HEALTHY ZUCCHINI NOODLES W/ SPINACH & PARMESAN



Healthy Zucchini Noodles w/ Spinach & Parmesan image

Using a simple zucchini spiralizer or a vegetable julienne peeler, this simple meal is just requires a few ingredients. This recipe can be adapted to any way that you want. Add shrimp, sausage, other proteins, sauces, tomatoes or more vegetables to make it perfect fit for your family and menu.

2 medium zucchini
2 Tablespoons olive oil (or butter)
1/2 onion (, diced)
3 cloves garlic (, minced (or to taste))
2 cups spinach leaves
3/4 cup parmesan cheese ((approximately))
kosher salt ( or sea salt , to taste)
black pepper (, to taste)
1/4 teaspoon red chili flakes

Steps:

  • Using a spirializer tool, spiralize zucchini into spirals or noodle strands. Set zucchini noodles aside.
  • Heat large pan on medium-high heat. Melt butter/oil, then add onion and garlic. Cook garlic until fragrant and translucent. Don't let the garlic burn.
  • Add zucchini noodles and cook until tender, about 3-5 minutes. Zucchini noodles cook really fast, so taste a strand as you cook and decide how firm or "al-dente" you want the zucchini. Don't overcook the zucchini noodles or else they'll become mush.
  • Add spinach and cook until spinach wilts.
  • Remove the pan from the heat, add parmesan cheese and season generously with salt and pepper to taste. Add chili flakes then serve warm.

2 large zucchini
1 tablespoon of olive oil
1 teaspoon of minced garlic
1 pinch of rock salt
1 pinch of black pepper
1/4 cup of parmesan cheese
3-4 leaves parsley

Steps:

  • The first step is to cut the zucchini into noodles. To do this, wash the zucchini properly and chop off its ends.
  • Put the zucchini in the spiralizer and cut it into noodles. Use an alternative if you don't have a spiralizer.
  • Add a tablespoon of olive oil to a pan or skillet and heat it on a medium flame for a minute.
  • While the oil is heating up, add a teaspoon of minced garlic to the pan and saute for 30 seconds.
  • Then add in the zucchini noodles and sauté for 4-5 minutes but not any more than that.
  • Taste test to check the noodles are just the way you want and season with salt, pepper, and any other sauce or cream of your preference.
  • Finish off by garnishing the zoodles with parmesan cheese and parsley, and enjoy!
