What's better than a nutritious lunch that's ready in under 10 minutes? Nothing! This Mediterranean Chickpea Tuna Salad is filled with vegetables like tomatoes, cucumber and onion and drizzled with a simple lemon dressing, making it an easy, stress-free lunch recipe.

15 oz. chickpeas (drained and rinsed (1 can))
5 oz. albacore or skipjack tuna (liquid drained (1 can))
1 cup grape tomatoes (sliced)
1/3 cup cucumber (sliced)
2 tbsp red onion (sliced or diced)
2 tbsp feta cheese
1 tsp fresh parsley (chopped)
3 tbsp lemon juice (or more to taste)
2 tbsp olive oil
salt and pepper to taste

Steps:

  • Place all ingredients into a bowl and toss to combine. Adjust lemon juice, salt and pepper as needed.
  • Enjoy!

One morning a few years back, I suddenly remembered I needed to bring a salad for that day's Bible study luncheon. I headed to the pantry, pulled together ingredients and created this recipe.

Number Of Ingredients 17

4-1/2 cups cooked elbow macaroni
1 can (15 to 16 ounces) kidney beans, rinsed and drained
1 can (15-1/4 ounces) whole kernel corn, drained
2 cups cubed cooked turkey or chicken
1 small cucumber, seeded and chopped
2 celery ribs, thinly sliced
1 cup shredded carrots
1/2 cup chopped green pepper
1/2 cup chopped onion
1/2 cup frozen peas, thawed
6 hard-boiled large eggs, chopped
1 cup mayonnaise
1/4 cup milk
1/2 teaspoon salt
1/4 to 1/2 teaspoon poultry seasoning
1/4 to 1/2 teaspoon ground cumin
1/4 teaspoon pepper

Steps:

  • In a large bowl, combine the first 11 ingredients. Combine mayonnaise, milk and seasonings in a small bowl. Pour over salad and toss to coat. Serve immediately or refrigerate until ready to serve.

Spinach or mixed greens
1-canned salmon (deboned), tuna or chicken well drained and broken into large chunks.
1-can pitted black olives drained, diced or sliced
1-can DelMonte salt-free diced or petite tomatoes drained or vine-ripened
1-medium or large red onion sliced and seperated into rings
Light Oli & Vinegar salad dressing
croutons
Note: Fresh, baked or grilled is always preferable to canned. When one lives far from a large town it is not always easy or possible to find fresh ingredients. Thus the name Pantry Salad.

Steps:

  • In well chilled bowl assemble in order given. Toss well Place in chilled serving bowls. Top with croutons. Pass dressing. Italian Ice or sherbert dessert
