1 bag (16 oz) frozen mixed vegetables

Steps:

  • In 5-quart Dutch oven, heat oil over medium-high heat. Add beef, onions and garlic. Cook 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain.

1 can condensed tomato soup
1 1/2 tsp Worcestershire sauce
1 tsp Italian seasoning
salt and pepper to taste
3 c mixed vegetables, fresh or frozen

Steps:

  • Brown the onion, ground beef and garlic. Be sure to drain off any fat.
  • Add in potatoes, broth, tomatoes, tomato soup, Worcestershire sauce, and seasonings. Simmer covered 10 minutes.
  • Stir in vegetables. Simmer 15-20 minutes or until potatoes are tender.

1 onion (finely diced)
1 carrot (finely chopped)
2 celery stalks (sliced)
500 grams lean ground beef
3-4 garlic cloves (minced)
1.25 litres water
3 - 4 teaspoons beef stock powder (or to taste)
1 x 400 gram can diced tomato
500 grams potatoes ((2 medium) scrubbed and cubed)
1 bay leaf
2 tablespoons Worcestershire sauce
200 grams cauliflower (cut into bite sized pieces)
140 grams peas (1 cup fresh or frozen)
100 grams beans (about a handful fresh or frozen, cut into bite size pieces)
1 x 400 gram can red kidney beans ( drained and rinsed)
Season with salt and pepper

Steps:

  • In a very large saucepan heat the oil, add the diced leek, carrot, celery and cook until the vegetables soften, about 4-5 minutes, stirring frequently.
  • Add the garlic and ground beef, use a spatula to break the meat into small pieces, mix into the vegetables until the meat color changes from a pinky/red to a dull cooked brown color.
  • Add the water, stock powder, canned tomatoes, potato, bay leaf and Worcestershire sauce, mix well, bring to the boil, reduce the heat, cover with a lid and simmer for 15 minutes.
  • Add the cauliflower, peas, beans and red kidney beans, bring back to the boil, cover with a lid, reduce the heat and simmer for another 5 minutes or until the vegetables are cooked.
  • Season with salt and pepper and enjoy.

1 pot roast (about 2 pounds)
2 russet potatoes, chopped
1 bag frozen seasoning blend (or just chopped onions)
1 bag frozen peas
1 bag frozen green beans
1 bag frozen corn
4 large carrots, chopped
1 (32 oz) container beef broth
2 (10.75 oz) cans tomato soup
1 can filled with water
Salt and pepper, to taste

Steps:

  • Season roast with salt and pepper and place in your slow cooker with half a can of beef broth. Cook on LOW for about 10 hours and shred with two forks.
  • In a very large pot, saute carrots and seasoning mix in 1 tablespoon oil until tender.
  • Add beef, potatoes, remaining veggies, remaining beef broth, tomato soup, water, salt and pepper.
  • Bring to a boil, lower the heat, cover and simmer for about an hour.
  • Add water as desired while it cooks.

2 pounds beef stew meat (cut into 1-inch cubes)
1 ½ teaspoons Kosher salt
½ teaspoon black pepper (freshly ground)
2 tablespoons olive oil (divided)
1 teaspoon olive oil
2 medium onions (chopped - approximately 1 cup)
5 carrots (peeled and sliced ½-inch thick slices - approximately 1 cup)
5 stalks of celery (chopped - approximately 1 cup)
2 cloves of garlic (minced)
1 can diced tomatoes ((28 oz.))
1 pound Yukan Gold potatoes (cut into 1/2-inch cubes)
3 sprigs of fresh thyme
1 bay leaf
4 cups low-sodium or homemade chicken (or beef stock)
1 cups water
½ teaspoon Kosher salt
¼ teaspoon black pepper
1 ½ cups fresh green beans
1 cup frozen peas
¼ cup chopped fresh parsley (as garnish)

Steps:

  • For the beef: Using paper towels, pat-dry the stew meat. Salt and pepper in all sides and set aside. Heat one tablespoon of olive oil in a large heavy bottom pot in medium-high heat. Once it is sizzling hot, add in half of the seasoned beef and cook for 3 minutes on each side. (The beef will not fully be cooked)Transfer to a plate. Repeat the same steps with the rest of the olive oil and meat. Transfer the second batch to the plate and cover it with aluminum foil. Do not wash the pot.
  • To make the soup: Heat olive oil in the now-empty pan in medium-high heat. Add in onion, carrots, and celery. Using a wooden spoon, cook the vegetables, scraping the bits and pieces of meat at the bottom of the pan, until they are translucent, 8-10 minutes.
  • Stir in the garlic and cook for 30 seconds.
  • Add in the tomatoes, potatoes, thyme, and bay leaf. Give it a stir.
  • Transfer the semi-cooked beef into the pot. Pour the stock and water over everything, sprinkle it with salt and pepper, and give it a stir.
  • Turn down the heat to medium, put the lid on, bring it to a boil and then let it simmer for 15 minutes.
  • Add in the green beans and frozen peas and cook until green beans are cooked, but still firm, for 10-15 minutes more. Fish out the bay leaf.
  • When ready to serve, ladle into bowls and garnish with fresh parsley.

1 large red potatoes, diced

1 cup leftover roast, pieces or 1 cup other leftover cooked meat
2 -3 cups water, divided

Steps:

  • Place 1 cup beef stock and 1 cup water in sauce pan.
  • Add diced potato and bring to a boil. Cook until potatoes are easily pierced with a fork, about 10 minutes.
  • While the potatoes are boiling, cook the frozen vegetables, according to the package, in the microwave.

  • In a large pot, heat 1 tablespoon of the oil over medium-high heat. Add half the steak and cook, stirring frequently, until well browned, about 2 minutes. Remove the steak with a slotted spoon.   • Add the next seven ingredients (beef stock through seasoned salt) and the cooked steak to the pot, and stir to combine. Bring to a boil, scraping the bottom of the pot with a spoon to dislodge any brown bits from cooking the steak. Reduce the heat, cover pot, and simmer for 1-2 hours (the more the merrier – especially for tenderizing the meat and seasoning the broth). Just before serving, season with salt and lots of freshly-ground black pepper. Then serve.
