PEAR BUTTER
Pear butter is lightly scented with orange and nutmeg. This is an old recipe from a dear friend. Its taste is so good in toast or even on top of steak or chicken.

Steps:
- Place pears into a large pot over medium heat, and add just enough water to cover the bottom of the pot and keep them from sticking, about 1/2 cup. Cook until the pears are soft, about 30 minutes. Press pears through a sieve or food mill, and measure out 2 quarts of the pulp.
- Pour the pear pulp and sugar into a large saucepan and stir to dissolve sugar. Stir in the orange zest, nutmeg and orange juice. Cook over medium heat until the mixture is thick enough to mound in a spoon. When the mixture begins to thicken, stir frequently to prevent scorching on the bottom. This will take about 1 hour.
- Ladle the pear butter into hot sterile jars, leaving 1/4 inch of headspace. Remove air bubbles by sliding a metal spatula around where the pear butter touches the glass. Wipe jar rims clean, and seal with lids and rings. Process for 10 minutes in a boiling water bath. The water should cover the jars by 1 inch. Check with your local extension for exact processing times for your area.

PEAR BUTTER
This recipe I found in Ball recipe book Tweaked a lot.I used my vita mix so I didn't need to cook, peel or seed my pears.I just pureed them then cooked with rest of ingredients. If you need to you can peel, seed and cook to soften the pears then puree in food processor. I just like the idea of all the vitamins and fiber I get to have because of this method. The prep time is what it took me from start(fruit) to finish(butter). This can be used on bread, waffles,pour it on a layer of cream cheese for a cracker spread,serve with a pork roast or turkey. Try it straight out of the jar.

Steps:
- Wash 8-10 pint jars in hot soapy water or in dish washer.
- Keep hot until needed.
- Prepare lids as manufacturer directs.
- Place in a 6-quart pot.
- Pour orange juice over fruit.
- Stir in orange peel, sugar, spices and seed of vanilla bean.
- Use a hand blender if need be to get a nice smooth puree.
- Stirring constantly over medium heat, bring to a boil.
- Ladle into hot jars 1 at a time, leaving 1/4 inch headspace.
- Release trapped air.
- Wipe rim of jars with a clean damp cloth.
- Attach lid.
- Place in canner.
- Process in a boiling-water bath.
- For 15 minutes.

HOMEMADE SPICED PEAR BUTTER

- Peel and dice pears.
- Place pears, lemon juice, maple syrup, brown sugar, ginger slice, nutmeg, and salt in a medium sized saucepan over medium high heat- bring to a boil.
- Reduce heat to medium-low and simmer for 30 minutes with a lid, slightly ajar.
- Remove fresh ginger slice and use an immersion blender, or mash by hand, simmer an additional 10 minutes.
- Transfer mixture to a jar with a tight fitting lid and store for up to 2 weeks.

- Combine all ingredients in a medium saucepan over medium-high heat, stirring to combine.
- Bring to a boil, then cover (cover partially to allow steam to leave the pot) and simmer for 50 minutes. Stir occasionally to make sure the bottom doesn't burn.
- After the mixture has cooked down and the pears are super soft, transfer to a food processor (remove the star anises) or blender.
- Blend until completely smooth.

- Add the pear and apple chunks to a blender, along with the apple cider and the apple cider vinegar.
- Blend the fruits with the liquids until smooth and no chunks remain, about 1 minute.
- Pour the contents of the blender into a slow cooker. Add the brown sugar, ground cinnamon, ground ginger, kosher salt, and vanilla extract to the puree. Stir the spices and sugar, and vanilla into the apple pear mixture to combine.
- Cover the slow cooker and set the temperature to high. Leave the cover of the slow cooker askew to allow steam to escape from the apple pear butter as it cooks.
- Cook the apple pear butter for 8-12 hours, stirring the apple pear butter once every hour.
- Once the apple pear butter is done, transfer it into clean mason jars or storage containers. If you do this while the apple pear butter is piping hot, the heat from it will help vacuum seal the lids on the jars.
- Store in the fridge for up to one month.Use it as a spread, topping, or mixed into your favorite recipes.

- Place pears in a food processor or blender; puree until smooth.
- Measure 3 cups pureed pears into a saucepan. Add sugar. Cook, stirring occasionally, until bubbling, about 15 minutes. Stir in cinnamon. Cook, stirring frequently, until thick, about 15 minutes more.

PEAR BUTTER RECIPE

- Peel, core and slice pears. Pulse pears in blender until smooth. Pour blended pears into crockpot.
- Add cinnamon and sugar and gently stir. Cook with lid off (your house is going to smell amazing!!) for 16-24 hours. Pear butter should be thick enough to gently mound on spoon.
- Stir in lemon juice. Ladle pear butter into half pint (8 ounce) small jam jars, leaving 1/4 inch head space. Wipe rim with damp cloth. Store pear butter in fridge up to one week or process for canning.
- To can pear butter: Place half pint jars into canner. Fill canner with water just to the tops of the jars. Bring water to a boil and boil for 20 minutes. With canning lifter remove jars to cool on a towel on the kitchen counter for 12 hours. Enjoy!

- Do not peel the pears (peels add flavor and nutrition!) Cut into 3/4-inch to 1-inch chunks. Add to slow cooker along with 1/2-cup water, lime juice, brown sugar, ginger and lime peel.
- Turn slow cooker on to HIGH and cook for 3-4 hours, stirring once every hour. Cook until pears are soft (time to reach soft texture will depend on the ripeness of your pears).
- When soft, remove pears from liquid with a slotted spoon and place in a blender (or a bowl and use a stick/immersion blender). Puree until smooth.
