WEEKNIGHT OVEN QUESADILLA
You know those nights where the idea of having to get dinner on the table is just too much? This Weeknight Oven Quesadilla Recipe is the solution to all your weeknight dinner woes!

Steps:
- Preheat the oven to 375 degrees and line a sheet pan with foil. Spray it with cooking spray.
- Lay two flour tortillas on the sheet pan next to each other.
- Sprinkle a layer of cheese onto the tortillas (to your taste).
- Sprinkle whatever fillings you are using onto the cheese.
- Sprinkle a little more cheese on top of the fillings (to help the top tortillas stick).
- Lightly spray the tops of the tortillas with cooking spray to help them brown a bit.
- Bake for 7-10 minutes, depending on your oven, until the cheese is fully melted (mine usually take around 8 minutes).
- Cool for 5 minutes, slice into wedges with a pizza wheel and serve immediately with whatever sauces and sides you enjoy.

- Heat 1 tablespoon of oil in a large frying pan over a medium heat.
- Add one tortilla and sprinkle it with half the cheese, half the tomatoes and half the chilies. Add salt and pepper to taste.
- Place another tortilla on top and press it down gently to seal the tortillas together. Cook the tortilla sandwich for about five minutes, turning once half way through the cooking time.
- Check that the cheese has melted and transfer the quesadilla to a cutting board.
- Repeat the process with the next tortilla.
- Cut the quesadillas into wedges and serve immediately with chunky salsa, sour cream and guacamole.

- Drain water from canned chicken and canned tomatoes and chiles.
- flake chicken and mix with tomatoes and chiles, and shredded cheese in a bowl.
- Spead mixture over one side of tortillas as thin
- or as thick as you like.

EASY WEEKNIGHT CHICKEN QUESADILLAS
The jalapeno cream cheese adds the special kick to this recipe...I've made it without and it's good, but definately use it if you can find it!! Sometimes I will double the recipe for a light dinner, or make as below for a snack or appetizer. NOTE: Sadly, I don't think they make jalapeno cream cheese anymore, so I usually just use regular cream cheese and chopped jalapenos...use as many or as little jalapenos you want for your desired heat level.
