Entered for safe-keeping, from Kathy Smith, Salt Lake City, Utah, as submitted to BH&G. This is a classic Greek recipe made with refrigerated biscuits. Edited 12/12/08: Per various sources, add a drop or two of water where you want the dough to stick together and press the dough together. Do not add any more water than absolutely necessary.

1 egg, beaten
4 ounces feta cheese, crumbled
1 tablespoon parsley, snipped
7 1/2 ounces refrigerated buttermilk biscuits (10 biscuits)
1 egg, beaten (for glaze)
1/2 teaspoon sesame seeds, for garnish (or to taste) (optional)

Steps:

  • Preheat oven to 425 degrees Fahrenheit. Grease baking sheet or use ungreased silicone baking mat on baking sheet.
  • In a small bowl combine the first beaten egg, the feta cheese, and snipped parsley.
  • Separate biscuits.
  • On a lightly floured surface, roll each biscuit to a 4-inch circle, about 1/8-inch thick.
  • Place 1 tablespoon of the cheese mixture in the center of each dough circle. Fold two opposite edges of circles to center; fold remaining two opposite edges to center, forming a square packet. Pinch edges together to seal.
  • Place rolls seam side up on a greased baking sheet; brush with remaining beaten egg. Sprinkle with sesame seed.
  • Bake at 425 degrees Fahrenheit for 10-12 minutes. Serve hot.

1 cup reduced-fat feta cheese
1 egg yolk
1 cup anthotiro or 1 cup ricotta cheese
cinnamon
1/2 cup grams honey
9 ounces filo pastry, crust
honey, for dressing
grated nuts, for dressing
butter, for basting the filo pastry leaves

Steps:

  • Mix feta, anthotiro, honey, egg yolk and cinnamon until a thick pulp is created.
  • Cut the filo crust in stripes of 12 cm wide each.
  • Baste with melted butter and place on the bottom of each stripe a portion of the mixture.
  • Then roll each stripe like rolling a cigar. Baste the surface of each roll with melted butter and bake in preheated oven in 160 - 170 C until golden.
  • Garnish with honey and grated nuts.

Smooth, creamy, and OMG so good! This recipe comes from Brattens which used to be located in Salt Lake City, Utah, years ago. It's been gone for years, but this clam chowder lives on. What a legacy! The restaurant gave me the recipe back in the middle 60's.

1 cup onion, finely chopped
1 cup celery, finely diced
2 cups very finely diced potatoes (peeled)
2 (6 1/2 ounce) cans minced clams, and juice
2 tablespoons red wine vinegar
3/4 cup butter (not margarine)
3/4 cup flour
1 quart half-and-half (cream)
1 1/2 teaspoons salt
pepper

Steps:

  • Put the prepared vegetables in a saucepan.
  • Drain juice from clams and pour over the vegetables.
  • Add enough water to BARELY cover.
  • Simmer, covered over medium heat till barely tender.
  • (DO NOT overcook!).
  • In the meantime, melt butter in another medium saucepan.
  • Add flour.
  • Blend and cook, stirring constantly; add the cream.
  • Cook and stir with wire whip, until smooth and thick.
  • It is important that you stir constantly while cooking.
  • Add undrained vegetables, clams and vinegar.
  • Heat through, but do not boil again.

1 (7 g) packet dried yeast
1/4 cup warm water
1 cup lukewarm milk
3 1/2 cups flour
1 1/2 tablespoons sugar
1 tablespoon soft butter or 1 tablespoon shortening
2 teaspoons salt
3/4 cup tasty cheese

Steps:

  • Combine yeast with warm water.
  • Combine half the flour, milk, sugar and butter in bowl or bench mixer.
  • Pour in yeast and remaining flour.
  • Work until smooth and elastic.
  • Let rise 1 hour in oiled bowl; cover with cloth.
  • Punch down and knead until smooth.
  • Divide dough into six, shape into rounds and place on greased tray so rolls just touching.
  • Let rise about 40 minutes.
  • Brush tops and sides lightly with milk.
  • Top with tasty cheese and bake at 200C for about 35 minutes.
  • NOTE: You can used grated cheese, or thin slices.
