You know those nights where the idea of having to get dinner on the table is just too much? This Weeknight Oven Quesadilla Recipe is the solution to all your weeknight dinner woes!

Cooking spray
4 fajita size flour tortillas
1-2 cups Mexican blend or cheddar cheese, (shredded)
Cooked chicken (or your protein of choice) (chopped)
Sautéed onions, (sliced)
Sautéed peppers, (sliced)
Mexican rice
Salsa

Steps:

  • Preheat the oven to 375 degrees and line a sheet pan with foil. Spray it with cooking spray.
  • Lay two flour tortillas on the sheet pan next to each other.
  • Sprinkle a layer of cheese onto the tortillas (to your taste).
  • Sprinkle whatever fillings you are using onto the cheese.
  • Sprinkle a little more cheese on top of the fillings (to help the top tortillas stick).
  • Lightly spray the tops of the tortillas with cooking spray to help them brown a bit.
  • Bake for 7-10 minutes, depending on your oven, until the cheese is fully melted (mine usually take around 8 minutes).
  • Cool for 5 minutes, slice into wedges with a pizza wheel and serve immediately with whatever sauces and sides you enjoy.

2 teaspoons butter, melted
1 cup shredded cheddar cheese
1/3 cup finely chopped onion
1 medium tomato, diced
1 package (9 ounces) frozen diced cooked chicken, thawed and chopped

Steps:

  • Brush one side of each tortilla with butter. Place two tortillas, buttered side down, on a griddle; sprinkle with cheese, onion, tomato and chicken. Top with remaining tortillas, buttered side up. Cook over medium heat for 3-4 minutes on each side or until lightly browned. Cut into wedges.

1 package (11 oz) Old El Paso™ flour tortillas for burritos (8 inch; 8 tortillas)
Cooking spray
2 cups finely shredded Colby-Monterey Jack cheese blend (8 oz)
1/4 cup sour cream

Steps:

  • Cut chicken into bite-size pieces. In small bowl, mix chicken and salsa.
  • Spray 1 side of 1 tortilla with cooking spray; place sprayed side down on work surface. Layer with one-fourth of the chicken mixture and 1/2 cup of the cheese. Top with another tortilla; spray top of tortilla with cooking spray.

4 flour tortillas (large )
2 cups cheddar cheese (shredded )
2 tablespoons vegetable oil
4 green chilies (finely chopped)
1/2 cup tomatoes (diced)
Salt and Pepper to taste

Steps:

  • Heat 1 tablespoon of oil in a large frying pan over a medium heat.
  • Add one tortilla and sprinkle it with half the cheese, half the tomatoes and half the chilies. Add salt and pepper to taste.
  • Place another tortilla on top and press it down gently to seal the tortillas together. Cook the tortilla sandwich for about five minutes, turning once half way through the cooking time.
  • Check that the cheese has melted and transfer the quesadilla to a cutting board.
  • Repeat the process with the next tortilla.
  • Cut the quesadillas into wedges and serve immediately with chunky salsa, sour cream and guacamole.
  • Serves 4 as a main course or 8 to 10 as an appetizer.

12 1/2 ounces canned chicken
10 ounces canned tomatoes and green chilies
1 1/2 cups shredded colby-monterey jack cheese
10 (8 inch) flour tortillas
taco seasoning (optional)

Steps:

  • Drain water from canned chicken and canned tomatoes and chiles.
  • flake chicken and mix with tomatoes and chiles, and shredded cheese in a bowl.
  • Spead mixture over one side of tortillas as thin
  • or as thick as you like.
  • Fold tortilla and place in electric skillet on 325 degrees or on stove at medium high heat.

NOTE: Sadly, I don't think they make jalapeno cream cheese anymore, so I usually just use regular cream cheese and chopped jalapenos...use as many or as little jalapenos you want for your desired heat level.

6 flour tortillas
2 9-ounce packages cooked diced chicken
1 cup shredded Colby cheese
1-1/2 cups shredded mozzarella cheese
3 tablespoons butter, softened
1 cup salsa

Steps:

  • Place 3 of the tortillas on a work surface. Top the tortillas with half of the cheeses, then the chicken, then the remaining cheeses. Top the filling with the remaining tortillas. Spread outsides of the quesadillas with the butter.
  • Heat a flat pan, large skillet, or griddle over medium heat. Add the quesadillas, one at a time, and cook, pressing down with a spatula, until bottoms are browned, about 2 to 4 minutes. Turn quesadillas and cook second side 2 to 3 minutes or until the tortillas are browned and crisp and the cheeses melt.
  • Remove the quesadilla with a spatula to the work surface and cut into quarters. Repeat with remaining quesadillas. Serve immediately with salsa for dipping.
