- In a saucepan on high heat cook quinoa, chicken broth, cilantro, olive oil, lime juice, and salt. Stir it once or twice. Then when the liquid has nearly boiled out cover and reduce to a low simmer and cook for about 8 minutes more.
- Meanwhile dice a yam and place in a cake pan, cover with foil and bake at 400 degrees for about 12 minutes or until yam is soft.
- Cut 1/2 an Avocado into chunks.
- Make dressing by whisking olive oil, lime juice, cilantro, and sugar.
- On a plate place a large handful of baby spinach leaves. Spoon the quinoa on it. Then toss the cooked yams on top. Then toss the avocado chunks on top. If the dressing has separated whisk it for a few seconds before drizzling it on top. Serve immediately.

- Pre-heat your oven to 200 Degrees C (390 F).Peel and rinse the sweet potato, carefully slice it in half lengthways then chop into half-moon shapes about 1 ½ cm/ ½ inch thick.
- Line a sheet pan with baking paper and put the sweet potato on the tray. Toss it in oil and season with salt and pepper. Spread it out so the slices are not overlapping. Roast in the oven for approximately 35-40 minutes or until the sweet potato is just cooked.Remove once cooked and set aside.
- Put the quinoa in a fine-meshed sieve and rinse well under cold running water, swishing the quinoa with your hand. Drain the quinoa well - See Note 1.
- Pour 2 cups of water into a medium saucepan, add the quinoa, bring to the boil then lower the heat and simmer, covered, for about 10 minutes, until the seeds are tender. When they’re cooked you will notice they have little curly “tails”.(Or follow directions on the packet)

- On a large sheet pan, toss the cubed sweet potatoes with minced garlic, paprika, cumin, 1 teaspoon Kosher salt, 1/4 teaspoon ground black pepper, and 1/4 cup olive oil. Set aside.
- In another sheet pan, toss the kale with a few drizzles of olive oil, salt and ground black pepper. In another sheet pan, toss the chickpeas with a few drizzles of olive oil, salt and ground black pepper.
- Roast the chickpeas, kale, and chickpeas at 400 degrees F: sweet potatoes for 25-30 minutes, chickpeas for 20 minutes, and kale for 8-10 minutes. Toss halfway through the roasting process. Note: Start roasting all 3 at the same time, and remove whatever is ready from the oven when their cooking times are up.
