SLOPPY JOE PASTA

- In a Dutch oven, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in the sloppy joe mix, water, tomato sauce and tomato paste; heat through. Remove from the heat; stir in pasta. , Spoon half the mixture into a greased 2-1/2-qt. baking dish. Top with cottage cheese and remaining pasta mixture. Sprinkle with cheddar cheese. , Bake, uncovered, at 350° for 30-35 minutes or until bubbly and cheese is melted.

This is a great comfort food recipe that I love to make on a cold winter day. It is also a hit at our church's potluck dinners.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir beef, onion, green bell pepper, red bell pepper, and garlic in the hot skillet until beef is browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Stir tomatoes, ketchup, brown sugar, mustard, salt, and pepper into ground beef mixture; reduce heat and simmer until heated through, about 10 minutes.
- Bring a large pot of lightly salted water to a boil. Cook corn in the boiling water until cooked through, about 5 minutes; drain.
- Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain.
- Mix corn, pasta, and Colby-Jack cheese into ground beef mixture; pour into a 9x13-inch baking dish.
- Bake in the preheated oven until heated through and cheese is melted, about 20 minutes.

- Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.

Add the garlic and ground beef, using a spatula to break it up as it cooks. Add the salt and vinegar, and scrape up any browned bits that have collected on the bottom of the pan. Add the tomato paste and stir until it’s melted into the beef.
- Add the beef stock and bring it to a boil. Add the pasta and press it into the liquid so it’s covered. Let it all simmer for about ten minutes or so until the pasta almost cooked through and most of the liquid as been absorbed.
- Add the tomato sauce, brown sugar, Worcestershire sauce, and parsley and stir. Bring it to a simmer and let it all cook together, stirring so it doesn’t stick to the bottom, until the pasta is cooked through, another five minutes or so. Serve with grated cheddar cheese.
