QUICK CHILLI CON CARNE
Make this super quick and easy beef chilli con carne in just 20 minutes without compromising on taste. Made using minced beef, tinned tomatoes and fresh garlic - this recipe is enough to serve two people with some leftovers for lunch boxes.

- Heat oil in a large pan and add the diced onion. Cook for around 5 minutes, until it turns clear, sticky and edges begin to brown slightly.
- Add the minced beef to the pan, and stir so the mince is broken up and the onion is even throughout the mixture. Cook until all of the meat is brown and you see no more pink - stirring throughout.
- Add the crushed garlic cloves, and spices to the pan, stir and cook for 1 minute
- Add the beef stock cube and 100ml of water - stir so the stock cube has evaporated (this isn't very much water so if you need to turn off the heat to stop it evaporating at this point - do so, otherwise, work quickly)
- Add the tinned tomatoes, tomato puree and sugar, stir to combine and bring the mixture to a gentle simmer - cook for 2 minutes
- Add the frozen sweetcorn to the mixture and stir, then add the drained beans
- Mix to combine the beans and the tomato/chilli mixture and cook on a low simmer for a further few minutes - then it is ready to serve - perfect with rice, nachos or chips, topped with guacamole and sour cream.

CHILLI CON CARNE RECIPE
This great chilli recipe has to be one of the best dishes to serve to friends for a casual get-together. An easy sharing favourite that uses up storecupboard ingredients.

- Prepare your vegetables. Chop 1 large onion into small dice, about 5mm square. The easiest way to do this is to cut the onion in half from root to tip, peel it and slice each half into thick matchsticks lengthways, not quite cutting all the way to the root end so they are still held together. Slice across the matchsticks into neat dice.
- Cut 1 red pepper in half lengthways, remove stalk and wash the seeds away, then chop. Peel and finely chop 2 garlic cloves.
- Start cooking. Put your pan on the hob over a medium heat. Add 1 tbsp oil and leave it for 1-2 minutes until hot (a little longer for an electric hob).
- Add the onion and cook, stirring fairly frequently, for about 5 minutes, or until the onion is soft, squidgy and slightly translucent.
- Tip in the garlic, red pepper, 1 heaped tsp hot chilli powder or 1 level tbsp mild chilli powder, 1 tsp paprika and 1 tsp ground cumin.
- Give it a good stir, then leave it to cook for another 5 minutes, stirring occasionally.
- Brown 500g lean minced beef. Turn the heat up a bit, add the meat to the pan and break it up with your spoon or spatula. The mix should sizzle a bit when you add the mince.
- Keep stirring and prodding for at least 5 minutes, until all the mince is in uniform, mince-sized lumps and there are no more pink bits. Make sure you keep the heat hot enough for the meat to fry and become brown, rather than just stew.
- Make the sauce. Crumble 1 beef stock cube into 300ml hot water. Pour this into the pan with the mince mixture.
- Add a 400g can of chopped tomatoes. Tip in ½ tsp dried marjoram, 1 tsp sugar and add a good shake of salt and pepper. Squirt in about 2 tbsp tomato purée and stir the sauce well.
- Simmer it gently. Bring the whole thing to the boil, give it a good stir and put a lid on the pan. Turn down the heat until it is gently bubbling and leave it for 20 minutes.
- Check on the pan occasionally to stir it and make sure the sauce doesn't catch on the bottom of the pan or isn't drying out. If it is, add a couple of tablespoons of water and make sure that the heat really is low enough. After simmering gently, the saucy mince mixture should look thick, moist and juicy.
- Drain and rinse a 410g can of red kidney beans in a sieve and stir them into the chilli pot. Bring to the boil again, and gently bubble without the lid for another 10 minutes, adding a little more water if it looks too dry.
- Taste a bit of the chilli and season. It will probably take a lot more seasoning than you think.
- Now replace the lid, turn off the heat and leave your chilli to stand for 10 minutes before serving. This is really important as it allows the flavours to mingle.
- Serve with soured cream and plain boiled long grain rice.

- Saute onions in olive oil until translucent. add minced garlic and continue to saute until fragrant, about 30 seconds.
- In dutch oven, brown ground beef. Drain and add onions and garlic.
- Add spices and tomatoes with juice -- DO NOT DRAIN. Heat to boiling and simmer for one hour.
- Add beans (also DO NOT DRAIN) and heat through, approximately 20 minutes.
- Top with cheese and serve with hot biscuits or corn bread.
- If in a hurry, you can cook onions and garlic with the beef, and also add the kidney beans at the beginning and simmer the whole thing for as little as half an hour. It turns out fine, it's just that the flavor is not as developed.

- Sauté ground beef, onion, green pepper and garlic cloves in dutch oven.
- Add rest of ingredients, with the exception of the beans. Cover and simmer for 20 minutes, stirring occasionally. Add small amount of water if mixture becomes too thick. Start with less than 1/4 C of sugar and add to sweetness preference.
- Stir in beans, (may use all kidney beans, red and black beans, whatever you prefer).
- If making ahead, transfer to crockpot and place on lowest setting to keep warm. You may also let cool and warm for next day.
- Optional: Top with shredded cheese, sour cream and corn chips!

- Heat the oil in a heavy 3 quart saucepan over moderate heat for about 1 minute.
- Add the onion, green pepper, beef, and garlic, and cook, uncovered, stirring frequently, for 7 or 8 minutes, or until the inion is soft and the beef has browned.

- Heat the oil in a large sauté pan over a medium-high heat and add the onions. Cook for 10 minutes, stirring often, until softened and translucent. Add the garlic and fry, stirring, for 2 minutes more until fragrant, then tip out into a bowl.
- Turn up the heat to high, add the beef to the pan and season well, pressing it down with a wooden spoon and breaking it up so it browns all over. When it’s browned, tip out the juices from the pan and discard, then return the onions to the pan with the cumin, paprika and cinnamon. Cook, stirring, for 2-3 minutes until fragrant, then add the tomatoes with a pinch of sugar and the beef stock.
- Bring to a simmer and cook, stirring occasionally, for 20-25 minutes until the beef has taken on the flavours of the spices and the sauce is reduced and thick. Add the kidney beans and cook for 5 minutes more, then taste, season and serve with your choice of accompaniments.
