2 eggs
2 teaspoons butter
2/3 cup quick-cooking oats
1/4 teaspoon ground cinnamon
2 tablespoons brown sugar
1/2 teaspoon vanilla extract

Steps:

  • Place 1 cup milk in a microwave-safe bowl; heat in microwave until bubbling, about 2 minutes. Stir in the oats.
  • Mix flour, brown sugar, baking powder, salt, and cinnamon together in a bowl. Whisk eggs, 2 teaspoons melted butter, and vanilla extract together in a separate bowl; add 1/4 cup milk. Mix oat mixture and egg mixture with flour mixture; stir to combine.
  • Heat 2 teaspoons butter on a griddle or skillet over medium heat; pour about 1/3 cup batter into the hot butter. Cook pancakes until bubbles appear on top layer, about 5 minutes. Flip and cook other side until evenly browned, about 5 more minutes.

3 eggs
1/2 cup granulated sugar
1 teaspoon salt
1 teaspoon baking soda
2 cups buttermilk
1/2 cup milk
1 -1 1/2 cup flour
1 cup quick-cooking oats

Steps:

  • In a large bowl, whisk together the first 6 ingredients until well combined Whisk in the last two, starting with only 1 cup of flour to see if the last 1/2 cup is needed or not.
  • Heat a medium skillet with some oil in the bottom
  • Drop in about 1/4 cup of batter in and shake the pan around gently to thin it out Cook on medium to medium-high heat until you see allot of bubbles on the top and then flip to cook until golden on the other side.
  • Enjoy with raspberry syrup and a cup of coffee, mmmmm.

1/2 cup milk
1/2 cup oatmeal
3 tablespoons whole wheat flour
2 tablespoons butter, melted
2 tablespoons honey
1 egg, separated
2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Warm the milk in the microwave or on the stove.
  • Pour milk over the oatmeal.
  • Let sit 10 minutes or until cool. (If not cool enough after 10 minutes, put in fridge for a few minutes.).
  • Once cooled, mix in flour, melted butter, honey, egg yolk, salt & baking powder. Don't overwork batter, just mix until there are no large chunks or clumps. Batter should be thick enough to slowly run off a lifted spoon. If it falls of spoon in clumps, add milk or water 1 tablespoon at a time. If it runs off quickly, add flour 1 tablespoon at a time.
  • In a separate bowl, beat egg whites until light and frothy.
  • Slowly fold the egg whites into the batter by hand, mixing only enough to get it mainly incorporated - the more you mix at this point, the denser your pancakes will be.
  • Cook on a greased hot griddle. Serve immediately.
  • Makes 16 silver dollar pancakes or 8 medium pancakes.

This recipe was given to me by a friend and after making it the first time, it's gone directly to my favorites! These pancakes are hearty, have a bit of a nutty flavor and are VERY filling!! I think the next time I make it, I'm going to try putting some sliced bananas either on the top of the batter before turning or on top of the pancakes after they're done. Yum!!!

1 cup old-fashioned oatmeal
2 cups 2% buttermilk
1 tablespoon canola oil
1 egg
2 egg whites or 3/4 cup Egg Beaters egg substitute
1 teaspoon vanilla extract
1 1/2 tablespoons Splenda brown sugar blend
1 1/2 cups whole wheat flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda

Steps:

  • Combine oatmeal and buttermilk and let stand for 2 minutes. Beat in oil, eggs and vanilla.
  • Combine dry ingredients. Add dry to wet, stirring only until combined. Cook in a large skillet or electric skillet (mine was heated to between 350 and 400) coated with non-stick spray.
  • Spoon 1/4 cup of batter onto skillet and cook for 2-3 minutes per side (bubbles will NOT form like regular pancakes).
  • These can be refrigerated or frozen for later enjoyment!
