Quick Parmesan Toasts image

This is the easiest, tastiest and quickest appetizer you'll ever make and everybody loves it. I've been making these for at 30 years and they're always a hit at any event I take them too. Did I say FAST, too? Great for a Holiday weekend.

1 c mayonnaise
1 c parmesan cheese, grated
2 scallions, green tops only
1 baguette

Steps:

  • 1. Slice the baguette into thin circles. Spread melted butter (or olive oil) on one side of each slice and toast in a 350 degree oven until golden brown.
  • 2. While the bread is toasting. Combine the Parmesan, mayonnaise and scallion tops.
  • 3. Spread mayo mixture on the toast rounds.
  • 4. Pop back into the oven for 10-15 minutes until brown and bubbly.
  • 5. Enjoy!

8 3/4-inch-thick slices Italian bread
1 medium garlic clove, halved
Extra-virgin olive oil
1/2 cup finely grated Parmesan cheese
Fleur de sel or course kosher salt

Steps:

  • Preheat oven to 400°F. Arrange bread on baking sheet. Rub bread with garlic; drizzle with oil. Sprinkle cheese over. Sprinkle with fleur de sel. Bake until edges are lightly browned, about 12 minutes.

¼ cup milk
ground black pepper to taste
1 tablespoon butter, plus more as needed
4 slices whole wheat bread

Steps:

  • Whisk eggs, Parmesan cheese, milk, and black pepper in a shallow bowl until light and fluffy, about 1 minute.
  • Melt butter in a large skillet over medium heat.
  • Dip both sides of each slice of bread in the egg mixture and place in the skillet. Cook until golden brown, 2 to 3 minutes per side. Transfer to a warmed plate and dot with butter to serve.

1 thin, crusty baguette
2 tablespoons unsalted butter (optional)
1 clove garlic, peeled
1 cup coarsely grated Parmesan

Steps:

  • Heat oven to 400 degrees. Cut baguette at a sharp angle into 1 1/2-inch slices. Spread both sides with butter, if desired, and place on a baking sheet.
  • Toast in oven until golden brown, 3 to 4 minutes on each side.
  • Rub garlic clove on one side of each toast and top with a sprinkling of cheese. Return to oven and toast until cheese is crisp and golden brown, 8 to 10 minutes. Turn heat down to 350 degrees if toast begins to brown too fast. Serve warm or at room temperature.

EASY SPICY PARMESAN TOASTS



Easy Spicy Parmesan Toasts image

These are a favorite in my house, they are incredibly easy to make and so good!. A good olive oil and Parmesan cheese is a must with this. Purchase the long narrow French baguette for this and make certain that it is a day old, it makes slicing easier. I have even made these using melted butter in place of olive oil, and added in some garlic powder with the cayenne/cheese mixture. If you like super spicy just increase the cayenne slightly. These make a great late-nite or weekend snack! Yield is only estimated depending on the size of the baguette.

1 French baguette (use a day old bread)
1/3 cup olive oil (you might need a bit more)
1/2 teaspoon salt (or to taste)
2 cups grated parmesan cheese
1/4 teaspoon cayenne pepper

Steps:

  • Set oven to 375 degrees (oven rack to second-lowest position).
  • Prepare a one or two large baking sheets.
  • Slice the baguette into 1/4-inch slices and arrange in a single layer on baking sheet/s.
  • brush one side with olive oil and sprinkle with salt.
  • Bake for 8-10 minutes.
  • Toss the cheese with the cayenne pepper.
  • Remove the toasts from oven and sprinkle with the cheese/cayenne mixture.
  • Place back into the oven and bake for 6-8 minutes more, until the cheese melts and the toasts are golden.
  • Cool completely.

I love making this toast to have with soup or 1 pot meals! It's the only recipe I actually use that packaged dried parmesan instead of the fresh stuff. You don't get good results with fresh parmesan in this recipe.
