300 g Butter
300 g Sugar (granulated or caster)
5 Eggs
1/2 cup Coconut milk (Canned )
315 g Self raising flour (check notes below if using all purpose flour)
1/2 teaspoon Baking powder
60 g Dessicated Coconut
150 g Butter
300 g Icing sugar (Powdered sugar)
1 teaspoon Coconut extract
Dessicated coconut (as desired (to cover))

Steps:

  • Make sure all of your ingredients are at room temperature then prepare the cake pans by rubbing with butter and lining with baking paper/parchment paper. Set pans aside.
  • In a bowl add the flour, baking powder and dessicated coconut then mix together. Set aside.
  • In another mixing bowl, add in butter and sugar then use electric hand or stand mixer to mix till batter is light, fluffy and turns pale.
  • Break eggs in a seperate bowl one at a time (i like to do this so incase there's any bad egg in the batch, you wouldn't have ruined your batter). Add coconut milk to the eggs and whisk.
  • Pour the whisked eggs in the butter and sugar mixture and mix with the mixer for few minutes.
  • Add in the flour/dessicated coconut mixture. Mix for few minutes till all ingredients well incorporated.
  • Divide cake batter into the prepared cake pans. Put in preheated oven and bake at temperature of 170C (150C fan) for 40 minutes or till cake tester when inserted comes out clean.
  • Turn cake onto cooling rack and leave to cool.

Seven-Minute Frosting for Quick Coconut Layer Cake

Steps:

  • Preheat oven to 350 degrees, with rack in center. Butter two 9-inch round cake pans. Line bottom of pans with parchment-paper rounds; butter paper. Dust paper and sides of pans with flour, tapping out excess.
  • In a large bowl, whisk together flour, baking powder, and salt; set aside. With an electric mixer, cream butter and sugar until light and fluffy. Add eggs and yolks, one at a time, beating well after each addition. Beat in vanilla. Add flour mixture in 3 additions, alternately with milk in 2, beginning and ending with flour. Mix until just combined.

1/2 cup coconut oil
1 cup sweetened cream of coconut
1 tablespoon vanilla extract
1 cup buttermilk
12 ounces cream cheese, at room temperature
10 tablespoons unsalted butter, at room temperature
1/2 teaspoon coconut extract
Pinch kosher salt
5 cups powdered sugar, plus more if needed
1 tablespoon milk, plus more if needed

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Butter two 8-inch cake pans, then fit each with a parchment round. Butter and flour the parchment.
  • Separate the eggs into whites and yolks. Set the yolks aside. Beat the egg whites to stiff peaks, then set aside until ready to use.
  • Whisk together the flour, baking powder, baking soda and salt in a medium bowl. Beat together the granulated sugar, butter and coconut oil in a large bowl with an electric mixer or with a stand mixer until light and fluffy, about 2 minutes.   • Let cool for about 5 minutes, then invert onto a cooling rack to cool completely.
  • For the coconut cream cheese frosting: Meanwhile, beat the cream cheese and butter in a stand mixer or in a bowl with a hand mixer until very smooth, about 2 minutes. Add the coconut extract and salt, then slowly start to add the powdered sugar, beating it in a little at a time. Beat until all the sugar is combined and the frosting is stiff but still light and fluffy. Add more sugar if it is too loose, or a little milk if it is too thick. Set aside at room temperature until you are ready to decorate.
  • If the cakes have domed at all, shave down any uneven parts to make the tops of the cakes flat and smooth.
  • Spread 1 tablespoon frosting on a cake plate or stand; this will help keep the cake in place while you decorate. Place one cake cut-side up on the plate. Dollop about 1 cup frosting on top of the cake and spread it in an even layer using a spatula, knife or spoon. Place the second cake on top of the first. Add another 2 cups frosting to the top of the cake and smooth it over the top and down the sides. Repeat with any remaining frosting until the outside of the cake is frosted and smooth. Using your hands, press the toasted coconut into the sides of the cake and sprinkle it on the top, so that the entire cake is covered in toasted coconut.
  • Slice and serve, or refrigerate until ready to serve. Serve at room temperature or chilled.

225g caster sugar
4 eggs, 2 whole eggs and 2 eggs whites
1 tsp coconut extract
5 tbsp coconut cream
225g self-raising flour
½ tsp baking powder
50g desiccated coconut
2 tbsp toasted coconut flakes
200g unsalted butter, softened
500g icing sugar
100g soft cheese
3 tbsp coconut cream
1 tsp coconut extract

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter and line the base of 2 x 20cm loose-bottomed sandwich tins with baking parchment. Put the butter and sugar into the bowl of a freestanding mixer and beat for 10 mins. Add the eggs and coconut extract, and beat for a further 5 mins until light. Beat in the coconut cream. Fold through the dry ingredients (excluding the coconut flakes) then spoon into the prepared tins. Bake in the centre of the oven for 25-30 mins until golden brown and risen. Leave to cool in the tins, then turn out onto a wire rack to cool completely.
  • Beat the butter, sugar and a pinch of salt together using an electric mixer for 10 mins until light and fluffy. Add the soft cheese, coconut cream and coconut extract, and beat on a high speed for 1 min until thickened. Use half of the buttercream to sandwich the sponges together, then spread the remaining icing on the top and sides of the cake. Top with the toasted coconut flakes.

3 1/3 cups sifted cake flour (not self-rising)
2 1/4 cups superfine sugar

3/4 cup granulated sugar
1/4 cup cream of coconut
Coconut Meringue Buttercream
1 cup sweetened flaked coconut
2/3 cup unsweetened coconut shavings, for garnish

Steps:

  • Preheat oven to 325 degrees. Coat three 9-by-2-inch round cake pans with cooking spray; line with parchment paper. Set aside.
  • Sift flour, 1 3/4 cups superfine sugar, the baking soda, and 1/2 teaspoon salt into the bowl of an electric mixer fitted with the paddle attachment. Whisk together 3/4 cup water, the vegetable oil, egg yolks, and vanilla in another bowl. Add yolk mixture to flour mixture; mix on medium-high speed until smooth, about 2 minutes. Transfer to a large bowl; set aside.

  • Trim cakes level. Place 1 cake on a serving plate, and brush with 1/3 cup coconut syrup. Spread with 1 cup buttercream, and sprinkle with 1/3 cup sweetened coconut. Top with another cake. Brush with 1/3 cup syrup; spread with 1 cup buttercream, and sprinkle with 1/3 cup sweetened coconut. Top with final cake; brush with remaining 1/3 cup syrup. Refrigerate until firm.
  • Spread 1 1/4 cups buttercream over top and sides of cake. Refrigerate until buttercream is firm, about 30 minutes.
  • Spread 1 1/2 cups buttercream over top and sides of cake. Refrigerate until buttercream is very firm, at least 1 hour. Fill a pastry bag fitted with a 1-inch basketweave tip (such as Ateco #898) with buttercream. Holding bag perpendicular to cake, pipe sides in a back-and-forth motion, starting at bottom. Refill bag as needed. Sprinkle top with remaining 1/3 cup sweetened coconut and the unsweetened coconut shavings. Cake can be refrigerated up to 2 days; let stand at room temperature 20 minutes before serving.

3 ounces finely grated fresh coconut
6 ounces self-rising flour
1 teaspoon baking powder
3 large eggs, at room temperature
6 ounces butter, softened
6 ounces golden caster sugar

9 ounces mascarpone cheese
7 ounces fromage frais

Steps:

  • Before you start with this cake, you'll first have to deal with the coconut.
  • Push a skewer through the top and make 3 holes and drain out the milk.
  • Then place the coconut pieces in a ziplock bag & sit it on a hard surface - a stone floor or an outside paving stone. Then give it a whack with a hammer - it won't be that difficult to break.
  • Now remove the pieces from the bag and, using a cloth to protect your hands, pry the top of a knife between the nut and the shell. You should find that you can force the whole piece out in one go.
  • Now discard the shell and take off the inner skin using a potato peeler.
  • The coconut is now ready to use.
  • The best way to grate coconut flesh is with the grating disc of a food processor, but a hand grater will do just as well.
  • Prepare Cake:.
  • Preheat oven to 325°F.
  • 2 8" pans, buttered and parchment lined.
  • Sift the flour and baking powder into a large bowl, holding the sieve high to give them a good airing.
  • Now just add all other ingredients, except the grated coconut, to a bowl & mix with an elecrtic mixer and combine everything until you have a smooth texture, about 1 minute or use wooden spoon.
  • What you should have now is a mixture that drops off a spoon when you give it a tap on the side of the bowl. If it seems stiff, add a drop of water and mix again.
  • Finally, stir in the 3 oz fresh grated coconut and divide the mixture between pans.
  • Place them on center shelf of the oven and bake 30-35 minutes.
  • To test whether the cakes are cooked, lightly touch the center of each with a finger: if it leaves no impression and then sponges spring back, they are ready.
  • Next, remove them from the oven and wait 5 minutes and then turn them out on to a wire rack.
  • Carefully peel off base papers, when the cakes are absolutely cool, carefully divide each one horizontally into two halves using a sharp serrated knife.
  • Prepare Frosting:.
  • Now make up the frosting by simply whisking all the ingredients together in a bowl to combine them.
  • Next select the plate or stand you want to serve the cake on - you'll also need a palette knife - then simply place one layer on first, followed by a thin layer of frosting(about a fifth), followed by the next layer of cake, and so on.
  • After that, use the rest of the frosting to coat the sides and top of the cake.
  • Don't worry how it looks: the good thing is that it's all going to be covered with the rest of the grated coconut next.
  • And that's it!

It is made with buttermilk which makes it super moist and delicious and it is very easy to make. Depending on what I am making it for, I either cut it into little square bites or regular-sized coconut cake pieces.

1 ¾ cups white sugar

1/3 cup cold water
1 1/2 cups sugar

Steps:

  • In a medium saucepan, bring 2 inches of water to a simmer.
  • In a large heatproof mixing bowl, combine reserved egg whites, light corn syrup, cream of tartar, water, and sugar.
  • Place bowl over simmering water (it should not touch water); with a handheld mixer, beat on high speed until stiff peaks form, about 7 minutes.
  • Remove bowl from heat; beat 3 to 5 minutes more to cool. Use immediately.
