- How to cut the beef for the beef teriyaki.Since you will need to cook the beef very quickly, on high heat, follow the following instructions to prepare the beef for the stir-fry. Choose the right cut of beef(mentioned above). Cut against the grain. Keeping in mind, that beef shrinks in size when cooked, cut the beef into very thin bite-size pieces. How to marinate the beef for the teriyaki stir-fry.Place the beef in a bowl then marinate the beef slices with salt(1/2 tsp)and pepper(1/2 tsp) for 10-20 minutes. How to prepare the vegetables for the beef teriyaki.For the vegetables, in beef teriyaki, you can use, any type of vegetable that cooks fast. I used cauliflower because that's what I had. For example, broccoli, button mushrooms, green peas, asparagus and green beans are great options instead of cauliflower. How to cut the cauliflower for the beef teriyaki.Wash the cauliflower. break the cauliflower into large florets and then cut them into smaller florets. Cut the bell pepper into thin slices and discard the seeds. Making the teriyaki sauce. Into a small pan add, sugar(1/4 cup), water(1/2 cup), soy sauce(1/4 cup). minced ginger and garlic(1 tbs), oil(1 tbs). Over low heat, cook the ingredients until sugar dissolves. 2 minutes. While the sauce is still cooking over low heat. dissolve cornstarch with 2 tablespoons of warm water and add the cornstarch mixture to the teriyaki sauce. Slowly stir until the teriyaki sauce thickens, check if the sauce is seasoned to your preference like salt and sugar. Add oil to the wok/frying pan, once the oil is warm add the beef and stir-fry the beef until they are cooked through, regulate heat between medium, high and medium again. Stir-fry between 5-10 minutes. Once done, transfer the beef slices to a plate. Wipe or wash away any dark bits leftover by stirfrying the beef. Add oil(1 tablespoon) followed by cauliflower, bell pepper slices into the wok, season with a pinch of salt and stir-fry the vegetables for 3-5 minutes over low-medium fire. The vegetables need to be a little soft and crispy. You can add a few tablespoons(2-3) of water to soften them if need be. Add the crispy stir-fried beef into the wok and combine well over low heat. Reduce heat and add the homemade teriyaki sauce onto the beef slices and vegetables. cook over medium heat. Check for seasoning and serve warm. Always serve the beef teriyaki warm.

- Cut the beef into 1-by-2-by-1/4-inch strips. Put in a bowl and coat with the brown sugar, lime zest, 3 tablespoons of the soy sauce and some black pepper. Set aside for a few minutes while you make the sauce.
- Whisk together the teriyaki sauce, cornstarch, sesame oil, rice vinegar, lime juice and remaining 3 tablespoons soy sauce in a bowl.
- Heat a large skillet over medium-high heat. Add 1 tablespoon of the vegetable oil. Add the beef and stir-fry until brown around the edges, 2 to 3 minutes. Remove to a plate and keep warm.
- Add the remaining 2 tablespoons vegetable oil to the skillet. Add the garlic, ginger and jalapeno and cook for 30 seconds. Add the green beans, carrots and bell pepper and stir-fry for 1 minute. Add the snow peas. Add the beef with its juices and the sauce and cook for another minute.

- Toss the beef in the cornstarch and place in the fridge for 10 minutes while you are making the sauce and heating up the oil.
- Heat 2 tablespoons of oil in a large skillet.
- When the oil is nice and hot add in the steak (I had to do two batches to avoid overcrowding the pan). Sauté until browned on both side, 3-4 minutes. Remove from the pan and set aside.
- Add the remaining tablespoon of oil to the same pan.
- Add in garlic and ginger and cook for 1-2 minutes.
- In a small bowl combine soy sauce, mirin, brown sugar, sesame oil and fish sauce.
- Pour the soy sauce mixture into the pan and bring to a simmer and cook for 2-3 minutes.
- In a small bowl mix together the cornstarch and water.
- Slowly pour in the cornstarch mixture whisking continuously. Continue to cook until your desired thickness.
- Add steak back to the pan and toss to coat the beef with the sauce.
- Serve immediately with green onions and sesame seeds if desired.

- Combine soy sauce, broth, brown sugar, garlic, and ginger in a small mixing bowl. Place half of the mixture in a gallon-sized Ziploc bag, add sliced beef, seal (pressing as much air out as you can), and refrigerate for at least 2 hours.
- Add cornstarch to remaining mixture in bowl and stir until smooth, cover and refrigerate until ready to use.
