- Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer until tender, 20-25 minutes., In a large bowl, combine the remaining ingredients (dressing will be thick). Drain potatoes and cut into cubes; add to the dressing and gently toss to coat. Cover and refrigerate for 2 hours or until chilled. Refrigerate leftovers.

- 1. wash and cut up potatoes into chunks
- 2. put the cut up potatoes into a gallon ziplock bag. Pour the Veggie oil over the potatoes and shake well.
- 3. Next pour the ranch packets over the potatoes and shake well in the bag.
- 4. Grease a 9x13 casserole dish and pour the potatoes into the dish and spread it out
- 5. Cook uncovered at 450 degrees for 30-35 minutes.

- Peel and cut the potatoes into 2-inch chunks. Put them into an Instant Pot® along with 3/4 cup water and 1 teaspoon salt.
- Lock the lid and set the lever to seal. Press "manual" and set for 10 minutes. When done, manually release the steam.
- Remove the lid, leaving the pot in "keep warm" mode. Start mashing the potatoes. Add the butter, cream cheese, milk and ranch powder. Mash again until the potatoes are smooth.
