Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Time 1h

Number Of Ingredients 15

1 loaf crusty white bread, cut into 3/4-inch pieces (8 cups)
3 tablespoons unsalted butter, plus more for baking dish
1 medium yellow onion, diced medium
2 large celery stalks, diced medium
4 garlic cloves, roughly chopped
1 cup golden raisins
1 cup roughly chopped toasted walnuts
2 tablespoons chopped fresh sage leaves
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh thyme leaves
Coarse salt and ground pepper
1/2 cup roughly chopped fresh parsley leaves
3 large eggs, lightly beaten
3 cups low-sodium chicken broth

Steps:

  • Preheat oven to 400 degrees, with racks in middle and lower thirds. On two rimmed baking sheets, arrange bread in a single layer. Toast until dry and pale golden brown, 10 to 12 minutes. Let cool.
  • Meanwhile, lightly butter a 9-by-13-inch baking dish. In a large skillet, melt butter over medium. Add onion, celery, and garlic and cook, stirring frequently, until onion and celery are softened, about 7 minutes. Add raisins, walnuts, sage, oregano, rosemary, and thyme leaves and cook, stirring, 1 minute. Transfer to a large bowl and season with salt and pepper.
  • Add parsley, eggs, and bread; stir to combine. Add broth in two additions, stirring until absorbed after each addition. Season generously with salt and pepper and transfer stuffing to dish. Bake on middle rack until deep golden brown on top, 25 to 30 minutes. Let sit 5 minutes before serving.

  • First, mix your flax eggs in a small bowl and set them aside. You'll also want to check your stuffing. If it's still pretty wet (which can happen with leftover stuffing), dry it out in the oven a bit before you mix it with the remaining ingredients.
  • When your flax eggs are made and the stuffing is dried, add all the ingredients to a large mixing bowl and stir until well-combined.
  • Use your hands or a melon baller to form the mixture into balls, just a bit smaller than a ping pong ball. Make sure you squeeze each ball tightly to help it bind together. Place each on the baking sheet and bake for 20-25 minutes, stopping halfway through to gently flip them.

  • Preheat a covered barbecue on high with the lid closed (refer to manufacturer’s instructions). Pat turkey dry with paper towels. Using poultry scissors, cut along both sides of the backbone and discard. Turn turkey over and, using the heel of your hands, press down on the breast area to flatten out. Cut slashes into the legs and thighs. Place in an oiled, foil barbecue tray. Loosen the skin away from the meat over the breast and thigh areas.
  • Combine butter with herbs. Season. Thickly spread herb butter under the skin. Brush skin with oil and season with salt and pepper.
  • Turn off the centre burners of the barbecue and reduce heat on the outside burners to medium. Place turkey in tray into the centre, close the lid and cook for 1 hour 30 minutes, checking for doneness 15 minutes before the time is up.
