EASY HEDGEHOG SLICE

Easy Hedgehog Slice image

This easy Hedgehog Slice is super simple and needs just SIX ingredients! Both regular and Thermomix instructions included.

Provided by Lauren

Categories     Slices

Time 2h20m

Number Of Ingredients 6

500 grams Marie Biscuits (2 packs)
250 grams butter
3 tablespoons cocoa
4 tablespoons desiccated coconut
395 grams sweetened condensed milk
180 grams milk chocolate

Steps:

  • Line a 20cm x 20cm square tin with baking paper. Make sure you leave plenty hanging over the edges to help you remove the slice once it has set.
  • Place one pack of biscuits into a food processor and blitz until finely crushed, add the second pack and blitz again until they have broken into large pieces. Alternatively you can just use a rolling pin to crush your biscuits! Place the crushed biscuits into a large bowl and set aside until needed.
  • Melt the butter using a microwave safe bowl and cooking for 30 second spurts until it has just metled.
  • Pour the melted butter into the bowl with the crushed biscuits and add the sweetened condensed milk, cocoa and coconut. Using a large metal spoon, mix until the ingredients are combined. Pour the mixture into your prepared slice tin and flatten the surface with the back of a spoon.
  • Place the milk chocolate into a microwave safe bowl and cook for 30 second spurts (mixing in between) until it's just melted. Pour over the top of the slice and place in the fridge for two hours or until set.

CHOCOLATE "HEDGEHOG" SLICE

Chocolate

A delicious and easy-to-make chocolate slice that is guaranteed to be a hit!

Steps:

  • Line a brownie tin or other rectangular tin (roughly 26 x 13 cm in dimension) with baking paper. The tray must be at least 3 cm deep.
  • In a food processor, blitz biscuits and nuts until they are rough crumbs.
  • In a saucepan over medium heat, melt the 260 g butter and add the sugar - stir over low heat until the sugar is dissolved. Add the cocoa and stir in. Remove mixture from heat and set aside to cool.
  • In a small bowl, lightly beat the eggs. Whisk them into the cooled butter mixture. The mixture must be cool at this stage to avoid curdling the eggs.
  • Pour the biscuits from the processor into a large bowl and pour in the butter and egg mixture. Mix with a wooden spoon until well combined. It may seem like you don't have enough liquid but persist and it will work.
  • Transfer the biscuit mixture to the baking tin and spread out. Press down with a spatula until you have an even slice with a smooth top. Place in the fridge for 90 minutes.
  • In a bowl over a saucepan of simmering water, melt the chocolate with the extra butter. When melted, remove from heat and allow to cool slightly before pouring over the slice.
  • With a knife, spread the chocolate over the slice. If you want to make it that little bit more fancy, you can create an easy pattern in the chocolate - using your knife and starting in one corner of the tin, make light circles through the chocolate, continuously moving in rows to create a swirled effect.
  • Place slice in the fridge overnight to set. When set, cut into diamond-shaped, bite-size pieces.

CAROB HEDGEHOG SLICE

Carob Hedgehog Slice image

fantastic! no cook food processor concoction perfect for snacking on 'round the clock. Original idea from Julie Stafford's 'Taste of Life' series, based on Pritikin principles.

Provided by florence.b

Categories     Lunch/Snacks

Time 7m

Yield 30-40 serving(s)

Number Of Ingredients 7

1 cup dates
1 cup other dried fruit, eg sultanas
1/2 cup brazil nut (original recipe uses almonds in their skins)
2 cups rolled oats (I substitute 1/3 - 1/2 cup LSA mix)
1 tablespoon vanilla essence
2 tablespoons unsweetened carob powder
2 tablespoons approx rice syrup (have also used glucose syrup and honey successfully)

Steps:

  • Combine all ingredients, except syrup, in a *sturdy* food processor (I broke my el cheapo on this recipe). Process and slowly add syrup until mixture begins to stick together. Press into slice tin lined with greaseproof paper, refrigerate until firm.

QUICK DOMINO SLICE

Quick Domino Slice image

This is a wonderful, quick and easy recipe. Make cute chocolate domino pieces! It's perfect to make with the little ones! (Even my 2 year old nephew helped me out with it!) I got this recipe off the side of a 'Cadbury Bournvilles Cocoa' box. This cocoa has a wonderful chocolate taste to it, so if you can't find this specific one, look out for another sweet cocoa. I also omit the coconut, as I'm not a fan of it, but you can add in if you like it!

Time 35m

Yield 20 serving(s)

Number Of Ingredients 9

150 g butter
2/3 cup brown sugar
1 egg
1/4 cup cadbury bournvilles cocoa
1 cup plain flour
1/2 cup coconut
1 cup icing sugar
2 tablespoons cadbury bournville cocoa
1 1/2 tablespoons boiling water

Steps:

  • Melt butter in a saucepan or in the microwave. Stir in sugar to dissolve any lumps. Add egg and beat well.
  • Sift in cocoa and flour and add coconut. Stir well.
  • Spread mixture evenly into a paper lined 18cm x 28cm slice tin. Bake at 160C for 30 minutes. Leave in pan to cool.
  • Ice with chocolate icing when cold. Mark into 4cm x 6cm oblongs. When icing is set cut along marked lines.
  • Either pipe dots of white icing, or use silver decorating balls to create domino effect.
