1 lb nuts, 4 cups
1 egg white
1 tablespoon water
1 teaspoon salt
1 teaspoon cinnamon

Steps:

  • Preheat oven to 300.
  • Beat egg white with water until frothy, but not stiff.
  • Stir in nuts until evenly covered.
  • Mix sugar, salt and cinnamon together. Add to the nuts and stir until evenly coated.
  • Spread on cookie sheet and bake 35 - 44 minutes.
  • Stir occasionally while baking.

2 cups walnut halves
¾ cup white sugar
¼ cup water

Steps:

  • Lightly grease a baking sheet. In a 1 quart glass measure, combine walnut halves, sugar, and water. Cook in microwave oven on high setting for 8 to 8 1/2 minutes, or until sugar has caramelized. Stir several times during cooking. Pour out onto prepared baking sheet, and separate into pieces. Let cool completely. store in an airtight container.

2 egg whites
½ cup sugar
⅛ teaspoon salt

Steps:

  • Preheat the oven to 300˚F (150˚C).
  • In a large bowl, combine the walnuts, egg whites, sugar, and salt and mix with a rubber spatula until the walnuts are well-coated.
  • Spread the walnut mixture evenly on a parchment paper-lined baking sheet.
  • Bake for 30-40 minutes, stirring every 10 minutes, until the walnuts are crystallized.
  • Cool completely.
  • Enjoy!

1 cup granulated sugar
1/2 cup butter
1 cup milk
3 egg yolks, beaten
1 teaspoon vanilla extract
1/2 cup coconut
1 cup chopped walnuts

Steps:

  • Blend first 5 ingredients in saucepan. Cook over medium heat until thickened, stirring constantly.
  • Add vanilla, coconut and walnuts; mix well.
  • Cool.
  • Frost cooled cake.
  • Enough frosting for a 2 layer cake.

  • Melt the butter on low heat. Add the chopped walnuts and stir until they are well coated. Then add the sugar.
  • Once the sugar is added, raise the heat to medium and stir frequently for 5 minutes with a heat-resistant spatula. For the first 2 1/2 minutes or so, the sugar will soften but remain visible in granules. After that, it begins to soften and liquify. Once it begins to soften, keep moving the walnuts around. If necessary, lower the light to keep the sugar from burning.
  • Immediately after the 5 minutes of cooking, pour the walnuts onto a parchment-lined pan or baking sheet in a single layer. They will cool down in less than 5 minutes. Try to separate the walnuts while they are still hot. As they cool, they will crisp up and if any remain attached, you can break them apart.
