Quick and easy black bean soup. Substitute vegetable broth for chicken broth and omit sour cream to make vegetarian.

2 (15 ounce) cans black beans
1 (15 ounce) can diced tomatoes with green chile peppers, drained
2 (15 ounce) cans chicken broth, divided
1 ½ teaspoons ground cumin
1 teaspoon salt
1 teaspoon ground black pepper
¼ teaspoon cayenne pepper
1 (15 ounce) can black beans
3 cups hot cooked rice
6 tablespoons sour cream, for topping

Steps:

  • Drain some of the liquid from 2 cans black beans.
  • Put 2 cans black beans, diced tomatoes with green chile peppers, 1 cup chicken broth, cumin, salt, black pepper, and cayenne pepper into a blender and blend until smooth; pour into a saucepan and add remaining chicken broth and 1 can black beans. Place saucepan over medium heat, bring mixture to a simmer, and cook for 15 minutes.
  • Put 1/2 cup hot rice into each of 6 bowls. Ladle soup over rice and top with 1 tablespoon sour cream.

This is a pretty simple soup to throw together that doesn't take but 30 minutes start to finish. I used Margaret Holmes Seasoned Black Beans with Vidalia Onions in a can. If you use plain canned black beans, you will want to add salt as needed. The nutritional statistics do not account for this brand of beans.

1 tablespoon olive oil
1 yellow onion, chopped
1/2 green pepper, chopped
2 stalks celery, chopped
2 garlic cloves, minced
1 lb ground sausage, medium spice
3 roma tomatoes, chopped
27 ounces black beans, canned (I like Margaret Holmes)
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon cayenne pepper
2 bay leaves
4 cups low sodium chicken broth
2 cups couscous

Steps:

  • In a hot dutch oven or deep pot, add olive oil and after it begins to shimmer, add in onion, green pepper, celery and garlic and sweat over medium heat until translucent. Remove to a bowl and set aside.
  • Add sausage and brown and break up until cooked through. Remove excess fat. Add vegetables back to the pot and stir in tomatoes, spices, black beans and '2' cups of the broth. Reduce heat to medium and simmer for 10 minutes until bubbly.
  • When ready to serve, bring remaining 2 cups of the broth to boil in a saucepan then stir in couscous. Cover and remove from heat. Let sit 5 minutes. If you are a salt lover, add salt but I usually don't.
  • Ladle one sixth of the couscous into the bottom of a bowl then cover with black bean soup. If desired sprinkle some shredded cheddar cheese or sour cream on top (we like it just as well without it).

1 tablespoon jalapeno, chopped
1/2 teaspoon ground cumin
2 garlic cloves, crushed
1 lb smoked sausage, fully cooked (sliced)
2 1/2 cups water
1 (10 3/4 ounce) can condensed chicken broth
1/2 cup couscous
2 tablespoons of fresh mint (or 2 tsp dried mint leaves)
1/4 teaspoon pepper
3/4 cup tomatoes, chopped (about 1 medium tomato)

Steps:

  • Cook chilies, cumin, garlic and sausage in 3-quart saucepan over medium heat about 8 minutes or until sausage is brown; drain.
  • Add water and broth. Heat to boiling. Stir in couscous, mint and pepper; reduce heat. Cover and simmer 5 minutes. Stir in tomato. Serve with chopped fresh parsley and finely chopped garlic if desired.

2 tablespoons vegetable oil
2 links andouille sausage (6 ounces), cut into 1/4-inch-thick slices (1 heaping cup)
1 bunch scallions, sliced (1 cup)
1/4 cup thinly sliced celery (from 1 stalk), plus leaves for serving
1/2 teaspoon dried thyme
1 can (14.5 ounces) diced fire-roasted tomatoes with chiles, such as Muir Glen
2 cans (each 15 ounces) black beans
Kosher salt and freshly ground pepper
2 tablespoons sour cream, for serving
Watercress, for serving (optional)

Steps:

  • Heat oil in a medium saucepan over medium-high; add sausage and cook, stirring, until crisp, about 3 minutes. Transfer to a plate. Add scallions, celery, and thyme to pan; cook until tender, about 4 minutes. Stir in tomatoes; bring to a boil and cook 3 minutes. Drain and rinse one can of beans, leaving the second in its liquid; add both to pan with 1 cup water.
  • Return to a boil, then reduce heat to low and simmer 15 minutes. If desired, remove 1 cup of mixture and purée in a blender or food processor until smooth, about 15 seconds, then return to pan. Season with salt and pepper.
  • Top each serving with cooked sausage, a dollop of sour cream, and a small handful of watercress. Sprinkle with pepper and celery leaves; serve.

I can easily make this after work, even if I have to prep everything from scratch. The original recipe was adapted from a Better Homes and Gardens Cookbook. It called for 1 lb of dried black beans but for us, canned works best on a weeknight. I've used either 2 or 3 cans of beans, it depends on how thick you like your bean soup. I think the coriander and sherry are the key to it's taste.

1 -2 tablespoon extra virgin olive oil
1 cup chopped onion
1 cup chopped celery
1 red bell pepper, chopped
2 tablespoons pressed or minced garlic
2 (15 ounce) cans black beans, drained & rinsed
1 (14 1/2 ounce) can diced canned tomatoes, undrained
1 quart chicken stock
1 teaspoon ground coriander
1/8-1/4 teaspoon red pepper flakes
salt
1 lb kielbasa or 1 lb smoked sausage (halved lengthwise and sliced orq uartered and sliced)
3 tablespoons dry sherry

Steps:

  • In a Dutch oven or 6qt stockpot saute onion, celery, bell pepper, and garlic in olive oil until tender; add beans, tomatoes, chicken stock, coriander, red pepper flakes and salt (if needed); Bring to boiling, reduce heat, cover and simmer for at least 30 minutes.
  • In the meantime (optional) cook sausage in a nonstick pan and drain; set aside (we like the flavor a little better that way).
  • Add sausage& dry sherry; stir 2-3 minutes or until heated through.
  • Serve soup with sour cream, and shredded cheddar if desired; and a nice crusty bread.

This is from All You magazine. I haven't tried it yet, but it looks delicious. Instead of black beans you can try navy beans, red kidney beans, or black-eyed peas (or a mix). You can add a cup of yellow corn, a can of diced chiles or chopped jarred pimientos just before the end of cooking time for a shot of color and flavor, or sprinkle in a few drops of hot sauce. Also, instead of sausage, you could stir in cut-up leftover ham, chicken or beef. Or try chicken or turkey sausage. Steps:

  • Warm oil in a medium skillet over medium heat.
  • Add onion and garlic and cook, stirring frequently, until onion is softened and translucent, about 5 minutes.

  • Stir well and cook on low for 5 hours.
  • Stir sausages into bean mixture in slow cooker and cook for 1 hour longer.

1-1/2 cups water
1 cup chicken broth
1 medium green pepper, sliced

1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon dried oregano
1/4 teaspoon paprika
1 bay leaf

Steps:

  • In a small bowl, mash 1 can black beans until smooth; set aside. In a large saucepan, combine the remaining ingredients and remaining can of beans. Bring to a boil. Reduce heat; simmer, covered, for 10-15 minutes. Add mashed beans, stirring to combine. Discard bay leaf before serving.
