2 potatoes, scrubbed
4 tablespoons vegetable oil, divided
3 eggs
salt and pepper to taste
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon turmeric powder
½ teaspoon chili powder
½ teaspoon salt

Steps:

  • Poke potatoes with a fork so that their skins are pierced. Microwave potatoes on high until cooked inside. When potatoes are fully cooked, peel potatoes and cut potatoes to 1/8 size or to your liking. Set potatoes aside.
  • Add 2 tablespoons oil to skillet and scramble 3 eggs. Add salt and pepper to taste. Keep warm until potatoes are ready.
  • In another skillet, heat 2 tablespoons oil until hot. Then add salt, cumin, coriander and turmeric powder. Put in chili powder if you want it really spicy. Add potatoes and cook until potatoes are crispy and brown. Spicy potatoes and scrambled eggs are now ready to serve!

3/4 cup chopped onions
1 small jalapeño pepper, finely chopped
6 eggs
1/4 tsp. pepper

Steps:

  • Melt butter in large nonstick skillet on medium heat. Add potatoes, onions and jalapeño peppers; cook 7 to 8 min. or until onions are tender and potatoes are golden brown, stirring frequently.
  • Beat eggs and black pepper in small bowl; add to skillet. Cook 3 min. or until eggs are set, stirring occasionally.

5 slices bacon
1 lb small red potatoes (6 or 7), cubed
6 eggs
1/3 cup milk
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter or margarine
4 medium green onions, sliced (1/4 cup)

Steps:

  • In 10-inch skillet, cook bacon over medium heat 8 to 10 minutes, turning occasionally, until crisp and brown. Remove from skillet; drain on paper towels. Crumble bacon.
  • Meanwhile, in 2-quart saucepan, heat 1 inch water to boiling. Add potatoes. Cover; heat to boiling. Reduce heat to medium-low. Cook covered 6 to 8 minutes or until potatoes are tender; drain. In medium bowl, beat eggs, milk, salt and pepper with fork or wire whisk until well mixed; set aside.
  • In 10-inch skillet, melt butter over medium-high heat. Cook potatoes in butter 3 to 5 minutes, turning potatoes occasionally, until light brown. Stir in onions. Cook 1 minute, stirring constantly.
  • Pour egg mixture into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with metal spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 3 to 4 minutes or until eggs are thickened throughout but still moist. Sprinkle with crumbled bacon.

1 small red potato, cubed and cooked
1 medium carrot, chopped and cooked
½ cup ( 125 mL ) cooked green peas or frozen peas, thawed

Steps:

  • Whisk eggs, milk, pepper and salt. Set aside.
  • Heat oil in large non-stick skillet over medium heat. Add onion; cook, stirring occasionally, until golden and soft, about 5 minutes. Stir in potato, carrot and peas. Pour egg mixture over vegetables.
  • As mixture begins to set, gently move spatula across bottom and sides of skillet to form large, soft curds. Cook until eggs are thickened and no visible liquid egg remains. Serve immediately.

  • Heat butter in a small saucepan over medium heat.

  • Whisk eggs together. Add a splash of milk.
  • Add whisked eggs to potatoes. Stir well. Eggs will cook quickly.
  • Remove from heat. Add cheese.

6 eggs or 1 1/2 cups egg substitute
1/3 cup skim milk
1/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter or 2 tablespoons canola oil
4 medium green onions, sliced (approx. 1/4 cup)
5 slices bacon, crisply cooked and crumbled

Steps:

  • Heat 1 inch of water to boiling in a 2-quart sauce pan. Add potatoes. Cover bring back to boil; reduce heat to medium low. Keep covered and cook for additional 6 to 8 minutes or until potatoes are tender; drain.
  • Beat eggs, milk, salt, and pepper until well mixed; set aside.
  • Heat oil in 10-inch skillet over medium high heat. Cook potatoes in oil 3 to 5 minutes, turning potatoes occasionally, until lightly browned. Stir in green onions. Cook 1 minute, stirring constantly.
  • Pour egg mixture over potatoes. As egg mixture begins to set at bottom and side of skillet, gently lift cooked potions with a spatula so that the uncooked portion can flow to bottom; avoid constant stirring. Cook 3 to 4 minutes or until eggs are cooked to your liking.
  • Sprinkle with bacon.

Then cut the potatoes into slices or small thin pieces, about 0.5 cm per slice is a good measure.
  • Once you have cut the potatoes, focus on the onion. Peel the onion and cut one of its halves into strips or, if you prefer, you can chop it into fine pieces with a knife so that they go unnoticed in the final dish.
  • Place a pan on the hob with a generous glug of sunflower oil for frying the potatoes well. When you see that the oil is hot, add potatoes and onions. One trick that many people use is to fry the potatoes in batches, avoiding putting them all in at once; this means that all sides are cooked. Ideally, they should be well cooked but not too brown. It will take about 10 or 12 minutes to cook over medium-high heat.
  • Once the potatoes are done, remove them from the pan with a slotted spoon and place them in a bowl layered with paper to absorb the excess oil. The next step is to put them back in a pan with a little oil, add the pepper according to taste, with the heat on medium-low temperature, break the eggs. It is not necessary that you beat them beforehand: simply break them into the pan.
