2 quarts vegetable oil, for frying
1 1/2 cups all-purpose flour
1 teaspoon kosher salt, plus more for sprinkling
1/2 teaspoon freshly cracked black pepper
1/2 cup buttermilk
4 large eggs
2 cups yellow cornmeal
1 cup panko breadcrumbs
4 green tomatoes (about 1 pound), sliced 1/4 inch thick
1 cup mayonnaise
1/4 cup hot vinegar peppers, drained and finely chopped, plus 2 tablespoons hot vinegar pepper juice
2 teaspoons sweet paprika
1 teaspoon granulated sugar
1/2 teaspoon kosher salt

Steps:

  • For the fried green tomatoes: Pour the vegetable oil into a Dutch oven or heavy-bottomed pot and attach a deep-frying thermometer. Heat the oil over medium heat to 350 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
  • Set up 3 low-sided dishes to make a breading station: To the first dish, add the flour, salt and black pepper and stir to combine. In the second dish, beat the buttermilk with the eggs. In the third dish, stir together the cornmeal and panko.
  • Using one hand, dredge both sides of the tomato slices in the seasoned flour, shaking each piece to remove any excess. Next, using the other hand, dip the tomato slices into the egg mixture, allowing it to drip before moving onto the third dish. Using your first hand, coat the tomato slices in the breadcrumb mixture evenly on both sides.
  • Working in batches, carefully place the breaded tomatoes into the hot oil. Fry until golden brown and crispy, about 30 seconds per side. Transfer to the cooling rack and sprinkle each slice generously with more salt.
  • For the dipping sauce: Put the mayonnaise in a bowl, add the hot peppers and pepper juice, paprika, sugar and salt and stir to combine. Serve the fried tomatoes immediately with the dipping sauce on the side.

  • In a shallow bowl, combine the flour, sugar, salt and cayenne. In another shallow bowl, beat egg and milk. Place cornflake crumbs in a third bowl. Pat green tomato slices dry. Coat with flour mixture, dip into egg mixture, then coat with crumbs., In a large nonstick skillet, heat 4 teaspoons oil over medium heat. Steps:

  • In a large shallow bowl combine flour and spices. Whisk or stir to combine and set aside.
  • .Use a mandoline slicer or a sharp knife and cutting board to slice each tomato into 1/4 inch pieces (no larger). Lay the sliced green tomatoes out on a large cookie sheet or plate and sprinkle with salt and pepper.
  • Next dredge each slice in the flour mixture until coated shaking off the excess. Return to the cookie sheet and let sit for 5 minutes. After 5 minutes the tomatoes will begin to soak up some of the flour mixture. Once this happens dredge the tomatoes through the flour mixture a second time shaking off the excess.
  • Add vegetable oil to a large deep skillet and heat over medium heat. You want the oil about an inch deep. Once the oil is shimmering, add your green tomatoes in and fry for 3-5 minutes per side until they are brown and crispy.
  • Once golden brown remove from the oil and place on a paper towel lined plate and continue to fry in batches until all the tomatoes are fried. Serve warm with hot mayo sauce.

  • Remove the papery husks and stems from the tomatillos. Under warm running water. gently rub the tomatillos using your fingers to remove the sticky residue. Pat dry. Cut up into 1/4" slices.

  • In a non-reactive shallow dish, mix together the milk, egg, lemon juice and Tabasco sauce. Soak the tomatillo slices in the milk mixture for about 30 minutes.

  • Rinse the tomatoes with cool water and pat them dry with paper towels. Slice them into 3/8" thick slices. (That's between 1/4 and 1/2" thick). Do not pat the cut surfaces of the tomato dry with paper towels.
  • Pour enough oil into a cast iron or stainless steel skillet to reach a depth of 1/4" to 1/2" . The oil gets too hot for some nonstick skillets. Heat the oil over medium heat until very hot but not smoking. You will know it is ready when you sprinkle a few grains of cornmeal in it and it immediately sizzles. You can also use a candy thermometer if the oil is deep enough. I absolutely love using a digital, no contact infrared thermometer. You just point it at the oil and it reads the temp. Amazing. You want the temperature to be between 360 and 375 degrees. Keep a close watch on the oil while dredging the tomatoes.
  • Gather 3 small plates or shallow bowls. I like to use paper plates for the dry mixtures for easy clean up. In one plate, combine the flour and 1/2 teaspoon of the salt. In the second plate, whisk together the milk and egg with a fork. In the third plate, the cornmeal, breadcrumbs, pepper, the remaining 1/2 teaspoon salt and pepper.
  • Working with 2 or 3 tomato slices at a time, press the tomato slice into the flour, coating both sides. If the flour doesn't stick to the edge of the tomato, run the edges through the egg/milk mixture, then back in the flour. Dip the flour coated slice into the egg/milk mixture, then gently press it into the cornmeal mixture.
