EASY BEEF OVEN ROAST

Steps:
- Season roast. Place in shallow roasting pan. Insert oven-safe meat thermometer into center of roast avoiding fat or bone.
- Oven-Sear by placing uncovered roast in preheated 450°F (230°C) oven for 10 minutes.
- **Reduce heat to 275°F (140°C); cook uncovered to desired doneness, removing from oven when 5°F (3°C) below finished temperature. (Bone-in roast can take 30 to 45 minutes less.)
- Cover with foil and let stand for at least 15 minutes before carving into thin slices.
- **Not around to turn it down? Skip Step 2 and roast at a constant 275°F (140°C). This is especially good for less tender cuts and smaller roasts (less than 1 kg/2lb). Allow approximately 15% longer cook time.
- A rack in the pan promotes even cooking.
- Roast without a lid for best browning.
- Use a thermometer to know when your Oven Roast is done the way you like it.
- Let roast stand at least 15 minutes after cooking to let juices settle.
- Carve Oven roasts in thin slices across the grain.
BEST ROAST BEEF

- Preheat oven to 450 degrees F (230 degrees C), and heat a large thick-bottomed roasting tray on the stovetop.
- Rub the beef generously with salt, then add a little olive oil to the tray and lightly color the meat for a couple of minutes on all sides.
- Lay the onions and bulbs of garlic in the tray with the beef on top of them, then cook in the pre-heated oven for a total of 1 1/2 hours.
- While the beef is roasting, parboil your potatoes in salted boiling water for around 10 minutes and drain in a colander. Toss about to chuff them up, this will make them really crispy.
- After 30 minutes, take the tray out and toss in your potatoes and rosemary. With a garlic press or grater, squeeze or grate the cloves of garlic and ginger over everything in the tray.
- Shake the tray and whack it back in the oven for the final hour. Remove the potatoes to a dish to keep warm, place the beef on a plate, covered with foil, to rest, and get your greens and Yorkshire puddings on.
- Remove most of the fat from your roasting tray and you should be left with caramelized onions and sticky beef goodness.
- Add 1 teaspoon of flour to the tray and mash everything together. Heat the tray on the stovetop and when hot, add the red wine. Simmer for 5 to 10 minutes, stirring every couple of minutes, until your gravy is really tasty and coats back of a spoon. Add any juice from the beef and feel free to add some water or stock to thin the gravy if you like.
- Pour through a coarse sieve and push it through with a spoon, pushing it through with a spoon, and serve in a warmed gravy jug. Serve with Yorkshire puddings.
- Preheat oven to 450 degrees F.
- Mix the batter ingredients together. Let rest for 10 minutes
- Preheat a Yorkshire pudding tray or muffin tin with 1/2-inch (1 centimeter) of oil in each section. After the 10 minutes divide the batter into the tray. Cook for around 15 to 20 minutes until crisp and puffy, don't open the oven door before then or they won't rise.
EASY ROAST BEEF
This is a pretty fool proof way to make a roast beef. You can add or subtract any seasoning you want. * I don't add salt before cooking as it will draw out the juices. *Always check your roast with a meat thermometer, to get a perfect roast. I use a digital read thermometer. see bottom of directions for timetable. *Remember that the roast will continue cooking after you remove from the oven and let it sit. Usually about 5-10 degrees, so keep that in mind when you go to read the temperature *Allow the roast to sit for 10-15 minutes after removing from oven, so that the juices can redistribute, before you slice it.

- Preheat Oven to 500 Degrees.
- Remove Roast beef from package and rinse under cold water. Pat dry with paper towels.
- Rub Olive Oil all over roast and put in roasting pan on a rack. (FAT SIDE UP).
- Sprinkle Garlic Powder and Black Pepper all over roast.
- Put in oven and roast at 500 degrees for 20 minutes.(do NOT open oven door during this step. You want the intense hot heat to "sear" the roast and keep in all the juices.).
- After 20 minutes, lower the oven temperature to 300 degrees and continue roasting for at that temperature for 18 minutes per pound.
- *3lb Roast- 54 minutes
- *4lb Roast-72 minutes
- I generally start checking the temperature after 45 minutes of cooking at 300 degrees. When the roast reaches the required temperature (see below) remove from oven and let sit for 10-15 minutes.
- Timetable.
- Rare- 125-130 degrees.
- Medium rare- 130-140 degrees.
- Medium- 145-150 degrees.
- Well Done-155-165 degrees.
- After allowing the roast to "rest" Slice and Serve!

QUICK & EASY ROAST BEEF
I was too lazy to go out to dinner, had a small roast defrosted, and needed to cook quickly because it was getting late. This is what I had in the house so I cooked it.

Steps:
- Preheat oven to 375 degrees.
- Heat oil in 10" or 12" cast iron pan on medium to medium high.
- sear meat on all sides.
- Add potatoes cut side down to brown at the same time meat is browning, don't crowd.
- remove meat to platter and brown remaining potatoes and kabocha (yam or squash).
- remove potatoes and kabocha to same plater.
- add onion to pan and brown until almost carmelized.
- add garlic to pan and cook 1 minute, then remove both from pan.
- Add mushrooms to pan and cook about 1 minute (add a little water, wine or broth if dry). Remove from pan.
- Turn burner off.
- In same cast iron pan, layer potatoes and kabocha into the bottom of pan, then add onions and garlic, put roast on top, then surround with mushrooms.
- Put into preheated oven and bake 40 minutes (20 minutes per pound of meat).
- Optional: Mix yogurt and horseradish well to make horsey sauce.
- Remove pan from oven, cover with foil (to keep moisture in pan), rest for 10 minutes. Carve and serve with horsey sauce.

- Preheat oven to 350 degrees then add tomatoes to the bottom of a roasting pan or large baking dish and toss with a drizzle of extra virgin olive oil, salt, and pepper. Place roasting rack inside pan, or fold three pieces of foil to mimic a rack (see picture in post.)
- Trim roast of excess fat then pierce meat all over with a small knife and insert garlic slivers. Rub outside with extra virgin olive oil, a generous amount of salt and pepper, and a teaspoon or two of dried rosemary then place on top of rack. Roast for 30-60 minutes, depending on the size of the roast and desired level of doneness. My 2-1/2lb roast took 40 minutes to reach an internal temperature of 125 degrees when tested with an instant-read thermometer, which yielded medium-rare beef after resting. Check this chart for meat temperatures and doneness.
- While beef is resting remove tomatoes to a plate then set aside. Pour juices from roasting pan into a small saucepan then add up to a can of beef broth and simmer until slightly reduced. Serve roasted tomatoes and au jus sauce with sliced beef, or pile into a bun with melted swiss or provolone cheese and caramelized onions, and dip into au jus sauce.
