I found only one other recipe here at Zaar for Longevity Noodles. I am sure that is it delicious (it IS a Nurse Di recipe! and her stuff is great), but for me, quick and easy with fewer ingredients works better sometimes. This is a cross between chicken noodle soup and egg drop soup. Add some minced garlic for a bit of flavor variety.

2 teaspoons cornstarch
1 tablespoon water
1/2 tablespoon sesame oil
4 cups water
1 1/2 tablespoons soy sauce
1 egg, beaten
1 (3 ounce) package chicken-flavored ramen noodles, cooked (you won't need the seasoning packet)
1 cup sliced cooked chicken, cut into strips
4 medium green onions, chopped

Steps:

  • Stir the cornstarch, water and sesame oil in a small cup.
  • Set the mixture aside.
  • Heat the broth and soy in a 3-quart saucepan over medium-high heat to a boil.
  • Stir the cornstarch mixture and stir it into the saucepan.
  • Cook and stir until mixture is slightly thickened.
  • Reduce the heat to low.
  • Add the eggs, in a slow steady stream, stirring while adding.
  • Remove the saucepan from the heat.
  • Divide the pasta, chicken and green onions among 8 serving bowls.
  • Ladle about 1 cup broth mixture into each bowl and serve immediately.

2 tablespoons minced fresh onions
1 teaspoon grated peeled fresh ginger
1 garlic clove, minced
1/2 cup soymilk
1/4 cup creamy peanut butter
1 teaspoon lemon juice
1 tablespoon dry white wine
1 tablespoon low sodium soy sauce
2 teaspoons grated peeled fresh ginger
2 teaspoons cornstarch
1/2 teaspoon black pepper
8 ounces boneless skinless chicken breasts, cut up into thin strips
8 ounces uncooked thin spaghetti
1/2 cup snow peas, trimmed
1/2 cup thinly sliced carrot
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/2 cup diagonally sliced green onion

Steps:

  • To make the sauce: heat oil in a saucepan over med-high heat.
  • Add in minced onion, 1 teaspoon ginger, and garlic; stir/saute 5 minutes or until onion is tender.
  • Stir in soy milk, peanut butter, and juice; cook 3 minutes or until peanut butter is completely melted, stirring constantly.
  • Remove from heat and cool completely.
  • To make the marinade: add the first 5 marinade ingredients to a bowl; stir to combine.
  • Add in chicken; toss to coat; cover and marinade in refrigerator for 30 minutes.
  • To make the noodles: cook pasta by following the package directions, omitting salt and fat; drain and rinse; set aside.
  • Heat a large nonstick skillet that has been coated with cooking spray over med-high heat.
  • Add in chicken mixture; stir/saute for 2 minutes or until done.
  • Add in snow peas and carrot; stir/saute 4 minutes or until crisp-tender.
  • Stir in peanut sauce, salt, and 1/4 teaspoon pepper.
  • Add in noodles; toss well.
  • Sprinkle with green onions.

2 tablespoons toasted sesame oil
3 small cloves garlic, finely minced
Sea salt and ground white pepper

Steps:

  • Bring a large pot of water to boil over high heat and salt it generously. Add the noodles, stir, and cook until al dente, about 2 minutes. Drain and rinse with cold water, shaking well to remove excess moisture, and transfer to a serving bowl.
  • Whisk together the sesame oil, garlic and salt and white pepper, to taste, until combined. Pour the mixture over the noodles and toss well to coat. Taste and adjust the seasoning with more salt and white pepper, if necessary. Serve immediately.

  • Bring a large pot of water to a boil and add the fresh Chinese noodles. Immediately stir with a fork to be sure they don't stick together. Let them cook just until they're tender, about 3 minutes. Drain, add them back to the pot, and toss them with grapeseed oil. Set aside.
  • Coat the bottom of a large sauté pan with grapeseed oil and place it over medium heat. Add the onions, garlic and ginger. Cook, stirring periodically, until the onions are soft, about 7 minutes.
  • Then use a spatula to gently push all of the ingredients to one side of the pan. Keeping the heat at medium, add a bit more oil to the empty side of the pan and add the chicken. Season it with salt and pepper and then move it around from time to time until it's cooked through, about 7 minutes.
