This recipe makes the best naan I have tasted outside of an Indian restaurant. I can't make enough of it for my family. I serve it with shish kabobs, but I think they would eat it plain.

1 (.25 ounce) package active dry yeast
1 cup warm water
¼ cup white sugar
3 tablespoons milk
1 egg, beaten
2 teaspoons salt
4 ½ cups bread flour
2 teaspoons minced garlic
¼ cup butter, melted

Steps:

  • In a large bowl, dissolve yeast in warm water. Let stand about 10 minutes, until frothy. Stir in sugar, milk, egg, salt, and enough flour to make a soft dough. Knead for 6 to 8 minutes on a lightly floured surface, or until smooth. Place dough in a well oiled bowl, cover with a damp cloth, and set aside to rise. Let it rise 1 hour, until the dough has doubled in volume.
  • Punch down dough, and knead in garlic. Pinch off small handfuls of dough about the size of a golf ball. Roll into balls, and place on a tray. Cover with a towel, and allow to rise until doubled in size, about 30 minutes.
  • During the second rising, preheat grill to high heat.
  • At grill side, roll one ball of dough out into a thin circle. Lightly oil grill. Place dough on grill, and cook for 2 to 3 minutes, or until puffy and lightly browned. Brush uncooked side with butter, and turn over. Brush cooked side with butter, and cook until browned, another 2 to 4 minutes. Remove from grill, and continue the process until all the naan has been prepared.

1 ½ cups (200g) all purpose flour (plain flour)
1 cup (250g) plain yogurt ((or dairy free vegan yogurt))
2 teaspoons baking powder
¼ teaspoon salt

Steps:

  • Mix all ingredients together in a large bowl. You'll probably need to use your hands to bring it all together. Knead it for a minute or so in the bowl until it comes together in a fairly sticky ball. If necessary, add a little more flour to make it manageable.
  • Divide it into six equal pieces. Using a rolling pin dusted with flour, roll each one out onto a floured surface to about 6" diameter.
  • Heat a frying pan (without oil) until hot. Cook each flatbread for a few minutes on each side until lightly golden spots appear and it puffs up.
  • Best eaten on the same day. If making ahead, warm them up in the oven before serving.

Steps:

  • Combine flour, baking soda, baking powder, cumin seeds, and sugar together in a large bowl.
  • Combine milk and 1 tablespoon oil in a small saucepan; heat over medium heat until warm, 3 to 5 minutes. Stir into flour mixture until small clumps form. Knead dough, adding more flour by the tablespoon if needed, until it is soft and smooth. Let dough rest, about 3 minutes.

My usual naan recipe calls for milk and an egg, but since I had neither in the house tonight, I improvised. This is a super simple 5-ingredient naan bread and it came out great!

1 1/2 cups warm water
1 tablespoon sugar
2 teaspoons active dry yeast
1 teaspoon salt
3 cups flour, plus a few tbsp for workspace

Steps:

  • Combine warm water, sugar, and yeast in a bowl. Let stand for 5 minutes until foamy.
  • Add salt and flour. Mix thoroughly. Knead dough on a floured workspace about 20 times and form into a tight ball. Put dough in a well oiled bowl and cover with a damp towel.
  • Put in a warm place to rise for 30-45 minutes. Dough won't rise much, but it doesn't need to.
  • Turn dough out onto a floured workspace. Divide dough into 8 pieces and roll out with a rolling pin to about 1/8" thick.
  • Grill naan pieces on a grill or electric griddle. In a pinch, a frying pan sprayed with some nonstick cooking spray will work. Grill for 1-2 minutes on each side.
  • This recipe yields a very soft, chewey naan. Just the way I like it!

1/4 oz. (2 1/4 teaspoons) active dry yeast
2 1/4 cups all-purpose flour
1/2 cup plain yogurt
1/2 teaspoon salt
1 tablespoon oil
some oil, for greasing the skillet
3 tablespoons melted butter

Steps:

  • In a small bowl, add the sugar, warm water, and yeast together. Stir to combine well. The yeast should be activated when it becomes foamy, about 10 minutes. Transfer the flour to a flat surface and make a well in the middle. Add the yeast mixture, yoghurt, salt and oil, knead the dough until the surface becomes smooth and shiny, about 10 minutes. Cover the dough with a damp cloth and let it rise in a warm place (for example: beside the stovetop or warm oven). The dough should double in size, about 1 hour.
  • Divide the dough into 8 equal portions. Roll the dough to a 8" circle using a rolling spin.
  • Heat up a skillet (cast-iron preferred) over high heat and lightly grease the surface with some oil to avoid the dough from sticking to the skillet. Place the dough on the skillet. When it puffs up and bubbles and burnt spots appear, flip it over and cook the other side. Repeat the same until all dough are done.
  • Brush the naan with the melted butter, serve warm.

2 1/2 cups (312 grams) all purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 1/4 teaspoons kosher salt (1 1/2 teaspoons, for vegan)
2 tablespoons olive oil
3/4 cup 2% milk (water, for vegan)
3 tablespoons Greek yogurt (coconut cream, for vegan)
2 tablespoons salted butter (coconut oil, for vegan)
1 garlic clove
Chopped fresh cilantro, for serving

Steps:

  • In a large bowl, stir together the all purpose flour, baking powder, baking soda and kosher salt. Add the olive oil, milk, and Greek yogurt and stir until dough comes together. If it is dry, add a bit more milk; if it is very sticky, add a sprinkle more flour. Knead for about 30 seconds to a minute until all the flour is incorporated and a dough ball forms.
  • Transfer the dough to a lightly oiled bowl. Rest for 30 minutes at room temperature covered with a towel.
  • Once the dough has rested, flatten it into a disc. Then cut it into 6 equal pieces. On a clean, lightly floured countertop, roll each dough into a thin teardrop shape, about 1/8 inch thick.
  • Meanwhile, grate the garlic. In a small saucepan, heat the butter and the garlic over medium low heat. Cook for 1 to 2 minutes until the garlic fragrant is just starting to turn yellow (but not brown), then immediately remove from the heat.
  • Heat a cast iron skillet*, griddle or large skillet over very high heat until it's blazing hot (make sure it's as hot as possible, or the first piece won't cook correctly). Add one of the pieces of dough and cook until the top has bubbles and the bottom is golden and very dark brown in spots (about 1 minute), then turn and cook another 30 seconds to 1 minute on the other side. Brush the naan with a bit of the garlic butter on both sides. Wrap it with a clean towel. Repeat with the remaining 5 naan, adding each to the towel afterwards (this will steam them and keep them warm and supple).
  • Serve immediately with chopped cilantro. To store, place fully cooled naan in an airtight plastic bag and keep at room temperature for up to 3 days, or wrap in foil, place in a plastic bag or container and freeze for up to 2 months. Reheat refrigerated or frozen naan by wrapping in aluminum foil and baking in a 350°F oven for 15 minutes. For quick fix, you can reheat naan in the toaster (you may need to cut it in half to get it to fit).

This quick naan recipe requires no yeast - so you don't need to let it rise, and can have naan in a jiffy! Easy, and tasty!

1 3/4 cups all-purpose flour
2 tsp sugar
1 tsp salt
3/4 tsp baking powder
2 tsp oil (I used olive, you could use anything relatively mild)
1/2 cup* milk
butter + herbs for seasoning

Steps:

  • Combine all dry ingredients, and whisk together.
  • Create a well in the middle of the dry ingredients, and add the oil and milk. Mix everything together until it forms a ball. Turn out on the counter and knead until very smooth and elastic - at least 5 minutes - adding more flour as necessary.
  • Let the dough rest for 10 minutes. Divide into 8-10 equal pieces.
  • Heat a skillet over medium-high heat. Roll one piece of dough until very thin (less than 1/8″). If the skillet isn't non-stick, melt some butter before each piece. One at a time, cook the naan for about 90 seconds, or until parts are blackening, on each side. When they are done, you can brush them with butter and add seasonings (cilantro, garlic, etc.), if you want.

EASY NAAN BREAD

An easy to make take on traditional Indian Naan bread. No yeast needed and ready in less than 30 minutes.

250 grams Plain flour (All Purpose, (2 cups))
2 teaspoons granulated sugar
1/2 teaspoon salt
1/2 teaspoon Baking powder
120 millilitres milk ((1/2 cup))
2 tablespoons vegetable oil + extra for greasing
1 tablespoon butter - melted
On hand toppings of choice

Steps:

  • Sift the flour, sugar, salt and baking powder into a medium-sized bowl.
  • In a jug whisk the milk and oil together and pour it into the flour mix.
  • Slowly mix it all together then knead for 8 to 10 minutes. Adding an extra sprinkling of flour if the dough is too sticky.
  • Leave the dough to relax for 10 - 15 minutes in a warm place.
  • Divide the dough into 5 equal sized balls.
  • Preheat your grill to medium and place a lightly oiled baking sheet under it so it heats up as well.
  • Roll the dough balls into shape, traditionally they should be teardrop shape but it doesn't matter what shape they are. As long as they are thin, no more than a few millimetres thick.
  • Sprinkle over any topping you may be using and lightly press them into the dough.
  • Place them on the heated baking sheet, one at a time or all together depending on the size of your grill and bake them under the heat. Turning them over after 1 to 2 minutes, once golden, to toast the other side for a few seconds.
  • Take them out from under the grill and brush them with a little, melted butter and eat immediately.
  • These do keep for 24 hours if kept in an airtight tin. But reheat in the oven for a few minutes before consuming.

This quick and easy naan bread uses baking powder for fluffiness and requires very little kneading, making it ready in half an hour.

1 tbsp sugar
1 medium free-range egg
300ml/10fl oz full-fat milk
375g/13oz plain flour
1 tsp baking powder
1 ½ tsp salt
2 tbsp vegetable oil
3 tbsp melted ghee or butter

Steps:

  • For the naan bread, preheat the oven to 225C/200C fan/Gas 8 and place a thick baking tray into the oven to heat.
  • Whisk together the sugar, egg and milk in a mixing bowl. In a separate bowl, combine the flour, baking powder and salt.
  • Add the milk mixture to the flour mixture and knead lightly to make a soft dough - take care not to work the dough too much or it will become too stretchy.
  • When all the ingredients are mixed thoroughly, cover with a damp cloth and leave to rest, in a warm place, for 15 minutes.
  • Once rested, knead the dough with the oil until smooth.
  • Divide the dough into 8 equal-sized balls and roll out into a circle of approximately 10cm/4in diameter.
  • Spread the circles on the hot tray in the oven. Bake for 4-5 minutes - you might need to turn the bread to ensure it is all cooked. You will also most likely need to cook the bread in batches. Brush with melted ghee.

  • Melt the butter in the microwave or saucepan. Finely mince the garlic and stir it through the butter
  • Brush the naan with this butter mixture and stack on a plate
