Homemade Sticky Buns image

Forget a trip to the bakery, and create these scrumptious sticky buns right in your own kitchen. Make and refrigerate the dough the night before for a sweet and easy start to the morning!

1 package or 2 1/4 teaspoons active dry yeast
1/4 cup warm water (120°F to 130°F)
2/3 cup milk
1/4 cup butter, melted, still warm but not hot
1/4 cup granulated sugar
1 teaspoon salt
1 teaspoon grated orange peel
4 egg yolks
3 1/2 cups Gold Medal™ all-purpose flour
1 cup packed brown sugar
1/4 cup butter
1/4 cup honey
1 teaspoon grated orange peel
1 cup chopped pecans
1/4 cup butter, softened
2/3 cup packed brown sugar
1 tablespoon ground cinnamon

Steps:

  • Lightly grease 13x9-inch (3-quart) glass baking dish and large bowl with shortening or cooking spray.
  • Place yeast in ungreased large bowl. Add warm water; mix well until dissolved. Stir in all remaining Dough ingredients except flour until well mixed. Add 3 cups of the flour; stir until a soft dough forms.
  • On lightly floured work surface, knead dough 10 to 12 minutes, adding no more than 1/2 cup additional flour until dough is a good consistency and not too sticky. Dough should be slightly sticky and does not break when stretched. If it breaks, continue kneading.
  • Place dough in greased large bowl; cover with plastic wrap. Let rise in warm place 2 to 3 hours or until doubled in size.
  • Punch down dough; place on lightly floured work surface. Cover dough with plastic wrap again; let rest 20 minutes.
  • Meanwhile, in 1-quart saucepan, mix all Topping ingredients except pecans. Heat over medium heat until sugar dissolves. Pour into baking dish. Sprinkle with pecans.
  • After dough has rested, roll out dough with rolling pin into 18x12-inch rectangle. Brush dough with 1/4 cup softened butter, leaving 1-inch strip of dough along one long side. In small bowl, mix 2/3 cup brown sugar and the cinnamon. Sprinkle over buttered dough.
  • Staring with topped long side of dough, carefully and tightly roll dough into very long roll. Cut roll evenly into 15 slices. Place slices in 5 rows by 3 rows in baking dish over Topping. Let rise in warm place 30 to 60 minutes or until doubled in size.
  • After rolls have doubled in size, heat oven to 350°F. Bake rolls 25 to 30 minutes or until deep golden brown. Immediately invert rolls onto serving platter, being extremely careful of hot sticky topping. Serve warm.

1 (8-oz.) container sour cream
6 tablespoons salted butter, plus more for greasing pan
1 teaspoon salt
1/3 cup plus 1 tsp. granulated sugar, divided
1/3 cup warm water (100°F to 110°F)
1 (1⁄4-oz.) pkg. active dry yeast
2 large eggs, beaten
3 3/4 - 4 1/2 cups bread flour, divided, plus more for dusting
1 cup packed dark brown sugar
2 teaspoons ground cinnamon
1/2 cup packed dark brown sugar
6 tablespoons salted butter, melted
1/4 cup granulated sugar
1/4 cup light corn syrup
2 tablespoons heavy cream
1/4 teaspoon salt
1 cup toasted pecans, coarsely chopped

Steps:

  • Prepare the Dough: Combine sour cream, butter, salt, and 1⁄3 cup of the granulated sugar in a small saucepan. Cook over medium-low, stirring occasionally, just until butter melts, about 4 minutes. Remove from heat, and cool to 100°F to 110°F.
  • Stir together warm water, yeast, and remaining 1 teaspoon granulated sugar in a small bowl. Let stand until foamy, about 5 minutes.
  • Combine sour cream mixture, yeast mixture, and eggs in the bowl of a heavy-duty electric stand mixer fitted with a dough hook attachment. With mixer running on medium-low speed, gradually add 3 3⁄4 cups of the flour, beating until a soft Dough forms and pulls away from sides but still adheres to bottom of bowl.
  • Turn it out onto a lightly floured surface. Knead until smooth and elastic, about 10 minutes, adding up to 3⁄4 cup flour, in very small amounts, if necessary to keep it workable. (Dough should be tacky but not sticky.) Place in a lightly greased bowl, turning to coat all sides. Cover and chill 8 hours or overnight.
  • Turn Dough out onto a lightly floured work surface. Roll into a 16- x 20-inch rectangle.
  • Prepare the Filling: Stir together brown sugar and cinnamon in a small bowl.
  • Sprinkle Filling evenly over Dough rectangle, pressing gently to adhere, leaving a 1-inch border on both long sides. Starting at 1 long side, roll up Dough, jelly-roll style. Using a piece of unflavored dental floss, cut off and discard 1 inch from each end of roll. Cut roll crosswise into 12 (1 1⁄2-inch-wide) pieces.
  • Prepare the Topping: Stir together all ingredients in a small bowl.
  • Assemble the sticky buns: Pour Topping into a lightly greased 13- x 9-inch metal baking pan. Spread to coat bottom of pan evenly. Sprinkle evenly with pecans. Place rolls, cut side down, in baking pan with sides touching. Cover with plastic wrap, and let stand in a warm place until rolls double in size, 45 minutes to 1 hour.
  • Preheat oven to 375°F. Remove and discard plastic wrap from buns. Bake in preheated oven until golden brown, 20 to 22 minutes. Cool in pan 5 minutes. Carefully invert buns onto a serving platter. Serve warm.

3/4 cup warm water (110° to 115°)

FILLING:
1/4 cup butter, softened
1/4 cup sugar

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, sugar, oil, salt and 1-1/4 cups flour. Beat on medium speed for 2-3 minutes or until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface. Roll into an 18x12-in. rectangle. Spread butter to within 1/2 in. of edges. Combine sugar and cinnamon; sprinkle over butter. Roll up jelly-roll style, starting with a long side; pinch seam to seal. 6½ tablespoon granulated sugar
5½ tablespoons unsalted butter (at room temperature)
1 teaspoon salt
1 egg (slightly beaten)
1 teaspoon vanilla extract
3½ cups bread flour
2 teaspoons instant yeast
1 cup + 2 tablespoons whole milk (at room temperature)
6½ tablespoons granulated sugar
1½ tablespoons ground cinnamon
1 cup unsalted butter (at room temperature)
½ cup granulated sugar
½ cup light brown sugar
½ teaspoon salt
½ cup light corn syrup
1 teaspoon vanilla extract
½ cup coarsely chopped pecans

Steps:

  • Cream together the sugar, butter, and salt on medium-high speed in an electric mixer with a paddle attachment. Whip in the egg and vanilla extract until smooth. Then add the flour, yeast, and milk. Mix on low speed until the dough forms a ball. Switch to the dough hook and increase the speed to medium, mixing for approximately 10 minutes (or knead by hand for 12 to 15 minutes), or until the dough is silky and supple, tacky but not sticky. You may have to add a little flour or water while mixing to achieve this texture. Lightly oil a large bowl and transfer the dough to the bowl, rolling it around to coat it with oil. Cover the bowl with plastic wrap. Let the dough rise at room temperature for approximately 2 hours, or until the dough doubles in size.
  • Meanwhile, make the Caramel Glaze: In the bowl of an electric mixer, combine the butter, granulated sugar, brown sugar, and salt, and cream together for 2 minutes on high speed with the paddle attachment. Add the corn syrup and vanilla extract, and continue to cream for about 5 minutes, or until light and fluffy.
  • Transfer the dough to the counter. Roll out the dough with a rolling pin, lightly dusting the top of the dough with flour to keep it from sticking to the pin. Roll it into a rectangle 18 inches wide by 9 inches long. Sprinkle the cinnamon sugar over the surface of the dough (use it all!), and roll the dough up with the long side facing you, creating a cinnamon-sugar spiral as you roll. With the seam side down, cut the dough into 12 even pieces.
  • Coat the bottom of a 9x13-inch baking dish with the caramel glaze, then sprinkle the pecans evenly over the surface. Lay the pieces of dough cut-side-up on top of the caramel glaze, evenly spaced throughout the pan. Cover loosely with plastic wrap and allow to rise at room temperature for 75 to 90 minutes, or until the pieces have grown into one another and have nearly doubled in size.
  • Make-Ahead Note: Instead of the second rise, you can place the shaped buns in the refrigerate for up to 2 days, pulling the pan out of the refrigerator 3 to 4 hours before baking to allow the dough to proof at room temperature.
  • Preheat the oven to 350 degrees F and adjust the oven rack to the lowest shelf.
  • Bake the sticky buns for 30 to 40 minutes, or until golden brown. Cool the buns in the pan for 5 to 10 minutes, and then remove them by flipping them over onto another pan or serving platter. Carefully scoop any run-off glaze back over the buns with a spatula. Wait at least 20 minutes before serving. The sticky buns are best eaten the day of baking but can be stored, covered, at room temperature for up to 2 days (see notes below on reheating).

1/3 cup milk (low-fat ok)
3 tablespoons granulated sugar
1/3 cup butter
3 1/2 teaspoons instant yeast
3/4 cup warm water (105F - 115F)
3 cups all-purpose flour
1/2 teaspoon salt
3/4 cup brown sugar (packed)
1/4 cup granulated sugar
1 tablespoon cinnamon
1/4 cup butter (softened)
6 tablespoons butter (melted)
½ cup brown sugar (packed )
¼ cup granulated sugar
¼ cup dark corn syrup
¼ teaspoon salt
2 tablespoons water
1 cup coarsely chopped pecans (optional)

Steps:

  • Grease a 9x13-inch metal baking pan; set aside.
  • In a small saucepan, stir milk, sugar, and butter together. Heat over low heat just until butter melts and sugar dissolves. Cool to about 100-105 F.
  • Pour the milk mixture into the bowl of a stand mixer.
  • Add the yeast and warm water.
  • Add 2 cups flour and salt to yeast mixture. Using a dough hook, mix on low speed for about 1 minute.
  • With the mixer still going, add remaining flour, 1/2 cup at a time. Mix about 1 ½ minutes, or until dough starts to clean the sides of the bowl.
  • Knead on low speed for about 2 more minutes, or until dough is smooth and elastic - the dough will still be slightly sticky to the touch.
  • Place dough in a greased bowl, turning it to grease the top. Cover the dough with a clean, dry dish towel.
  • Let it rise in a warm place, free from draft, for about 10 minutes.
  • While dough is rising, prepare the topping.
  • Whisk melted butter, brown sugar, granulated sugar, corn syrup, and salt together in medium bowl until smooth.
  • Add water and whisk until combined.
  • Pour mixture into prepared pan. If necessary, tilt pan to get mixture to cover pan. Sprinkle evenly with pecans, if using. Set aside.
  • Turn the dough onto a floured surface, and roll into a 12x16-inch rectangle.
  • Stir filling ingredients together, and spread over dough. Since the filling is a little crumbly, I gently press it into the dough to help it stick.
  • Roll dough up lengthwise, pinching seam to seal.
  • Cut into 12 pieces, and place over topping in prepared baking dish. I use a serrated knife to cut the dough.
  • Cover the baking dish with the dish towel, and let the dough rise for about 15 minutes.
  • Meanwhile, preheat oven to 350 F.
  • Bake at 20-25 minutes, or until the rolls are golden brown.
  • Tent with aluminum foil, and continue to bake for an additional 10-15 minutes, or until baked through.
  • Let the sticky buns cool in pan for 5 minutes.
  • Place a serving dish over the pan, and carefully invert pan. Be careful as topping will be hot.
  • Remove pan, and replace any topping that has fallen off.
  • Let buns sit 10-15 minutes before serving.

These are super easy, super quick buns. I get requests to take them everywhere we go. They are great for those last minute dinner guests, or a nice surprise for breakfast. They freeze well, and make excellent toast. This recipe is a combo of my grandmothers recipe and a few others, all tweaked to make a fast, easy, soft, fluffy bun.

4 1/2 cups flour
4 1/2 teaspoons dry yeast (2 8g packages)
1 cup milk
3/4 cup water

Steps:

  • Mix 2 C flour& yeast in a large bowl.
  • In a separate bowl, heat milk, water, oil, sugar& salt to lukewarm in microwave.
  • Add all at once to flour mixture and beat till smooth. (Approx 2 mins in a Kitchenaid stand mixer).
  • Mix in enough flour to make a soft dough (2 - 2 1/2 Cups).
  • Mix well until dough is soft and slightly sticky, then turn out onto floured surface and let rest under a large greased bowl for about 15 minutes.
  • Shape dough into 12-15 small balls and place on greased baking sheet to rise until doubled in size. (approx 45 Mins).

12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
1/3 cup light brown sugar, lightly packed
1/2 cup pecans, chopped in very large pieces
1 package (17.3-ounces/ 2-sheets) frozen puff pastry, defrosted
2 tablespoons unsalted butter, melted and cooled
2/3 cup light brown sugar, lightly packed
3 teaspoons ground cinnamon
1 cup raisins

Steps:

  • Preheat the oven to 400 degrees F. Place a 12-cup standard muffin tin on a sheet pan lined with parchment paper.
  • In the bowl of an electric mixer fitted with the paddle attachment, combine the 12 tablespoons butter and 1/3 cup brown sugar. Place 1 rounded tablespoon of the mixture in each of the 12 muffin cups. Distribute the pecans evenly among the 12 muffin cups on top of the butter and sugar mixture.
  • Lightly flour a wooden board or stone surface. Unfold 1 sheet of puff pastry with the folds going left to right. Brush the whole sheet with the melted butter. Leaving a 1-inch border on the puff pastry, sprinkle each sheet with 1/3 cup of the brown sugar, 1 1/2 teaspoons of the cinnamon, and 1/2 cup of the raisins. Starting with the end nearest you, roll the pastry up snugly like a jelly roll around the filling, finishing the roll with the seam side down. Trim the ends of the roll about 1/2-inch and discard. Slice the roll in 6 equal pieces, each about 1 1/2 inches wide. Place each piece, spiral side up, in 6 of the muffin cups. Repeat with the second sheet of puff pastry to make 12 sticky buns.
  • Bake for 30 minutes, until the sticky buns are golden to dark brown on top and firm to the touch. Be careful - they're hot! Allow to cool for 5 minutes only, invert the buns onto the parchment paper (ease the filling and pecans out onto the buns with a spoon) and cool completely.

QUICK-RISE BUNS



Quick-Rise Buns image

These are a great, all-purpose bun. They rise quickly, so you can make a batch first thing in the morning and have them ready for lunch. They make great dinner buns, or hamburger buns, and even lend themselves well to cinnamon buns.

Yield 36 buns

Number Of Ingredients 9

1 cup lukewarm water
1 Tbsp sugar
1 Tbsp plus 2 tsp yeast
2 cups lukewarm water
2 eggs
6 Tbsp sugar (1/4 cup plus 2 Tbsp)
6 Tbsp oil
2 tsp salt
7 to 8 cups bread flour, plus more for kneading

Steps:

  • Stir 1 Tbsp sugar into 1 cup warm water. Sprinkle yeast over top. Let stand 10 minutes. Stir.
  • Meanwhile, in large mixer bowl, beat the 2 eggs slightly along with the remaining 2 cups water. Stir in the 6 Tbsp sugar, 2 tsp salt, and 6 Tbsp oil. Then stir in the yeast mixture. Beat in 4 cups of flour with your mixer on medium speed. Beat 3 minutes to develop the gluten.
  • Work in the rest of the flour gradually, either with your dough hook attachment or by hand with a wooden spoon. If using mixer with a dough hook, let it go about 3 - 4 minutes until it pulls away from the side of the bowl. If mixing by hand, once the dough is too stiff to mix with a spoon, turn out onto a counter and work the flour in by hand.
  • Either way, at the end of mixing, the dough still benefits from kneading it a bit by hand. Turn out onto your counter or table and knead the dough by hand, using flour as necessary to keep it from sticking to the counter. Knead till dough feels smooth and elastic to the touch. This will take 3 to 4 minutes if you have already used a dough hook, or 8 to 10 minutes if you are doing it entirely by hand.
  • Turn dough into large, well greased bowl, grease the top of the dough (spray with Pam), cover with wax paper, then a damp cloth, and set in a warm place to rise until almost doubled in bulk, about 3/4 to 1 hour. Punch down. Divide dough into 3 large pieces, then cut each large piece into 12 smaller pieces. Form into 36 buns.
  • Place buns on cookie sheet for hamburger-size buns, or in 9 x 13 cake pan for dinner buns. Grease top of buns (easiest way it to spray them with Pam), and cover with wax paper to rise.
  • Let buns rise until doubled in bulk.
  • Bake at 350 degree F for about 20 minutes for hamburger buns, or 25 minutes for pan buns, or until they sound hollow when tapped on the top. Brush tops again with melted butter or spray with cooking oil spray to make a nice shiny and tender top crust.
  • Cook's Notes
  • Hint: Use 1 cup of whole wheat flour and the rest white. No one will know, and the taste is so much better! Another option is to make 24 regular buns and a dozen cinnamon buns.
  • - roll one third of the dough out on a floured surface to about a 10 x12 inch rectangle.
  • - Spread with 1/4 cup plus 2 Tbsp butter, then sprinkle on evenly: 3/4 cup brown sugar, 2 tsp cinnamon and 3/4 cup raisins (raisins are optional).
  • - Roll up from long edge and cut into 12 even slices
  • - prepare 9 x 13 inch pan by melting 1/4 cup plus 2 Tbsp butter and 2 Tbsp corn syrup, and pour into bottom of the pan. Sprinkle over evenly: 3/4 cup brown sugar, 1 Tbsp cinnamon and 3/4 cup pecan halves.
  • - place cinnamon roll slices in the prepared pan, cover with wax paper, and let sit in warm place until doubled in size.
  • Bake at 350 degrees F for 25 to 30 minutes. Remove and let sit in pan for 5 minutes. Then turn over onto foil and let the pan sit over the cinnamon buns for 10 minutes, to allow all the sugar syrup to run onto the buns. Serve immediately.

QUICK STICKY BUNS



Quick Sticky Buns image

These are great when you want homemade goodies but don't have the time to make them. I sometimes use flaked coconut instead of the pecans for a different taste!

1 (10 ounce) can refrigerated biscuit dough
2 tablespoons margarine, melted
½ cup packed light brown sugar
1 teaspoon ground cinnamon
2 tablespoons dark corn syrup
¼ cup chopped pecans

Steps:

  • Cut each biscuit in half and form each piece into a ball.
  • Combine sugar, cinnamon and pecans in small bowl. Dip each biscuit half into margarine, then into sugar mixture. Place in greased 8-inch cake pan. Mix remaining margarine and sugar and spoon over biscuits balls. Drizzle corn syrup over all .
  • Bake at 450 degrees F (230 degrees C) for 10-12 minutes. Serve warm.

2 cups whole milk
1/2 cup vegetable oil
1/2 cup granulated sugar
1 package active dry yeast (2 1/4 teaspoons)
4 1/2 cups all-purpose flour, plus more for dusting
1 1/2 teaspoons kosher salt
Heaping 1/2 teaspoon baking powder
Scant 1/2 teaspoon baking soda
1 stick (1/2 cup) salted butter, melted, plus more as needed
1 cup granulated sugar, plus more as needed
2 tablespoons ground cinnamon
1 1/2 cups packed light brown sugar
2 sticks (1 cup) salted butter, softened, plus more for the skillet
2 tablespoons honey
Pinch of kosher salt
1 tablespoon whiskey, such as Jack Daniels
1 teaspoon vanilla extract
2 cups pecan pieces

Steps:

  • For the dough: Heat the milk, oil and granulated sugar in a medium saucepan over medium heat to just below a boil. Set aside and let cool to warm.
  • Sprinkle the yeast on top and let it sit on the milk mixture for 1 minute. Add 4 cups of the flour. Stir until just combined, then cover with a clean kitchen towel and set aside in a relatively warm place for 1 hour.
  • After 1 hour, remove the towel and add the salt, baking powder, baking soda and remaining 1/2 cup flour. Stir thoroughly to combine. Use the dough right away or place in a mixing bowl and refrigerate for up to 3 days, punching down the dough if it rises to the top of the bowl. (The dough is easier to work with if it's been chilled for at least an hour or so beforehand.)
  • To assemble the rolls: On a floured baking surface, roll the dough into a large rectangle, about 30 inches by 10 inches. The dough should be very thin.
  • Preheat the oven to 325 degrees F.
  • For the filling: Pour the melted butter over the surface of the dough. Use your fingers to spread the butter evenly. Sprinkle over the granulated sugar and cinnamon. Don't be afraid to drizzle on more butter or more sugar! Gooey is the goal.
  • Now, beginning at the end farthest from you, roll the rectangle tightly towards you. Use both hands and work slowly, being careful to keep the roll tight. Don't worry if the filling oozes as you work; that just means the rolls are going to be divine. When you reach the end, pinch the seam together and flip the roll so that the seam is face down. You'll wind up with one long buttery, cinnamony, sugary, gooey log. Slip a cutting board underneath the log and, with a sharp knife, make 16 equal slices.
  • For the smear and base: Cream together the brown sugar, butter, honey and salt until lightened, then slowly add the whiskey and vanilla while mixing.
  • Butter a 12-inch cast-iron skillet, layer the bottom with the pecan pieces and then scoop 5 large scoops of the smear on top. Heat in the oven until the smear is slightly foamy and bubbling, 10 to 15 minutes.
  • Remove the skillet from the oven and place the sliced rolls on top of the melted smear (it's fine to put them on the hot smear). Allow the rolls to rise for 20 minutes.
  • Return the skillet to the oven and bake until the rolls are golden brown and the smear is brown and sticky, 20 to 30 minutes. Take another 12-inch skillet and place it on top of the hot skillet. Flip over quickly and carefully. All of the caramelly, boozy goodness will be on top.

Steps:

  • Preheat oven to 375°F. Butter 9-inch-diameter cake pan. Melt 2 1/2 tablespoons butter in small saucepan over low heat. Whisk in 1/4 cup sugar, corn syrup and lemon juice. Increase heat to medium and whisk until sugar melts and syrup boils. Pour syrup evenly over bottom of prepared pan. Sprinkle with walnuts.
  • Unroll dough on floured surface; press perforations together. Roll out dough to 8 x 12-inch rectangle. Sprinkle with 1/4 cup sugar and cinnamon. Starting at 1 short side, roll up dough jelly roll style. Cut crosswise into eight 1-inch-thick rounds. Arrange rounds in syrup in pan.
  • Bake buns until golden brown, about 20 minutes. Cool in pan 1 minute. Place plate over pan. Invert buns onto plate. Remove pan. Spoon any syrup in pan onto buns and serve.
