Quinoa Biryani is a fusion biryani made with Quinoa and mixed vegetables with biryani masala and spices. This surely tastes wonderful and makes a filling meal.

Steps:
- Wash and soak the Quinoa for 15 mins.
- Bring the water to boil in a saucepan and when it starts rolling boil, add the drained Quinoa.
- Simmer and cook it covered till done. This takes about 10 mins.
- Since I added just enough water for this to get cooked, take care to fluff in intervals.
- During the time you soak the Quinoa, you can prep the vegetables and microwave for 10 mins or till done.
- In a pan, heat the oil and ghee, temper with the whole spices.
- Add onion julienne, slit green chilies and ginger garlic paste.
- Saute on high till the onions are done.
- Now add the vegetables and continue cooking on high till the water is all evaporated.
- Add the curds, biryani masala, garam masala and combine well.
- When the whole mix gets dry, add the cooked Quinoa and mix well.
- Cover and keep it on low flame for few mins.
- Fluff and serve with onion raitha.

- Prep: Cut assorted vegetables of your choice in bite size pieces. Cube paneer in 1/2 inch pieces. Crush 1/2 inch ginger+ 3 garlic cloves and keep aside (if using fresh).
- Turn instant pot on Sauté. Wait 30 seconds and add cumin seeds. When cumin seeds begin to sizzle, add ginger-garlic paste and sauté for 30 seconds. Add almonds and cashews and sauté another 30 seconds.
- Add vegetables and paneer, Biryani masala (see 'notes' for substitute for masala blend) and quinoa. Then, add water and stir well. Top with fried onions, saffron strands and chopped cilantro-mint. Close lid. Set valve to Sealing. Press Manual (hi) for 2 minutes.
- After natural pressure release, NPR, open lid. Using a fork, gently fluff the biryani. Serve with raita or your favorite condiment.

- Heat ghee in a deep non-stick deep pan, add cumin seeds and saute till the seeds change colour. Add onion and sauté till translucent.
- Add ginger-garlic paste, mix well and saute for 1-2 minutes or till the raw smells disappear. Add tomatoes, mix well and saute till they become pulpy. Add salt, red chilli powder, turmeric powder, cumin powder, coriander powder and ¼ tsp green cardamom powder, mix well and saute for 1-2 minutes.
- Add cauliflower, carrot, French beans, potato, green peas, fenugreek leaves, fried onion, a little salt and yogurt, mix well and cook for 8-10 minutes.
