Quinoa Burgers image

A filling alternative to traditional beef burgers, our Quinoa Burgers include red onion, red and green bell peppers, grated carrots and shredded zucchini. Ready in 1 hour, substitute water for chicken broth for a vegetarian option.

1/2 cup uncooked quinoa, rinsed, well drained
1 cup Progresso™ chicken broth (from 32-oz carton)
1/2 cup finely chopped red onion
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped red bell pepper
1/2 cup finely grated carrots
1/2 cup shredded zucchini
2 eggs
3 tablespoons Original Bisquick™ mix
1 tablespoon chopped fresh dill weed
Salt and freshly ground pepper to taste
1/2 cup vegetable oil
Mixed salad greens, if desired

Steps:

  • In 2-quart saucepan, heat quinoa and broth to boiling; reduce heat. Cover; simmer 15 to 20 minutes or until all broth is absorbed. Cool.
  • In large bowl, mix cooled quinoa, onion, bell peppers, carrots, zucchini and eggs. Add Bisquick mix, dill, salt and pepper; mix well.
  • In 12-inch skillet, heat oil over medium-high heat. Drop quinoa mixture by 1/4 cupfuls into hot oil; flatten slightly into patties. Cook 6 to 8 minutes, turning once, until golden brown. Drain on paper towels. Serve burgers on mixed greens.

¾ cup water
½ cup quinoa
1 carrot
1 (15 ounce) can garbanzo beans, drained and rinsed
6 small green onions, chopped
¼ cup whole wheat bread crumbs
1 egg, slightly beaten
1 clove garlic, minced
1 teaspoon ground cumin, or to taste
¼ cup peas
¼ cup corn kernels
2 tablespoons olive oil
½ cup plain yogurt
3 tablespoons tahini
1 lemon, juiced
1 tablespoon chopped fresh cilantro, or to taste
1 teaspoon hot Madras curry powder

Steps:

  • Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and water has been absorbed, 15 to 20 minutes.
  • Process carrot in food processor until roughly chopped; add quinoa, garbanzo beans, green onions, bread crumbs, egg, garlic, and cumin. Pulse quinoa mixture until just mixed; transfer to a bowl.
  • Stir peas and corn into the quinoa mixture; refrigerate until mixture comes together, about 15 minutes. Form quinoa mixture into patties.
  • Heat olive oil in a skillet over medium heat; fry patties until golden brown, 4 to 5 minutes per side.
  • Stir yogurt, tahini, lemon juice, cilantro, and curry powder together in a bowl. Serve burgers with tahini sauce.

1/2 cup rinsed quinoa
1 medium carrot, cut in large chunks
6 scallions, thinly sliced
15 ounces great northern beans, drained and rinsed
1/4 cup plain dried breadcrumbs
1 large egg, lightly beaten
1 tablespoon ground cumin
Coarse salt
Ground pepper
2 tablespoons olive oil
1/2 cup plain nonfat Greek yogurt
1 tablespoon fresh lemon juice
4 pitas (each 6 inches)
1/2 English cucumber, thinly sliced diagonally

Steps:

  • In a small saucepan, bring 3/4 cup water to a boil; add quinoa, cover, and reduce heat to low. Cook until liquid is absorbed, 12 to 14 minutes; set aside.
  • In a food processor, pulse carrot until finely chopped. Add cooked quinoa, half the scallions, beans, breadcrumbs, egg, cumin, 1 teaspoon salt, and 1/4 teaspoon pepper; pulse until combined but still slightly chunky.
  • Form mixture into four 3/4-inch-thick patties (dip hands in water to prevent sticking). If too soft, refrigerate 10 minutes to firm. In a large nonstick skillet, heat oil over medium; cook burgers until browned and cooked through, 8 to 10 minutes per side.
  • Meanwhile, in a small bowl, combine yogurt, lemon juice, and the remaining scallions; season with salt and pepper. Serve burgers in pita topped with cucumber and yogurt sauce.

Mushroom Quinoa Burgers with Roasted Garlic and Thyme Mayonnaise image

Looking for a fantastic quinoa pattie that will satisfy carnivores too? Look no further than my mushroom quinoa burgers recipe packed full of the goodness of umami-laden mushrooms.

150 g quinoa
1 1/2 cups water
1/2 tsp fine sea salt
1 brown onion (peeled and diced)
3 cloves garlic (minced)
200 g button mushrooms (finely chopped (7oz))
2 tbs soy sauce, gluten-free variety if needed
2 tsp fresh thyme leaves (roughly chopped)
1 tbs parsley (finely chopped)
60 g wholemeal breadcrumbs ((2oz))
2 eggs (beaten)
salt and pepper to taste
olive oil for frying
GARLIC AND THYME MAYONNAISE:
1 1/4 cups neutral flavoured oil such as canola oil
2 cloves garlic (peeled)
2 whole eggs
3 tbsp of lemon juice
1 tsp of dijon mustard
1/2 tsp salt
1 tsp fresh thyme leaves (chopped)
pepper to taste

Steps:

  • To make the mayonnaise place the garlic cloves in a saucepan along with the oil. Place over a low heat for 20 minutes to infuse and slowly cook the garlic. Set aside to cool completely.
  • Place all of the ingredients except the thyme leaves into a narrow jug or bowl. Use a stick or immersion blender to combine the ingredients. You'll notice that almost immediately the mayonnaise will begin to emulsify. Blend until combined. You can see step by step photos of the process here.
  • Taste and adjust the seasonings as necessary. Refrigerate.
  • Rinse the quinoa well in a fine mesh sieve under cold running water. Place in a saucepan with the water and a pinch of salt and bring to the boil. Cover and cook for 12 to 20 minutes. I've found Australian Organic Quinoa cooks particularly quickly (12 minutes), others take up to 20 minutes or even longer. Check after 12 minutes to see if the quinoa is tender and you can see the little quinoa curlicues. Set aside to cool.
  • Heat a large frying pan over a medium low heat and 2 tsp olive oil and add the onions cook until lightly golden. Remove from the pan and place in a large bowl. Increase the heat to medium high and add another 2 tsp of olive oil. When the pan has come to heat add the mushrooms, garlic and thyme and cook for 2 minutes. Add the soy sauce and cook for a further 2 minutes or until the liquid has almost evaporated. Place in the same bowl as the onions and leave to cool.
  • Add the cooled quinoa to the bowl along with the onions and mushrooms. Add the breadcrumbs and parsley and mix to combine. Test and adjust seasonings with sea salt and pepper as necessary. Add the beat egg and mix until well combined.
  • Form the mixture into patties (I find I get around 10 patties out of the mixture) and refrigerate for 30 minutes.
  • Return the frying pan to a medium low heat and add enough olive oil to just coat the bottom of the pan. Place the patties in the frying pan and cook for 7 to 10 minutes on each side until golden brown.
  • Enjoy the burgers on fresh bread tools topped with a slice of cheddar cheese along with your favourite salad toppings and a dollop of garlic and thyme mayonnaise or ketchup.

These easy vegan quinoa burgers come together quickly and easily using mostly pantry staples! The burgers are incredibly versatile-you can serve them over greens, on buns, or stuffed into pita bread. We love to slather them with Herbed Aioli (use vegan mayo for a vegan version) or hummus, and we top them with cucumbers, avocado, and greens. However they're also delicious with yogurt, feta, sliced tomatoes, or the classic burger fixings... the sky's the limit! You can either cook the quinoa as indicated below or use 2 cups of leftover cooked quinoa.

½ cup red or white quinoa (or 2 cups already cooked quinoa)

2 large garlic cloves
1 15- oz can white beans (navy or cannellini)
3 scallions, coarsely chopped (white and green parts)
¼ cup cilantro leaves (packed)
1 teaspoon lemon zest
1 teaspoon ground cumin
Freshly ground black pepper
½ cup fresh or frozen peas (defrosted if frozen)
½ cup panko breadcrumbs (regular or gluten free)
3 tablespoons extra virgin olive oil, divided
Buns, pita bread or greens, for serving
Toppings for serving, such as: herbed aioli, hummus, smashed avocado, sliced cucumber, mint leaves, sliced tomatoes, yogurt, feta cheese, etc.

Steps:

  • In a small pot with a lid, combine the quinoa, 1 cup of water, and a pinch of salt. Bring the water to a boil, then reduce the heat to a simmer. Cover and cook until the quinoa has absorbed the water, about 15 minutes. Remove the pot from the heat and let sit, covered, for 5-10 minutes to steam. Do Ahead: The quinoa can be refrigerated in an airtight container for up to 4 days or frozen for up to 3 months.
  • In a food processor with the blade running, add the garlic cloves and finely chop. Add the white beans, scallions, cilantro, lemon zest and cumin. Season with salt and pepper. Process until the mixture forms a coarse puree, scraping down the sides. Add the quinoa; pulse to combine until a coarse paste forms. Transfer to a bowl, and stir in the peas and breadcrumbs. Form the mixture into 6 patties, and place them on a piece of wax or parchment paper. Do Ahead: The uncooked burgers can be covered and refrigerated for up to 1 day before cooking.
  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the burgers and cook until golden brown on the bottom, about 4-5 minutes. Flip the burgers, add the remaining tablespoon of oil and cook until golden on the other side.
  • Transfer the burgers to buns, pita bread or greens, and serve warm with the toppings of your choice.
