- In a large cast-iron or other ovenproof skillet, combine the first eight ingredients; let stand for 5 minutes. Cook and stir over medium heat until mixture comes to a full rolling boil, about 18 minutes. Dot with butter., In a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk until a soft dough forms., Drop topping by heaping tablespoons onto hot fruit. Bake at 375° until golden brown, 30-35 minutes. - To prepare crust, lightly spoon 1 1/2 cups flour into dry measuring cups; level with a knife. Place 1 1/2 cups flour, cornmeal, and salt in a food processor; pulse 2 to 3 times or until combined.
