CONFETTI BROWN RICE

Colorful veggies and a hint of lemon juice brighten up this savory rice dish.

1 tablespoon margarine
1/2 cup uncooked brown rice
1 1/2 cups sliced fresh mushrooms (4 ounces)
2 medium green onions, thinly sliced (2 tablespoons)
1 1/4 cups water
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups frozen broccoli, corn and red peppers, (from 1-pound bag), cooked and drained
1 tablespoon lemon juice

Steps:

  • Melt margarine in 10-inch nonstick skillet over medium heat. Cook rice, mushrooms and onions in margarine about 3 minutes, stirring occasionally, until onions are tender. Stir in water, salt and pepper. Heat to boiling, stirring occasionally; reduce heat.
  • Cover and simmer about 50 minutes or until rice is tender; drain if necessary. Stir in vegetables and lemon juice. Heat uncovered, stirring occasionally, until hot.

1 1/4 cups water
1 3/4 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1 teaspoon salt-free seasoning blend
1 cup uncooked converted rice
1 cup chopped broccoli
1/2 cup shredded carrot (about 1 medium)
1 jar (2 oz) diced pimientos, drained

Steps:

  • In 3-quart saucepan, heat water, broth and seasoning blend to boiling. Stir in rice; reduce heat to low. Cover and simmer 15 minutes.
  • Stir in broccoli and carrot. Cover and cook about 5 minutes or until rice and broccoli are tender. Stir in pimientos. Let stand 5 minutes.

1 cup uncooked long grain rice
1/2 pound sliced bacon, diced
1 cup diced carrots
1 cup diced celery
1/2 cup fresh or frozen peas
Soy sauce, optional

Steps:

  • Cook rice according to package directions. Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels. Drain, reserving 3 tablespoon drippings. , In same skillet, saute carrots and celery in drippings until crisp-tender. Add the rice and peas; cook and stir until heated through. Stir in bacon. Serve with soy sauce if desired.

Rice tossed with dried fruit, nuts, orange zest and green onions. It's very colorful and very tasty. You can use lemon or orange zest, raisins or dried cranberries, and any kind of nut you prefer. It's a recipe that's easy to mold to your tastes. The way I wrote it here is my favorite combination and always a hit with guests.

2 cups uncooked jasmine rice
4 cups water
1 tablespoon grated orange zest
½ cup dried cranberries
½ cup slivered almonds
½ cup sliced green onions

Steps:

  • Place the rice in a saucepan, and bring water to a boil over medium-high heat. Reduce the heat, cover, and simmer, about 20 minutes. Remove from heat and let sit about 5 minutes.
  • Stir the orange zest, cranberries, almonds, and green onions into the rice until blended.

1 tbsp. olive oil or butter
1 small onion
1 carrot
1 stalk celery
1 clove garlic
salt and pepper
1 c. long-grain white rice
1 can chicken broth
1/4 c. water
1/4 c. fresh parsley leaves

Steps:

  • In 3-quart saucepan, heat olive oil on medium. Add onion, carrot, celery, garlic, 1/4 teaspoon each salt and coarsely ground black pepper; cook 6 to 8 minutes or until vegetables are tender, stirring occasionally. Add rice, stirring to coat; cook 1 minute.
  • Add broth and water to pan; heat to boiling on high. Reduce heat to low; cover and simmer 16 to 18 minutes or until all liquid is absorbed and rice is tender. Remove from heat; let stand, covered, 5 minutes. Fluff rice with fork; stir in parsley to serve. Makes 3 1/2 cups.

3 tablespoons extra-virgin olive oil
1/2 medium onion, finely chopped
1/2 red bell pepper, seeded and chopped
1/4 medium jalapeño pepper, seeded and chopped (optional)
1 garlic clove, chopped
1 1/2 cups long-grain white rice
1 cup frozen corn, thawed
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
2 1/4 cups chicken stock
1/4 cup chopped fresh cilantro
1 tomato, seeded and diced

Steps:

  • Heat the oil in a heavy, large saucepan over medium-high heat. Add the onion, red peppers and jalapeño and cook, stirring often, until soft and translucent, about 4 minutes. Add the garlic and cook until fragrant, 1 minute, being careful not to let it burn.
  • Add the rice and corn and saute 1 minute, stirring constantly to toast the rice and coat with oil. Sprinkle with the cumin and 1 teaspoon each salt and pepper. Pour in the chicken stock, raise the heat to high and bring to a boil. Reduce the heat to low, cover and cook until the rice is tender, 12 to 15 minutes.
  • Fluff the rice with a fork and carefully fold in the cilantro and diced tomatoes. Season with additional salt and pepper to taste.
