RED WINE REDUCTION DESSERT SAUCE
I got these recipe ingredients from Chef Bruce at the Red Rooster Cafe in New Braunfels, TX. I serve this sauce with fresh blackberries from my dad's garden. Layer in a wine glass, sweetened whipped cream, berries, sauce, then more whipped cream. Top with a berry and sprinkle with a little powdered sugar. So good! They also use this sauce on their Monte Cristo Sandwich.

QUICK RED-WINE DESSERT SAUCE
Just the thing for using up leftover red wine! Simmer with sugar and cinnamon until the liquid reduces into a fragrant, syrupy sauce, then serve with pound cake, fresh berries, and whipped cream. It's also delicious drizzled over baked apples or vanilla ice cream.

Steps:
- In a small saucepan over medium-high heat, combine wine, sugar, and cinnamon stick; cook, stirring, until sugar is dissolved. Bring to a boil; cook until mixture is syrupy and reduced to 1/4 cup, about 10 minutes. Serve immediately.
RED-WINE CARAMEL SAUCE
Steps:
- Scrape seeds from vanilla bean into a small heavy saucepan, then add pod and wine. Boil over moderate heat until wine is reduced to about 1/2 cup, about 10 minutes. Discard pod.
- While wine is reducing, bring sugar and water to a boil in a 2-quart heavy saucepan over moderate heat, stirring until sugar is dissolved. Boil, without stirring, washing down any sugar crystals on side of pan with a pastry brush dipped in cold water, until syrup turns pale golden. Continue to cook caramel, swirling pan, until deep golden.
- Remove from heat, then carefully pour wine down side of pan (caramel will vigorously steam and harden). Simmer, stirring, until caramel is dissolved and sauce is thickened, about 5 minutes. Stir in butter and serve warm.
CHERRY RED WINE SAUCE
This is a simple and richly complex-tasting sauce that makes the perfect compliment to a dark chocolate cake or a topper for vanilla ice cream. Mmmm!
