transfer sausage and onion to a 4- or 5-qt. slow cooker. Stir in beans, corn, peppers, quinoa, zucchini, garlic, seasonings, tomatoes and broth. Cook, covered, on low until vegetables and quinoa are tender, 5-6 hours. Sprinkle with cilantro.

1 (12 ounce) package good-quality precooked chicken sausages
2 tablespoons olive oil, divided
1 small yellow onion, finely chopped
1 (8 ounce) package sliced fresh mushrooms
1 teaspoon dried thyme
1 teaspoon smoked paprika
1 teaspoon salt
1 pinch cayenne pepper
ground black pepper to taste
2 (32 fluid ounce) containers chicken stock
1 (16 ounce) can cannellini beans, drained
1 (16 ounce) can diced tomatoes
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup quinoa

Steps:

  • Remove the casings from the chicken sausages. Slice in half lengthwise, then crosswise into half-moons. Heat 1 tablespoon olive oil in a large saute pan and saute chicken sausage until well browned, about 5 minutes. Remove from the pan.
  • Heat remaining oil in the same pan. Saute onion, mushrooms, thyme, paprika, salt, cayenne, and pepper until mushrooms are well browned, about 5 minutes. Remove from heat.
  • Heat chicken stock in a large stockpot. Add cannellini beans, tomatoes, spinach, and quinoa. Simmer until quinoa is tender, about 15 minutes. Add the sausage and mushroom mixture. Simmer until heated through, about 5 minutes. Serve in soup bowls.

14 oz (400 grams) dried white beans
3 tablespoons olive oil
1 carrot, chopped
1 onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
9 oz (250 grams) soft chorizo sausage, sliced
1 teaspoon sweet paprika
2 teaspoons dried thyme
1/2 cup chopped parsley (you can also use celery
Salt and pepper to taste
1 can 14oz/400grams diced tomatoes
1 cup chicken stock or vegetable stock or water

Steps:

  • Prepare the beans: From the previous night, soak the dried beans in a large bowl filled with water and 1 tablespoon salt. Rinse them well and boil them in a pot filled with water until soft and tender (the time will depend on the type, age, and quality of the beans). Rinse well and set aside.
  • Make the stew: Transfer the olive oil, the carrot, the onion, the bell peppers, and the chorizo to a large skillet and cook over medium/high heat until the vegetables are soft (about 10-15 minutes). Add the paprika, the thyme, the parsley, the diced tomatoes, the chicken stock, the beans, the salt and the pepper. When it starts to boil reduce heat to low and simmer for 15-20 minutes or until the sauce has thickened.
  • Serve with bread and eat!

1 tablespoon extra-virgin olive oil
1 pound bulk pork sausage
1 onion, finely chopped
1 (14.5 ounce) can petite diced tomatoes, drained
1 (14.5 ounce) can great Northern beans, drained
2 cups chopped kale
salt and ground black pepper to taste

Steps:

  • Bring chicken stock and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.
  • Meanwhile, heat olive oil in a large skillet over medium heat. Add sausage and onion and cook, breaking sausage up as it browns, 5 to 10 minutes. Mix in tomatoes, beans, and kale. Add a splash of chicken stock if needed to wilt kale. Cook until tomatoes and beans are heated through, 10 to 15 minutes.
