6 boneless skinless chicken thighs (1-1/2 pounds)
3/4 teaspoon seasoned salt
1/4 teaspoon pepper
1 tablespoon canola oil
1 cup unsweetened apple juice
1 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme

Steps:

  • Sprinkle chicken with seasoned salt and pepper. In a large skillet, heat oil over medium-high heat. Brown chicken on both sides. Remove from pan., Add juice and thyme to skillet. Bring to a boil, stirring to loosen browned bits from pan; cook until liquid is reduced by half. Return chicken to pan; cook, covered, over medium heat 3-4 minutes longer or until a thermometer inserted in chicken reads 170°.

Steps:

  • Heat oil in skillet over medium high heat.
  • Mix spices with raw chicken.
  • Add chicken to skillet and stir continuously until just no pink showing.
  • Add apple juice and bring to a boil.
  • Reduce heat, cover and simmer for 10 minutes.
  • Take off lid to reduce liquid.

2 tablespoons butter, divided
2 medium skinless, boneless chicken breast halves
1 (6.9 ounce) package chicken-flavored rice mix (such as RICE-A-RONI®)
1 ¼ cups water
1 cup apple juice
1 apple - peeled, cored, and chopped
1 onion, chopped
¼ cup raisins

Steps:

  • Melt 1 tablespoon butter in a skillet over medium-high heat. Add chicken and cook, 2 minutes per side. Remove and set aside.
  • Heat remaining butter over medium heat in the same skillet. Saute rice from rice mix in the hot butter until golden brown, 5 to 7 minutes. Stir in water, apple juice, apple, onion, raisins, and seasoning packet from rice mix slowly. Bring to a boil. Place chicken over rice. Reduce heat to low, cover, and let simmer until chicken breasts are no longer pink in the centers and rice is tender, 15 to 20 minutes. Let stand for 5 minutes before serving.

1 broiler-fryer chicken
16 ounces apple juice
1 teaspoon orange zest
1 teaspoon poultry seasoning
1 bay leaf
1 teaspoon thyme leaves
1 teaspoon rosemary
1 orange
extra virgin olive oil

Steps:

  • Take a beer or soft drink can and drink it. Wash and fill with 8 ounces of the applejuice.
  • Combine all the spices except the bay leaf and put half of the spices in the can, plus the bay leaf. Save the rest of the spices for basting.
  • Take a large pan 9X13 is fine, and pour 1 cup of applejuice in pan. Slice up an orange and put in pan also.
  • Place chicken on can, then in the pan and put on the grill. If using a gas grill, heat the grill to 350 and then turn the middle burner off, so the chicken will not burn.
  • Baste the chicken every half hour with extra virgen olive oil and the rest of the spice mix.
  • Chicken will be done in 2 hours or until tempreture reaches 165 degrees.

4 - chicken breast filets
- flour to coat
dash(es) salt and pepper
2 cup(s) apple juice
1 medium white or red onion
1 medium apple
1 tablespoon(s) butter

Steps:

  • Slice onion and apple thinly. Satue in butter for 5 min on a md heat. Coat chicken in flour and add to pan. Add Apple juice and bring to boil. Lower heat and simmer until juice has thickened to a nice sauce and chicken is cooked though. Be sure to turn chicken several times to cook fully.
  • This is really good with white or wild rice.

Reduce heat; cover and simmer for 10 minutes or until a thermometer reads 170°. Remove chicken and keep warm. , Combine cornstarch and cream until smooth; gradually stir into cooking liquid in skillet. Bring to a boil; cook and stir for 2 minutes or until thickened. Add parsley. Return chicken to skillet and heat through. Serve with rice.
