SIMPLE WHITE BREAD

- In a measuring cup, combine the sugar and yeast to 1 cup of lukewarm water, stirring until combined. Set aside.
- In a medium bowl, mix together the flour and salt.
- Pour the yeast mixture into the bowl and combine all the ingredients.
- Sprinkle 1-2 tablespoons of flour onto your work surface and knead the dough for a few minutes, or until smooth and elastic.
- Store the dough in a sealable plastic bag that has been drizzled in olive oil, making sure the dough is completely covered in the oil. Keep the dough in the refrigerator overnight.
- WHEN YOU ARE READY* to bake the bread, remove the dough from the refrigerator. Leave the dough in the plastic zipped bag,and let it come to room temperature (about an hour). *This can sit in your fridge for SEVERAL days!!
- Prepare a loaf pan with nonstick spray.
- Sprinkle 1-2 tablespoons of flour on your work surface, take the dough out of the bag, and knead and fold the dough for about 1 minute.
- Form a log with the dough that will fit in your prepared loaf pan. Cover the pan with the plastic bag and let it rise until is has at least doubled in size (about 2 hours).
- Meanwhile, preheat the oven to 350°F.
- After the dough has risen, remove the plastic covering and slash the top of the dough with a sharp knife.
- Bake for 35-40 minutes at 350°F, or until the internal temperature is 190-210°F. Let it cool completely before slicing.

- Sprinkle yeast over 1/2 cup water. Add 2 teaspoons honey. Whisk until yeast dissolves. Let stand until foamy, about 5 minutes. Transfer to the bowl of a mixer fitted with the paddle or dough-hook attachment. Add butter and remaining 1 3/4 cups water and 3 tablespoons honey. Whisk flour with salt; add 3 cups to yeast. Mix on low speed until smooth. Add remaining 4 cups flour, 1 cup at a time, mixing until dough comes away from sides of bowl and forms a ragged, slightly sticky ball. Butter a large bowl.
- Knead dough on a floured surface until smooth and elastic but still slightly tacky, about 5 minutes. Shape into a ball. Transfer to prepared bowl; cover with plastic wrap.
- Let dough stand in a warm place until it doubles in volume (it should not spring back when pressed), about 1 hour. Butter two 4 1/2-by-8 1/2-inch loaf pans. Punch down dough; divide in half.
- Shape 1 dough half into an 8 1/2-inch-long rectangle (about 1/2 inch thick). Fold long sides of dough in to middle, overlapping slightly. Press seam to seal. Transfer dough, seam side down, to pan. Repeat with remaining dough. Brush each loaf with butter, or dust with flour for a rustic look. Preheat oven to 450 degrees. Drape loaves with plastic. Let stand until dough rises about 1 inch above tops of pans, 45 minutes to 1 hour. Reduce oven temperature to 400 degrees. Bake, rotating pans after 20 minutes, until tops are golden brown, about 45 minutes. Transfer to wire racks. Let cool slightly; turn out loaves. Let cool completely before slicing.

- In a large mixing bowl, dissolve yeast in 1/2 cup warm water. Add remaining water, dry milk, oil, sugar, salt, and 3 cups of flour; beat with an electric mixer on medium speed for 3 minutes, or until smooth. Stir in enough remaining flour to form a soft dough.
- Turn dough onto a lightly floured surface. Knead until smooth and elastic, about 6 to 8 minutes. Place in a greased bowl, turning once to grease surface. Cover the bowl with a damp cloth. Let rise in a warm place until doubled in size, about 1 hour.
- Punch the dough down, and divide in half. Shape into loaves. Place in two greased 9 X 5 x 3 inch loaf pans. Grease the tops of the loaves, and cover with a damp cloth. Let rise until doubled, about 1 hour.
- Bake at 375 degrees F (190 degrees C) for 35 minutes, or until golden brown. Remove bread from pans to cool on wire racks. Brush with melted butter or margarine.

- In a large bowl, dissolve yeast and sugar in warm water. Stir in lard, salt and two cups of the flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.

BEST EVER WHITE BREAD (ABM)
This is a recipe I developed from lots of trial and error. I just kept experimenting with my bread maker. This same dough makes beautiful dinner rolls as well.

- Personally I only mix it up in the bread maker. When it is done proofing I turn it out onto a floured surface shape it and place it in a greased (cooking spray) loaf pan. Let rise for approx 1 hour, til doubled. I bake for 30 minutes at 350 degrees.

- 1. Place ingredients in your bread machine according to directions.
- 2. You can either bake it in your bread machine or set it on your dough cycle.
- 3. If you use your dough cycle (which I prefer), remove your dough from the ABM and place on a lightly floured board.
- 4. Knead the bread a few times to remove the air bubbles and then form the dough into a loaf. Place the loaf in a 9x5-inch bread pan that has been sprayed with Wilton Bake Easy (or use a similar baking spray). Let rise till doubled in size (this won't take very long so watch closely).
- 5. Bake in a preheated 350 degree oven for approximately 35 minutes (you should have a hollow sound when you tap your bread).
- 6. Remove from the oven and let cool in pan for 10 minutes. Then remove from the pan and finish cooling on a wire rack. Slice and enjoy.

- Proof That Yeast. First let's get our yeast started. Take your water and heat it up in the microwave for about 40 seconds. We want the temperature to be between 105 degrees F and 115 degrees F. (40-46 C) Then we will add about 1 tsp.
- Add Oil and Sugar. Now let's pour the yeast mixture into a large bowl, then add our oil and our sugar. Stir with a wooden spoon.
- Salt and Flour. Now we take our salt and add it to our bread flour. You can use all-purpose flour if you like, however the bread will come out a little more dense then if you use bread flour, with that said, the bread still tastes super yummy with all-purpose flour.
- Knead That Dough. Now let's knead our dough for 8 minutes until ti gets nice and smooth. The way I knead is I fold the dough over on itself towards me and then push down with my palm of my hand.
- Grease and Rise. Now we take about 1 tsp. or two of oil and grease a large bowl. Then add the dough and and turn it over so it gets all coated with oil.
- Shape and Rise. After our dough has risen we want to pour the dough out onto the counter and knead the dough again for about 15 to 20 seconds. Next we do a little bit of rolling and stretching and shaping until our dough looks like a loaf.
- Bake That Dough! Now we heat the oven to 350 degrees F. (176C) Place the dough in the oven on the middle rack and bake for 30 minutes. After 25 minutes check the bread, if the top is getting too brown, put a piece of foil on top of it.
- Cool and Slice It! Now after coming out of the oven, let the bread cool for about 5 minutes in the pan, then take it out of the pan and let it rest on a wire rack to cool completely.
