This is a choc-nutty no-bake cookie. They are also good with raisins. Good luck!

2 cups white sugar
2 cups packed brown sugar
1 cup butter
1 cup milk
2 cups semisweet chocolate chips
4 cups quick cooking oats
1 cup chopped walnuts
1 cup flaked coconut

Steps:

  • Place oats, nuts, coconut, and chocolate chips in a large bowl.
  • Place sugars, butter or margarine, and milk in a saucepan. Bring to a boil, and continue to boil for 2 minutes. Pour hot mixture over oat mixture. Mix well. Drop from a teaspoon onto wax paper. Allow to set up.

This easy sugar cookie recipe is reminiscent of my family's traditional Hungarian kifli cookies...sweet, buttery and filled with nutty goodness.

16 ounces Pillsbury Ready to Bake Sugar Cookies (1 package)
2 1/2 ounces cream cheese
1 cup finely chopped walnuts (or pecans)
1/2 cup powdered sugar (+ extra for dusting)
1 1/2 teaspoons fresh lemon juice
1/2 teaspoon vanilla extract

Steps:

  • Preheat the oven to 400 degrees F and line cookie sheets with parchment paper. Place the cream cheese in a microwave-safe bowl and microwave for 30-60 seconds to soften. Then mix the walnuts, powdered sugar, lemon juice, and vanilla with the melted cream cheese.
  • Place the Pillsbury Sugar Cookie dough disks on the cookie sheets 2 1/2 inches apart and top each disk with a dollop of walnut filling approximately the same size as the dough.
  • Bake for 9-11 minutes, until the edges are just slightly golden, but the centers look a bit under-baked. The walnut filling will shift to one side while baking. Remove from the oven and immediately (while the cookies are still hot) use a spatula to fold the cookies in half over the walnut filling.
  • Allow the cookies to cool for 5-10 minutes, then dust liberally with powdered sugar. Store in an air-tight container until ready to enjoy!

These cookies were always served for school lunch. I got the recipe after marrying from one of the cooks, and have made it many times since. This cookie generally is seen with cocoa, but I like this one better, it doesn't have any.

3 cups white sugar
¾ cup butter
¾ cup milk
½ teaspoon vanilla extract
1 ½ cups peanut butter
4 ½ cups quick-cooking oats

Steps:

  • In a saucepan over medium heat, combine sugar, butter and milk. Bring to a rapid boil and boil for one full minute. Remove from heat and stir in the vanilla and peanut butter. Mix in the oats, stirring until the mixture begins to cool. Transfer to a large bowl if it does not fit into the pan well. Drop batter by teaspoonfuls onto waxed paper. Let cool until set.

(No Wheat / No Egg) Cookies in five minutes! No wheat or egg so these are great for wheat or egg free diets. A friend gave me the original recipe that called for white sugar and they were great that way. I tried it with brown sugar and that is the ONLY way I'll fix them now! Totally a new level. Only takes 10 minutes total to prepare these.

3 cups old-fashioned oatmeal (dry, sometimes takes more oatmeal)
5 tablespoons peanut butter (reduced fat works great)
2 teaspoons vanilla
2 cups brown sugar
1/2 cup milk (Non fat works great)
1/4 cup butter

Steps:

  • Mix together the first three ingredients. Set aside.
  • Stir together sugar, milk, and butter in Medium saucepan. Cook over medium heat stirring occasionally - full boil for ONE minute.
  • Immediately pour over oatmeal mixture and stir thoroughly but rapidly.
  • Spoon cookie size scoops (a heaping tablespoon) onto waxed paper or plastic wrap and let set until firm.

2 c sugar
2 Tbsp cocoa powder (or up to 1/3 c if you like them real chocolatey)
1/2 c (1 stick) butter
1/2 c milk
1 c peanut butter
3 c quick-cooking oats
1 tsp vanilla

Steps:

  • 1. Mix the sugar, cocoa, butter and milk in a saucepan. Bring to a strong boil for 1 & 1/2 to 2 & 1/2 minutes NO LONGER.
  • 2. Add vanilla and peanut butter; stir quickly and thoroughly to melt peanut butter. Add oats and mix quickly...this step must be where the quickie comes from in the title of quickie cookies :-)
  • 3. Again, quickly pour mixture in a greased dish (13X9) or whatever you have. Press into pan evenly. When cooled, cut into squares.
  • 4. *Note* My mom dropped spoonfuls on wax paper, but I find it easier to put it all in a dish and let it cool. I think to have enough time to drop by spoonfuls before the mix hardens, I would only boil the mixture for 1 1/2 to 2 minutes.

1/4 cup milk (60 milliliters)
1 cup sugar (200 grams)

1 1/2 cups rolled oats (135 grams)
2 tablespoons ground flax seed (12 grams)
1/4 teaspoon kosher salt

Steps:

  • Line two baking sheets with parchment paper and set aside.
  • In a medium saucepan, combine the butter, milk, sugar and cocoa and bring to a boil over high heat. Boil for 2 minutes.
  • Remove from the heat and stir in the peanut butter and vanilla until uniform. Add the oats, flax seed and salt and stir well to combine.
  • Immediately drop about 24 rounded tablespoons onto the prepared baking sheets and allow the cookies to cool and set for about 15 minutes. The cookies will keep in a sealed container at room temperature for 1 week. If you'd like a chewier cookie, store in the fridge.
