Moroccan-Style Lamb Shanks with Apricots image

This is a gorgeous, easy and pretty quick version of lamb tagine I made on Valentine's Day. For an authentic feel we ate it with our fingers--it was a complete hit!

2 tablespoons extra-virgin olive oil
1 teaspoon cumin seeds
1 onion, thinly sliced
4 cloves garlic, crushed
1 sweet potato, peeled and diced
2 (1 pound) lamb shanks
1 (14.4 ounce) can chopped canned tomatoes
1 ¼ cups chopped dried apricots
1 ½ teaspoons harissa
salt and pepper to taste
2 tablespoons slivered almonds
1 cup quick-cooking couscous
2 tablespoons extra-virgin olive oil

Steps:

  • Heat 2 tablespoons olive oil in a heavy pot over medium heat. Add cumin seeds and cook until they release their aroma for about 1 minute. Stir in the onions, garlic, and sweet potatoes. Reduce heat to medium-low; cover and cook for 5 minutes, stirring occasionally so potatoes don't stick.
  • Put the lamb shanks in the pot and brown on all sides, about 8 minutes. Add tomatoes, apricots, and harissa. Season with salt and pepper. If mixture seems a bit dry, add a splash of water. Bring to a boil, then lower heat and cover. Simmer until meat is tender and falling off the bone, one hour or more, depending on the size of the shanks. Stir occasionally.
  • Heat a small skillet over low heat and add the slivered almonds. Stir and cook until almonds are lightly browned, about 5 minutes. Remove from heat and set aside.
  • Place couscous in a large bowl and slowly pour in lukewarm water until just covered. Let sit until water is absorbed, about 10 minutes. Toss couscous with 2 tablespoons olive oil and toasted almonds. Transfer to a serving dish. Spoon the lamb over the couscous and serve.

Who says a Moroccan lamb dish needs hours simmering on the hob? This easy spiced lamb with apricots and almonds is on the table in only 25 minutes.

250g lamb neck fillets
1 small onion, chopped
1 tsp ground allspice
2 tbsp vegetable oil
200g can chopped tomatoes
150ml hot chicken stock
75g dried ready-to-eat apricots
2 tbsp toasted flaked almonds

Steps:

  • Cut lamb into chunks and put into a bowl. Add onion, ground allspice and vegetable oil. Season and mix together.
  • Heat a large frying pan. When hot, add the lamb mixture and cook for 5 minutes to brown the meat and soften the onion. Stir in chopped tomatoes, hot chicken stock and dried apricots. Bring to the boil, then simmer for 10 minutes, until the lamb is cooked through and the sauce has thickened.
  • Season to taste, divide between 2 plates and scatter each with some toasted flaked almonds.

500g Cubed Lamb Steak
400ml Passatta Sauce
8 Small Dried Apricots
400g Chickpeas
Big Bunch of Coriander
1 Red Onion Diced
2 Bell Peppers (any colour) Diced
4 Cloves of Garlic
1 Tsp Tumeric
1 Tsp Paprika
1 Tsp Dried Coriander
1 Tsp Ginger
1 Tsp Cumin
1 Tsp Cinnamon
2/3 Finger Chillies

Steps:

  • Start by searing the lamb in a pan in 1 Tsp of olive oil or coconut oil and season. Whilst the meat is browning, in another pan add the entire contents of the passata and season, along with all the spices (turmeric, cumin, coriander, paprika, cinnamon and ginger) slice the apricots into halves and throw those into the pan as well and turn the heat to high.
  • Once the lamb has browned, spoon it into the passata bring to the boil, place the lid on the pan and then simmer. Tip the diced onion and bell peppers in to the frying pan and cook for 8/10 mintues until softened, then add the sliced garlic and chillies and cook for another 2/3 minutes and add to the passata. Make sure you give the pan a good stir then chop up roughly a large bunch of coriander throw it in and stir
  • Cook for about 40/50 minutes or until lamb is soft and tender then add in the drained chickpeas and cook for another 10 minutes. Serve with cous cous and a flat bread.

250g stewing lamb pieces
1 onion , thinly sliced
1 garlic clove , chopped
1 tbsp chopped ginger
2 tsp ras-el-hanout , Berber or other Middle Eastern spice mix
1 tbsp tomato purée
5 soft dried apricots , halved
300ml vegetable or chicken stock
cooked couscous , mint or coriander leaves, and lemon wedges, to serve

Steps:

  • In a medium-sized pan, heat 1 tbsp of the oil. Season the meat and fry briefly until browned. Remove from the pan and add the remaining oil. Add the onion, garlic and ginger, and fry with a little seasoning. Cook for 5 mins until soft, then add the spice mix, tomato purée, apricots and stock, and return the lamb to the pan. Simmer gently for 25 mins. Serve with warm couscous, mint or coriander leaves, and lemon wedges.

1 large onion, chopped
2 tablespoons olive oil
1 boneless lamb shoulder roast (2-1/2 to 3 pounds), cubed
1 teaspoon each ground cumin, cinnamon and coriander

1 tablespoon ground almonds

2 pounds lean lamb, cubed
2 medium onions, chopped
2 teaspoons lemon juice, or to taste
1 teaspoon salt, or to taste
1/4 teaspoon pepper
2 cups boiling lamb stock or water
1 teaspoon cinnamon
1/4 cup seedless raisins
16 dried apricot halves

Steps:

  • Melt the butter in a deep pot, add the lamb and brown it on all sides (about 10 minutes). Add the onions and cook until transparent. Add the lemon juice, salt, pepper and boiling lamb stock, stir, cover and simmer 1 hour.
  • Add the cinnamon, raisins and apricots, cover and simmer 45 minutes, or until the meat is tender. Serve with pilaf.

3 tablespoons butter
1-1/2 cups chopped sweet onion
3/4 cup dried apricots

Make the most of late-summer apricots in our moreish spiced lamb meatball casserole, baked with juicy roast apricots and fregula or giant couscous

10 small apricots, halved and stoned
4 tbsp olive oil
1 onion, finely sliced
1 garlic clove, sliced
1 heaped tbsp ras el hanout
2 x 400g cans chopped tomatoes
1 tbsp tomato purée
1-2 tbsp rose harissa
350ml lamb or chicken stock
100g fregula or giant couscous
500g lamb mince
60g fresh breadcrumbs
½ tsp chilli flakes
½ tsp ground coriander
¼ tsp ground cinnamon
1 egg yolk
½ bunch of parsley, finely chopped

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Arrange the apricots on a baking tray cut-side down and roast for 10 mins. Remove from the oven and set aside.
  • Heat 2 tbsp oil in a large, shallow flameproof casserole over a low-medium heat. Cook the onion with a pinch of salt for 15 mins until golden brown and caramelised. Stir in the garlic and ras el hanout and cook for 1 min more. Tip in the tomatoes, tomato purée and harissa, and cook for another 5 mins. Stir in the stock and remove from the heat.
  • For the meatballs, combine the lamb mince, breadcrumbs, chilli, coriander, cinnamon, egg yolk and most of the parsley in a large bowl with a pinch of salt, squishing the mixture together using your hands for around 5 mins. Form into 10 meatballs, weighing for accuracy if you like. Heat the remaining oil in a large frying pan over a medium heat and fry the meatballs for 5 mins until evenly golden.
  • Stir the fregula and some seasoning into the casserole, then nestle in the meatballs and roasted apricots. Bring to a simmer, then bake in the oven, uncovered, for 15-20 mins or until the meatballs are cooked through. Scatter with the reserved parsley before serving.

Stir the olives, apricots and lemon slices occasionally and add a little water if the pan juices get too dry. Transfer the lamb to a cutting board, tent with foil and let stand for 45 minutes.
  • Scrape the olives, apricots and lemons into a bowl along with any pan juices. Skim off the fat. Slice the lamb and serve with the lemon, olives and apricots.
