Make a holiday breakfast -- or afternoon tea -- really special with these sweet bakery treats.

2 cups all-purpose flour
⅓ cup sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
8 tablespoons unsalted butter, frozen
½ cup raisins (or dried currants)
½ cup sour cream
1 large egg

Steps:

  • Adjust oven rack to lower-middle position and preheat oven to 400 degrees.
  • In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.
  • In a small bowl, whisk sour cream and egg until smooth.
  • Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
  • Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.

1 cup fresh cranberries, coarsely chopped
2 Tbsp packed light brown sugar
2 cups all-purpose flour
1/3 cup plus 1 Tbsp sugar, divided
1 Tbsp baking powder
1/2 tsp salt
8 Tbsp chilled butter, cut into pieces (one stick)
1/2 cup semi-sweet chocolate chips
1 egg, beaten
1/2 cup heavy cream (or whole milk)
1 tsp cinnamon
1 egg white

Steps:

  • Preheat oven to 400˚F.
  • In a small bowl, combine chopped cranberries and brown sugar. Set aside.
  • In a large bowl combine flour, 1/3 cup sugar, baking powder, and salt. Stir well with a whisk.
  • Using a pastry blender or two knives, cut in butter. Continue until the butter is nearly incorporated and the mixture is crumbly - the largest crumbs should be the size of small peas.
  • Add sugared cranberries and chocolate. Stir to combine.
  • In a separate bowl, whisk together egg and cream. Add egg mixture to flour mixture and stir lightly with a spatula to combine - do not over mix.
  • Place on a lightly floured work surface and divide into two equal balls. Gently flatten each to form a disc approximately 1 inch thick. Cut each disc into 8 wedges, similar to cutting a pizza.
  • Transfer wedges to two baking sheets lined with parchment paper. In a small bowl, combine cinnamon and remaining sugar. Brush tops with egg white and sprinkle with cinnamon sugar.
  • Bake 15-18 minutes, or until the tops are golden brown. Cool completely on wire racks. Store in an airtight container.

1-1/2 teaspoons baking powder
1/8 teaspoon salt

1 egg, beaten
1/4 cup dried cranberries
1/4 teaspoon coarse sugar

Steps:

  • In a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. In a small bowl, combine milk and 2 tablespoons beaten egg; add to crumb mixture just until moistened. Stir in cranberries. , Turn onto a floured surface; knead gently 6-8 times. Pat into a 6-in. circle. Cut into four wedges. Separate wedges and place on a baking sheet coated with cooking spray. Brush with remaining egg; sprinkle with coarse sugar. , Bake at 425° for 12-15 minutes or until golden brown. Serve warm.

2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup shortening
1 egg, lightly beaten
2/3 cup heavy whipping cream
1/3 cup dried cranberries or dried currants

Steps:

  • In a large bowl, combine the flour, sugar, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Combine egg and cream ; stir into crumb mixture just until blended. Stir in cranberries. Turn onto a floured surface; knead gently four times., Shape dough into a ball; place on an ungreased baking sheet. Pat until an 8-in. circle. With a sharp knife, score the dough into eight wedges (do not separate). , Bake at 425° for 15-20 minutes or until golden brown. Break into wedges. Serve warm.

3 1/4 cups /400 grams self-rising flour
2 ounces /55 grams butter (cold)
1/2 teaspoon baking powder (make sure it's level)
1/2 level teaspoon salt (make sure it's level)
1 ounces/25 grams sugar (if you want your scones a little sweeter)
2 large eggs (beaten)
1/2 cup/100 milliliters milk

Steps:

  • Gather the ingredients.
  • Heat the oven to 400 F/205 C/Gas 6. Grease and flour a heavy baking sheet.
  • Sieve the flour into a roomy mixing bowl then add the butter, baking powder, salt, and sugar, if using.
  • Quickly rub the butter into the flour until the mixture resembles fine breadcrumbs.
  • Make a well in the center and using a dinner knife, stir in the beaten eggs and enough milk to make a soft, lightly sticky but pliable dough.
  • Turn the mixture onto a floured board and knead very lightly until just smooth then lightly roll out to 3/4-inch thick.
  • Cut rounds with a 3-inch cutter. Place on the baking tray and brush with the beaten egg and milk mixture.
  • Bake near the top of the hot oven for 15 minutes or until golden brown and well risen.
  • Cool on a wire rack before eating. Serve with butter, or jam and cream.

Homemade scones, dripping with strawberry jam, are a favourite British tea-time treat. I've been making this quick and easy recipe for years, and it never fails. The scones are fluffy and delicious, and with only 4 basic store cupboard ingredients and 10 minutes of prep time, you could be enjoying your own homemade scones today!

3½ cups / 490 grams self-raising flour
⅓ cup / 75 grams butter
3½ tablespoons / 50 grams caster sugar
½ teaspoon salt
¾ cup / 180 ml milk (+ extra if needed)

Steps:

  • Pre-heat oven to 200°C / 400°F
  • Sift flour into a mixing bowl and add the salt.
  • Rub the butter into the flour until it resembles fine breadcrumbs
  • Mix in the sugar.
  • Add the milk and stir with a knife until just incorporated. Add extra milk, one tablespoon at time, if the mixture is too dry.
  • Tip out onto a lightly floured surface and knead lightly until the mixture comes together in a soft ball.
  • Press out into a flat circle or rectangle to roughly 2 cm thickness.
  • Cut circles with a fluted cookie cutter and place on a baking tray lined with baking parchment
  • Brush the top of the scones lightly with milk
  • Place the tray into the centre of a pre-heated oven and bake for 20 minutes until nicely browned.
  • Remove from the oven and allow to cool.
  • Serve spread with butter and strawberry jam. You could also top with a spoonful of whipped cream.
  • Best eaten fresh.

¼ cup butter, chilled and diced

1 grated zest of one orange
½ cup chopped walnuts
¾ cup half-and-half cream
1 egg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, stir together flour, brown sugar, baking powder, nutmeg and salt. Cut in butter until mixture resembles coarse crumbs.
  • In a separate bowl, toss cranberries with sugar; add to flour mixture along with orange peel and nuts. Mix lightly.
  • In another bowl, beat together cream and egg; slowly pour into dry ingredients, mixing with rubber scraper until dough forms. Knead dough 4 or 5 times, being careful not to over handle. Divide dough in half. Turn out onto lightly floured surface. Shape each half into a 6 inch circle. Cut each circle into 6 wedges. Place scones on lightly greased baking sheets.
  • Bake in preheated oven until golden brown, about 20 minutes.

16oz (457 Grams/ 3 cups+ 1/2 heaping cup) All-Purpose Flour
4oz (1 Stick/ 8 Tablespoons) Salted Butter
4oz (120 Grams/ 1/2 heaping cup) Granulated Sugar
1 Tablespoon Baking Powder
2 Large Eggs
8oz (1 Cup) Whole Milk
6oz Cranberries, Fresh or Frozen
2 Tablespoons Fresh Orange Zest
1 Cup Confectioner's Sugar
1 1/2 Tablespoons Fresh Orange Juice

Steps:

  • Preheat oven to 410F/210C. Line a baking tray with a liner or parchment paper.
  • In a large bowl, mix together flour, baking powder, and sugar. Then, add your cold butter. Mix until the butter is just combined-as in, the mixture still looks pretty dry but there are not large chunks of butter.
  • Set a medium bowl on a scale, add your eggs, and add enough milk to make 10oz. You may not need all 10oz of liquid for the batter. Every batter is a little different.
  • Add half of the milk and egg mixture to the dry ingredients, mixing gently. Continue to add until you have a cohesive scone batter; you want your scone batter to be pretty dry so it holds its shape. Add in the orange zest and cranberries. Then, on a large clean surface or large liner, sprinkle some flour and add your scone batter. Knead a few times, then roll out to about 1 inch thick. Use a 2.5-inch cutter to make your individual scones. Combine scraps to form another 1-inch piece to cut more 2.5 inch scones out. Be careful not to overwork the dough.
  • Place 8 scones to a baking tray, and brush the tops with an egg wash (I just use the leftover milk and egg mixture). Store the scones in the fridge until the oven is heated. Bake for 9 minutes, then rotate the pan and bake for another 8-10 minutes. You want golden brown scones, so keep an eye on the oven.
  • Let them cool on the pan for 5 minutes before transferring to a wire rack. Best served the day of; store in an air-tight container.
  • To make glaze whisk together powdered sugar and orange juice then use a spoon to drizzle on top of the cooled scones.
