Steps:
- In large bowl, mix first 4 ingredients.
- Mix water and oil; add to flour mixture.
- Turn onto floured surface; knead for 2 minutes.
- Place in a greased bowl; turning to grease top.
- Cover and let rise for 20 minutes.
- Punch down; place on 12in, greased pizza pan.
- Pat into a circle.
- Topping: Mix first 5 ingredients and spread over crust.
- Put a few pepperoni slices on top of sauce.
- Sprinkle with 1/2 the mozzeralla; 1/2 the monterey jack, and 1/2 the parmesan.
- Put the rest of the pepperoni on.
- Repeat the cheese layer.
- Bake at 400* for 20 minutes or until light brown.

- Make the pepperoni pita pizza: Cut the pita in half crosswise to form 2 pockets and fill each pocket with 2 tablespoons of pizza sauce, ¼ cup (25 G) shredded mozzarella, and 6 pepperoni. Place on a prepared baking sheet.
- Make the Hawaiian pita pizza: Cut the pita in half crosswise to form 2 pockets and fill each pocket with 2 tablespoons of pizza sauce, ¼ cup (25 G) shredded mozzarella, 2 tablespoons pineapple, and 2 tablespoons Canadian bacon. Place on a prepared baking sheet.
- Make the veggie supreme pita pizza: Cut the pita in half crosswise to form 2 pockets and fill each pocket with 2 tablespoons of pizza sauce, ¼ cup (25 G) shredded mozzarella, 2 tablespoons mushrooms, 2 tablespoons green pepper, and 1 tablespoon olives. Place on a prepared baking sheet.

- If making the pizza in the oven, preheat oven by turning on the broiler and adjust the rack to the middle. If in the toaster oven turn on the toaster to "toast".
- Place two pitas on a metal pan. Spread half the marinara mixture ( about 2 tablespoons) on one pita and the rest on the other. Sprinkle the cheese evenly over both pitas leaving about 1/2 inch for the crust.
- Place pitas in the oven for 2-3 minutes. Check on them every minute to make sure they don't burn.
- Remove from oven and enjoy!

- To prepare this pitta bread recipe add in a mixer's bowl the yeast, sugar and water and blend to dissolve the yeast. Set aside for 5-10 minutes until yeast froths.
- Add the flour and salt and mix using the dough hook for 6-8 minutes. Alternatively you could mix the ingredients by hand.
- Depending on the flour used, the dough may need a little bit less or more flour than this pita bread recipe calls for. After mixing for a while the dough for your pita bread should become an elastic ball and a bit sticky.
- When ready, coat the dough with olive oil, place in a bowl and cover with plastic wrap and a kitchen towel. Let it sit in a warm place, for at least 20 minutes or until it doubles its size. This is an important step for this pita bread recipe. The first proof makes the pita bread fluffy and soft. If it is winter, turn the oven on for a minute or two, until it's a little warm, switch it off and then let the dough rise in it.
- Take the dough out of the bowl and gently deflate with your hands. Use just a tiny bit of flour to help you if it is too sticky. Split into 6 evenly sized balls around145g/ 5 oz. each.
- Let the pita bread balls rest for 15 minutes before shaping. This is the second proof and will allow your dough to relax and become easier to shape.
- To form the pita bread, you can either use a rolling pin, or stretch it with your hands, about 20cm in diameter. A rolling pin will make a crunchier pita, while hand stretching a softer, fluffier one. If the dough springs back, set it aside for a few minutes to rest and then continue rolling again.
- For a more traditional look on your pita bread, press the dough firmly with your fingertips forming dimples or use a fork to make some holes on top.

PARMA HAM PITTA PIZZA
My recipe for Parma Ham Pitta Pizza is a great idea for a super simple, quick lunch or supper dish. It uses lots of "store cupboard", pantry and fridge staples, such as Prosciutto di Parma, cherry tomatoes, blue cheese, olives and artichokes in oil. Most people will have a couple of packets of pitta breads tucked away in the freezer or in the bread bin, as well as Parma ham, fresh tomatoes, cheese and tinned antipasti ingredients. We all love my homemade pizza, but when time is tight, this is a great recipe to make, as it's on the table in well under half an hour. Use any blue cheese you have to hand, but Italian blue cheese is best I think. I have suggested using black olives, but again, green olives will work well too. The only "must have" ingredient is Prosciutto di Parma, with its unique taste and traditional production, the taste really cannot be replicated.

- Pre-heat oven to 200C/400F/Gas Mark 6. Line a baking tray with baking paper.
- Spread the tomato puree over the pitta breads, then add the oregano leaves or dried oregano.
- Arrange the olives and sliced tomatoes over the tomato paste.

- Scatter the blue cheese over the toppings.
