Quick and Easy Cranberry Relish image

This Quick and Easy Cranberry Relish is full of fresh and zippy flavors and will easily become a favorite for your holiday meals, potlucks, parties, and more!

12 ounces fresh cranberries
1 seedless orange (unpeeled)
1 Granny Smith apple (peeled, cored)
3/4 cup sugar

Steps:

  • Rinse cranberries and pick out any soft ones and discard. Drain and place into a food processor.
  • Cut the orange into 8 sections, leaving the peel on. Cut the peeled and cored apple into 8 sections as well. Transfer to food processor.
  • Pulse fruits in the food processor until everything is minced into small pieces. Be careful not to over pulse.
  • Stir in sugar. Transfer to a serving bowl and let sit 30 minutes before serving.

1 package Cranberries (Fresh, Washed and patted dry, 12 oz.)
1 Apple (Cored, Cut into quarters, Optional)
1 Orange (Medium size, Peeled, Seeds removed, Cut into quarters)
3/4 cup Granulated sugar
1 tsp Orange zest

Steps:

  • Add cranberries, apple, orange, sugar, zest in a food processor and pulse until coarsely chopped. Do not try to make this smooth! It's not eaten that way.
  • Transfer this to serving bowl. Cover and chill for at least 1 hour so that the flavors deepen.
  • Garnish with mint leaves (optional) and enjoy.

6 oz box of strawberry jello
1 1/2 c boiling water (you can also use 1/2 cup orange juice in place of 1/2 cup of the water. add the orange juice when you add the pineapple)
16 oz can of whole cranberries, not cranberry jelly
20 oz can of crushed pineapple and juice
1 1/2 c walnut pieces, optional

Steps:

  • 1. In a bowl, dissolve the jello in the boiling water.
  • 2. Stir the cranberries in the hot jello mixture until the jelly dissolves...
  • 3. ...then the pineapple AND juice. Stir together well.
  • 4. Add the walnuts to the jello mixture, if you want them throughout the mixture. If not, see Step #6.
  • 5. Pour into a 13 x 9 baking dish.** **You can make this relish in a gelatin mold (follow mold's directions) or in individual ramekins, if you prefer.
  • 6. You can also add walnuts to just PART of the cranberry salad after you pour it, as I did in this photo. Refrigerate until firm.
