Steps:
- *If baking immediately, preheat oven to 425 degrees F. Lightly grease a perforated pizza pan.
- In a medium bowl, stir together 1 cup of flour, yeast, salt, sugar, oregano and garlic.
- Add water and oil and stir until combined -- it will be a very wet dough.
- Add just enough of the remaining flour so that a soft but not sticky dough forms. Add the flour gradually and knead briefly until combined so that you can feel when it is ready -- it will still be soft (not feel firm or tough) but won't stick to your hands. To knead, simply press the flour into the dough, fold the dough and press, fold and press.
- Set covered in a warm, draft-free place to rise or bake immediately for thin crust pizza.
- To bake: roll dough out to fit a 12-15" pizza pan. Place dough circle on pan and stretch with your hands to reach the edges. Top with sauce, cheese and toppings.
- Bake at 425 degrees F for 12-15 minutes until desired crispness is reached. Broil for 1-2 minutes to brown the cheese if desired.

QUICK AND EASY PIZZA DOUGH
Making pizza dough from scratch is no doubt a labor of love-but that doesn't mean it can't be fast and easy too. Just 30 minutes after forming and resting the dough, you can use it as the base for this classic pie, or get creative and make something like this tri-color salad pizza or an antipasto-inspired slice.

Steps:
- Combine water, yeast, and sugar in a bowl; let stand until foamy, about 5 minutes. Add flour, salt, and oil, and stir until a ragged dough forms. Transfer to a lightly floured work surface.
- Knead with floured hands until dough is smooth, elastic, and tacky but no longer sticky, about 5 minutes. Transfer to a bowl brushed with oil, turning dough to evenly coat. Cover with plastic wrap and let stand in a warm, draft-free place until doubled in volume, 30 to 45 minutes.
QUICK AND EASY PIZZA CRUST
This is a great recipe when you don't want to wait for the dough to rise. You just mix it and allow it to rest for 5 minutes and then it's ready to go!! It yields a soft, chewy crust. For a real treat, I recommend you use bread flour and bake it on a pizza stone, but all-purpose flour works well too. Enjoy!

Steps:
- Sift flour into a large mixing bowl, create a well in the middle.
- Add dried yeast, olive oil, sugar, salt.
- Add warm water.
- Knead for 3 min, adding a small splash of water as needed to incorporate all the flour. If too sticky, dust lightly over with flour and keep kneading. Add Italian herbs.
- Knead for another 5 - 7 min, or until dough is elastic.
- Cover with plastic wrap, layer over a warm, damp towel and set for at least 30 min in a warm area for dough to rise.
- (Tip: If you live in a cold climate, set a pot of water to boil on high heat, and set the covered bowl near it to warm it up. Don't put it too close, just enough for the bowl to heat and warm up. Too hot and the yeast will get killed!).
- When dough has risen, punch down, lightly use tips of fingers to pull out dough, dust a bit of flour over and then knead lightly until dough is round and smooth.

HERB PIZZA DOUGH
Based on a recipe from Williams-Sonoma Kitchen Library Pizza cookbook. The introduction says, "Fresh or dried herbs add an accent of flavor and color to pizza dough. Good choices include oregano, basil, marjoram, chives, thyme, rosemary, sage, mint and fennel seeds, selected to highlight the ingredients that will top the pizza or fill the calzone. Do not go overboard on your selection: It is better to choose two or three complementary herbs, or even just one herb, rather than a large mixed bouquet of clashing flavors."

Steps:
- Dissolve yeast in the water in a small bowl and let stand until slightly foamy on top, about 10 minutes.
- In a large bowl stir together the 2 ¾ cups flour, salt, and herbs. Form into a mound. Make a well in the center and add the yeast mixture to it.
- Using a fork, stir the dough in a circular motion, gradually pulling the flour into the yeast mixture until a dough forms.
- Place the dough on a lightly floured work surface using some of the ½ cup flour.
- Using the heel of your hand, knead the dough until it's smooth and elastic, about 10 minutes.
- Form the dough into a ball.
- Brush a large bowl with the oil and place the dough in it. Cover with plastic wrap and let rise at room temperature until doubled in size, about 1 to 2 hours.
- Place dough on work surface lightly dusted with the remaining flour.
- Punch the dough down.
- By hand, gently press dough out into desired shape.
- Place one hand in the center of dough, and with the other hand, pull, lift and stretch the dough, gradually working your way all around the edge, until it is the desired thickness, about ¼ inch thick for a crusty pizza base and ½ inch thick for a softer one.
- Flip the dough over from time to time as you work with it; alternately, roll the dough out with a rolling pin. The dough should be slightly thinner in the middle than the edge.
- Lift the edge of the pizza to form a slight rim.
- Transfer dough to a baker's peel or baking sheet, cover, and let rise again until almost doubled, about 20 minutes.
- Top as desired.
- Bake in a 400 degree F oven for 10 to 15 minutes, until the crust is golden, or according to your pizza recipe's instructions.

Steps:
- Preheat your oven to roughly 150 degrees. Just enough to make it warm enough to cause the dough to rise well. Then turn your oven off as soon as it heats up.
- Add all the above ingredients in the order above into your stand mixing bowl. Mix using a dough hook until it forms a ball. Place it in an oiled bowl and cover with a cloth. Place in the warm oven for about 30 minutes or until the dough doubles in size.
- When dough has doubled, preheat your oven to 400 degrees.
- Roll out the dough in desired shape. You may need to flour your surface and rolling pin to prevent sticking. I usually just sprinkle my baking sheet (or stone) with corn meal and garlic salt and just press out my dough.
- Add your favorite toppings and bake for approximately 15-18 minutes depending on the size of pizza you're making. Should just be bubbly.
- Enjoy with freshly grated parmesan cheese.
QUICK & TASTY PIZZA DOUGH
The best pizza doughs use little yeast and proof for hours, sometimes an entire day, before use... of course, most people don't have time for all this nonsense. This is a quick and dirty pizza crust recipe that has a lovely, flavorful crumb and can be tossed together in less than an hour.

Steps:
- Heat wine and water together in a small pot until they reach 110 degrees F.
- In a large bowl, dissolve yeast in water/wine mixture and allow to proof for 5 minutes (if you're using instant yeast skip the mini-proof and move immediately to step 3).
- Add 1 cup of the flour, the honey, the salt, and the olive oil to the yeast mixture and stir until a loose batter forms.
- Stir in the rest of the flour 1/2 cup at a time until dough leaves the sides of the bowl and can be formed into a slightly tacky ball (you may not need all of the flour).
- Bring the dough together and knead on a lightly floured surface until smooth, around 10 minutes.
- Place the dough in an oiled bowl, turning to coat both sides, and cover with a towel. Allow to rise in a warm place for 45 minutes, until doubled in size.
- Bake either in an oiled pan or on a pizza stone at 500 degrees F, keeping a close eye on your project. Because pizza crusts will vary in size and thickness you'll need to judge whether or not your pizza is done by sight.
