Steps:
- Place the milk, butter, sugar, and cocoa in a medium sized saucepan, and bring to a full rolling boil. Boil for one minute. Remove from heat, and stir in oats. Mix in coconut, if desired. Drop by teaspoonfuls onto waxed paper. Let stand until set. Quickies may be refrigerated to speed setting.

This coffee cake is wonderful, the cake itself it moist and delicious while the topping is slightly crunchy and sweeter. Together, they make a delightful combination that you will surely enjoy!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Grease and flour a 9 inch square pan.
- In a large bowl mix together the flour, baking powder, sugar and salt. Cut in the shortening with a pastry blender to the size of small peas.
- In a separate small bowl, beat the egg well, then stir in the milk and vanilla. Add the egg-milk mixture to the flour mixture all at once. Stir carefully until just blended.
- Pour batter into prepared pan and spread evenly. Drizzle top with melted butter.
- In a small bowl mix together brown sugar, 2 tablespoons flour and 1/2 teaspoon cinnamon. Sprinkle on top of cake. Bake in the preheated oven for 15 to 20 minutes, or until a toothpick inserted into the center of the cake comes out clean.

QUICK AND EASY COFFEE CAKE RECIPE
Steps:
- Preheat oven to 350ºF, and spray (or grease and flour) bundt pan
- Combine sugar and cinnamon in small bowl, and set aside
- In medium sized bowl, combine cake mix, pudding mix, oil and water
- With beaters on high-speed, add eggs one at a time beating well in between each addition for a total of 4 minutes
- Pour half of mixture into bundt pan & sprinkle with half of sugar/cinnamon mixture
- Pour remaining batter over in pan and top with remaining sugar/cinnamon
- Swirl knife through to create a marbled effect
- Bake 55 mins & let cool for 5 mins before removing from pan
- To remove from pan, place cooling rack on top of bundt pan and flip, and gently jiggle cake out of pan

- 1. Take frozen pound cake and slice in 3 layers. Mix cool whip, sugar, and vanilla with blender. Blend well making sure sugar is blended. Spread mixture on top of layers, sprinkling pecans on top. Stack layers. Then refrigerate till ready to serve. Delish!

Steps:
- 1. Mix the sugar, cocoa, butter and milk in a saucepan. Bring to a strong boil for 1 & 1/2 to 2 & 1/2 minutes NO LONGER.
- 2. Add vanilla and peanut butter; stir quickly and thoroughly to melt peanut butter. Add oats and mix quickly...this step must be where the quickie comes from in the title of quickie cookies :-)
- 3. Again, quickly pour mixture in a greased dish (13X9) or whatever you have. Press into pan evenly. When cooled, cut into squares.
- 4. *Note* My mom dropped spoonfuls on wax paper, but I find it easier to put it all in a dish and let it cool. I think to have enough time to drop by spoonfuls before the mix hardens, I would only boil the mixture for 1 1/2 to 2 minutes.

- Arrange a rack in the center of the oven. Grease the cake pans with the 1 tablespoon of the butter, dust with 1 tablespoon cocoa powder.

- In a medium bowl, combine the chocolate and sugar. In a medium pot, combine the heavy cream and vanilla and bring to a simmer. Pour over the chocolate and stir until all of the chocolate has melted. Gently whisk in the butter pieces. Set aside to cool.
