Steps:

  • Combine all ingredients, stirring to dissolve sugar completely. Fill cylinder of ice cream maker no more than two-thirds full; freeze according to manufacturer's directions. (Refrigerate any remaining mixture until ready to freeze.) Serve immediately or store in covered containers in freezer.

500g pot of good-quality vanilla custard
284ml carton double cream

Steps:

  • To churn in a machine: In a bowl, mix the ingredients well together. Churn in the ice-cream machine until scoopable. Transfer to a freezer container and freeze until needed.
  • To churn by hand: Mix the ingredients in a bowl and freeze in the bowl for about 90 mins until it starts to freeze around the edges. Stir well then repeat the process twice more until the mix is smooth and frozen. Freeze in a suitable container until needed.

8 large egg yolks
1 cup sugar
1/4 teaspoon coarse salt
2 cups skim milk
1 vanilla bean (split and scraped), or 2 teaspoons pure vanilla extract
2 cups heavy cream

Steps:

  • In a medium saucepan, off heat, whisk together egg yolks, sugar, and salt until blended. Gradually whisk in milk.
  • Cook over medium, stirring constantly with a wooden spoon, until custard thickens slightly and evenly coats back of spoon (it should hold a line drawn by your finger), 10 to 12 minutes.
  • Stir 1 vanilla bean (split and scraped) or 2 teaspoons pure vanilla extract into custard. If using bean, cover custard and let stand 30 minutes.
  • Pour custard through a fine-mesh sieve into a bowl set over ice. Stir in cream. Let stand, stirring occasionally, until chilled. Churn in an ice cream maker according to manufacturer's instructions. Transfer ice cream to a resealable plastic container and freeze until firm, about 2 hours (or up to 3 months).

420ml (1 + 3/4 Cup) Double Cream
300ml (1 + 1/4 Cup) Whole Milk
100g (3/4 Cup) Icing Sugar *
1/4 tsp Salt
1 tbsp Vanilla Paste **

Steps:

  • Line your loaf tin (if using) and set up your ice cream churner. Then mix the cream and milk together in a jug.
  • Whisk in the icing sugar and salt until dissolved.
  • Whisk through the vanilla paste until mixed evenly throughout the mixture.
  • Pour into your ice cream churner and let it do it's thing for 20-25 mins until thickened.
  • Tip the ice cream into your prepared loaf tin and wrap well (or plastic tub). Freeze completely before serving.

Very Easy Vanilla Ice Cream image

This has to be the most classic of all ice creams and even complete novices will find it a doddle. Please note that because of the sugar content in condensed milk, this recipe is not suitable for ice cream makers.

2 x 10 fl oz (275 ml) tins condensed milk
10 fl oz (275 ml) single cream
2 x 7 oz (200 ml) cartons crème fraîche
2 teaspoons pure vanilla extract

Steps:

  • Simply put everything into a bowl and use an electric hand whisk to mix all the ingredients thoroughly. Then pour the mixture into the polythene freezer box and place it in the coldest part of the freezer. After about 2 hours, or when the edges are starting to freeze, remove it and use the hand whisk to give it another good mix and break down any ice crystals. Return to the freezer, then repeat the whisking after 3 more hours. Finally return it to the freezer for a further 6-8 hours, by which time it should be at serving consistency. If you've made it a long time ahead, and it's very hard, transfer it to the main body of the fridge for 30 minutes to soften enough to scoop.
