Quinoa Tofu Nut-Loaf image

I used a lot of the ingredients I would use for regular meatloaf. You can add more or less of anything and it will still turn out great.

1 cup uncooked quinoa
1 1/2 cups water or 1 1/2 cups vegetable broth
3/4 cup uncooked oats
1 (15 ounce) can garbanzo beans, rinsed and drained
1/2 cup water or 1/2 cup vegetable broth
1 lb tofu, firm
1 cup chopped onion
1 cup carrot, grated
1 cup celery, diced
1/2 cup sun-dried tomato, diced
1 cup cashews, ground
1 cup walnuts, ground
1 egg
1/4 cup wheat germ
1 teaspoon thyme
1 tablespoon parsley
1/2 teaspoon rosemary
1 garlic clove
1 tablespoon extra virgin olive oil
salt & fresh ground pepper

Steps:

  • Preheat oven to 350°F Lightly grease an 8-inch loaf pan with oil; set aside.
  • Set water or vegetable broth to boil and add quinoa. Immediately cover and remove from heat. Do not uncover until ready to use.
  • Combine oats, garbanzo beans and water in a food processor. Process until smooth.
  • Break tofu up into small chunks. In large bowl combine all ingredients, including cooked quinoa.
  • Mold into lightly oiled loaf pan.
  • Cover and Bake at 350 for 45 minutes. Uncover and bake for 10 minutes more. Watch for it to brown but not dry out.

1 cup quinoa, rinsed well
1 cup chopped onions
3 tablespoons tomato paste, plus extra reserved for top of loaf
1/2 cup diced red bell pepper
1/2 cup chopped mushrooms
1/2 cup diced organic celery
1/2 cup pine nuts
1/2 cup chopped walnuts
2 tablespoons chopped parsley
1 teaspoon Mrs. Dash Italian seasoning
1/2 teaspoon garlic powder

Steps:

  • Cook the quinoa according to package directions, adding chopped onions to the cooking liquid along with the quinoa. In a bowl, combine the tomato paste, bell pepper, mushrooms, celery, pine nuts, walnuts, parsley, Italian seasoning and garlic powder. Add to the cooked quinoa/onion mixture and mix well. Lightly rub a loaf pan with a minimal amount of oil. Fill pan with quinoa mixture and press down evenly. Spread a 1/8 inch layer of reserved tomato paste over top. Bake at 200 degrees for 30 minutes. May be served over steamed or sauteed spinach, kale or Swiss chard.

  • Combine lentils, bay leaf and water in a pan over medium heat. Bring to a boil and cook for 20 minutes. Wash the quinoa, add to the pan, partially cover and continue to cook until both are very tender and easily mashed (You want to slightly over cook the lentils). Stir after 10 minutes so they don't stick to the pan. Total 10 to 15 mins . *Drain any excess water, remove bay leaf and transfer to a bowl.
  • Heat oil in a skillet over medium heat. Add onions, garlic and jalapeno and cook for 5 minutes. or until translucent
  • Add celery, carrots, thyme, oregano, and mix well. Cook for 5 minutes or until the veggies are tender. Add in the raisins, and mix . Cook for 2 minutes. Take off heat.
  • Add the cooked veggies and flaxmeal to the bowl and mix in. Mash the mixture using potato masher or hands, so that atleast half the lentils and quinoa get well mashed. (you still want some whole lentils)

  • Rinse lentils in cold water and drain. Combine rinsed lentils, bay leaf and water in a saucepan over medium-high heat. Bring to a boil, reduce to a simmer, and cook partially covered for 45 minutes, until lentils are soft and starting to break apart.
  • Rinse the quinoa, and then add it to the saucepan with the lentils. Partially cover, and continue to cook for 15 minutes until quinoa is soft. Add more water if needed. The best is to have no water left in the end. If water remains, drain it off. Remove the bay leaf and set lentils and quinoa aside until needed.
  • Heat oil in a skillet over medium heat. Add onions, garlic, and jalapeño, and sauté for 5 minutes. or until translucent. Add celery, carrots, green pepper, thyme, oregano, and salt, and stir well. Cook for 5 minutes, or until the veggies are just tender. Add the raisins and cook for 2 minutes. Turn off the heat and set aside until needed.
  • In a large bowl, add the tomato paste, mustard, and soy sauce and mix well. Add the prepared lentils and quinoa, as well as the prepared vegetable sauté, chopped nuts, and optional ground flax seeds, and mix well. Add the breadcrumbs or wheat-free oats to achieve a good consistency. The loaf mixture should be not to dry, and not to wet.
