I double the recipe and put in a glass baking dish (9x13 inches). Nice for holidays . . . Keep it for a secret and family and friends will think you worked forever on it . . . (smiles). You can also use peanut butter chips and make peanut butter fudge.

- Place chocolate chips, sweetened condensed milk, and butter or margarine in large microwaveable bowl. Zap in microwave on medium until chips are melted, about 3-5 minute, stirring once or twice during cooking. Stir in nuts, if desired.
- Pour into well-greased 8x8-inch glass baking dish. Refrigerate until set.

- Microwave 12 ounces semisweet chocolate chips and a 14-ounce can sweetened condensed milk, 5 minutes. Stir vigorously, then add 1 1/2 cups chopped nuts and 1 teaspoon vanilla extract. Spread in an 8-inch-square pan lined with buttered parchment paper. Refrigerate, then cut into squares.

- Butter a square pan and line with parchment paper for easy removal of set fudge. Set aside.
- In a microwave safe 2 quart bowl, heat chocolate chips and sweetened condensed milk, on high for 1 minute. Remove from microwave. Let sit for 1 minute, then stir to combine. If needed, heat an additional 30 seconds. Stir until chips are completely melted and chocolate is smooth.
- Stir in vanilla extract. Pour fudge into prepared pan. Let fudge cool completely before cutting into 1 inch squares. (you can place in the refrigerator for 1 hour to speed up the process.)
- Store in an airtight container. Fudge does not need to be kept refrigerated.

QUICK FUDGE
My dad always made the fudge recipe off of the Hershey's cocoa can. It can take a while but it was well worth the wait. I never liked any other fudge until my aunt gave me this recipe which tastes almost identical to the Hershey's fudge. My dad is gone now, but it brings back memories when I eat this fudge.

- Stir together the first six ingredients over medium heat until thickened.
- Remove from heat.
- Quickly add the butter, peanut butter, and vanilla.
- Pour into a buttered pie pan or other similar size pan.
- This will set pretty quick because of the corn starch.

5 MINUTE FUDGE
This smooth and decadent 5 minute fudge is studded with pillowy marshmallows and crunchy bits of nuts. It is surprisingly simple to make thanks to the microwave and sweetened condensed milk - no babysitting bubblingfudge on the stove at all!

- Line a 9 x13 inch pan with parchment paper or greased aluminum foil.
- Place the chocolate chips and sweetened condensed milk in a microwave safe bowl and heat for 1 minute. Stir until mixture is smooth and all the chocolate chip bits are melted. If there are still some chips remaining after stirring, microwave in 30 second intervals - stirring in between until they are smooth. Stir in the vanilla, marshmallows, and walnuts
- Using a large spoon, spoon out the fudge in large dollops into the parchment or foil lined pan. Press down to form an even layer. Refrigerate.
- When ready to serve, pull the fudge out of the pan by lifting up on the sides ofthe parchement or foil. Slice into squares.

- In a medium saucepan over low heat, combine the chocolate chips and sweetened condensed milk. Cook, stirring, until melted and smooth, 6 to 8 minutes. Pour the mixture into the prepared baking pan and spread to even out the surface. Top with spoonfuls of the peanut butter. Using a skewer or butter knife, swirl the peanut butter into the chocolate mixture. Sprinkle over the crushed chips and pretzels.
